Baked Crispy Asparagus.

Hello everybody.
Went to visit our friends for Easter greetings last night, went home not only with chocolate and colored eggs but with a bunch of freshly cut asparagus as well and yes two jars of homemade jam also.
Looked for something new to do with them, found this easy quick recipe, crispy and tender inside was the result, yummy yummy.

You simply cut rough ends,coat them with seasoned flour ( salt,pepper, oregano, garlic powder, chili) then dip in eggs then coated again with breadcrumbs.
Grease and nonstick pan with oil or butter, add asparagus and sprinkle cheese on top then bake for 20-30 minutes in a well heated oven.

Serve with dip or ketchup as you wish.

Mushroom Broccoli Pie.

Hello everybody.

Bad dusty weather , went back home quickly after a meeting and closed everything tightly hoping that house stays clean,then started buzzing in the kitchen.

Lunch as planned was courgettes in white sauce and meat, specially requested and done,love it when kids ask for something a day before you wake up happy hahaha.

After that I started looking around for something to do with the remaining puff pastry from yesterday, then I remembered the asparagus pie in did couple of weeks ago and decided to use same filling ( mustard, labaneh, eggs) but used mushrooms and broccoli, added some olives and cheese then wrapped it up, sooooo delicious.

I also found some leftover blueberries so I made my favorite biscuits with jam or filling, yummy yummy for sure.

Beautiful Gathering

Hello everybody.
Such a lovely day, great for sitting outdoors and enjoying the breeze and warm weather with my lovely group of friends.
A visit postponed many times to eat Caraway since my nephew was born, got the caraway powder straight from Nablus this time from my friend,fresh and tasty though unfortunately she couldn’t come today, thank you dear Nadia.
I also made some fresh ka3ek with sesame seeds, cheese platters and spinach tabouleh, all yummy with great company of course.

Fruit Cheesecake Cookie Cups and Apple Cinnamon Rolls.

Hello everybody.

I’m so excited today cause me and my friends are invited to a special early dinner at our lovely neighbor’s house and she’s making a traditional Carcissian dish called chips and basta, I’ll write you details about it later tonight.

As usual I told her dessert is on me, I wanted to do something new, colorful and lively so after a bit of searching did these cute kind of tarts and since I have some apples in the fruit basket is did some apple wheels or rolls.

Ingredients and method of fruit tarts :

* 3/4 cup butter.
* 1 cup sugar.
* 1 egg.
* 1 tsp vanilla.
*  2 cups flour.
* 1/2 tsp baking soda.
* 1/2 tsp baking powder.
* 2 tsp cornstarch.

For the filling :
* 1 pack cream cheese.
* 1/2 cup icing sugar.
* 2 tablespoons cream.( قشطه)

* mixed fruits for topping.

* beat butter and sugar till creamy then add all other ingredients till you have a thick dough.
* in a cupcake pan add a spoonful in each paper then press well with higher edges ( this quantity made 24 cups)
* bake in a medium heated oven for 10-15 minutes.
* remove and leave to cool.
* meanwhile beat cream cheese with sugar and cream then top over each cupcake.
* decorate with fruits as you look like.

As for the apple wheels, I did same dough for cinnamon rolls or Nutella tree, the added brown sugar and cinnamon to a rectangular spread-ed dough, lined up sliced apples the rolled and baked them.

Hope our host will like them,I’m sure we’ll have fun and eat delicious food.

Asparagus Pie.

Hello everybody.

End of a very busy week at last, hope weekend will be relatively relaxing, though till now too much is scheduled already.
Well lunch today was an open buffet as I call it,all leftovers in the fridge but I did a small side dish cause I have these freshly picked asparagus so it’s a shame not to do something with them, so I picked this recipe from Pinterest ,easy and quick and luckily I have all ingredients.

Ingredients and method :
* 1 pack puff pastry.
* 2 tablespoons labaneh or sour cream.
* 1 tsp mustard.
* 1 egg.
* 1 cup grated cheese ( any kind that melts).
* asparagus.
* Salt, pepper and a bit of nutmeg.

* when pastry is tender roll it to a rectangle shape then put it in a rectangular oven pan.leave sides up a little.
* bake in a medium heated oven for 20 minutes or till it’s golden from bottom.
* mix half of the cheese, egg, labaneh and mustard well then add salt, pepper and nutmeg.
* spread mixture over half baked pastry then line up the asparagus after cutting the hard stems.
* sprinkle rest of cheese on top then bake again for 15 minutes then roast top till golden.
Serve hot as a side dish with any roasted beef or chicken.

Flakes Chocolate Dessert.

Hello everybody.
So excited today my baby sister is coming home for vacation, can’t believe it’s been a year!  I’m sure it’ll be an eventful spring.

We’ll be having dinner at Mom’s, menu is stuffed vine leaves, beef roast with veggies done by my sister and I made fatoush, pasta salad and Flake chocolate dessert that I did once in Ramadan, just realized that I promised to post this recipe back then and haven’t done so till now, sorry.

Ingredients and method :
* 12 pieces Last Vache qui Rie cheese.
* 1 pack whipping cream.
* 1 pack cream.
* 1 pack plain biscuits.
* 4 pieces flakes.
* some milk.

* beat cheese and creams very well till smooth, you may add some milk if mixture is too thick.
* in a deep Pyrex or serving dish arrange biscuits and soak them with some milk.
* add half cream mixture then sprinkle half the flakes.
* repeat for another layer then decorate top with crushed Flakes.
* keep in fridge to cool for 3-4 hours.

Very easy and yummy, will post dinner details tomorrow,going to airport now :mrgreen:

Spinach Gnocchi.

Hello everybody.

Warm sunny day,I just love these days, though chilli at night but at least you can enjoy a beautiful day.
Lunch was Italian style except the rice which was the Iranian recipe, it’s becoming our kind of rice these days.

Did meatballs the way my cousin Rita always do them, with parmesan,breadcrumbs, eggs,nutmeg, salt and pepper then after cooling them in the fridge they’re dipped directly in boiling tomato sauce, really yummy.

Another new side dish was Spinach Gnocchi, and tasty different kind of appetizer. To tell you the truth is did once maybe a couple of years ago but it was a failure then, today I did it with patience and it turned out just perfect.

Ingredients and method :
* 4 cups of spinach, cut washed and squeezed till all excess water is out.
* 1 1/2 cups ricotta or white cheese.
* 1/2 cup parmesan cheese.
* 1 egg.
* 1/2 tsp nutmeg.
* 1 tsp salt and pepper.
* 2 big tablespoons flour.
* some butter and one clove garlic.

* squeeze spinach very well then add all ingredients except butter.
* roll mixture into egg shape.
* roll gnocchi in flour and leave in fridge for a while.
* cook gnocchi in boiling water uncovered till they float on top.
* remove slowly then arrange in an ovenproof pan with butter and garlic then sprinkle with parmesan and mazorella cheese, cook for few minutes till cheese melts.
Buon Apatito as they say in Italian.

Kinder Bueno All Chocolate Cake.

Hello everybody.

My baby turned 18 today, though to me he’s still that blond skinny baby who never sat still for a moment,can’t imagine he’s a fine young man now.

Had a bunch of his friends for breakfast today, big variety of goodies : eggs in buns, manousheh, cheese, labaneh, hummus, falafel… etc.

Highlight of the event was a big fully packed with chocolate cake done upon his request, main filling was cream with crushed Kinder Bueno bars and topping was a mix of Oreo,Maltesers, Flakes and Wafers.

I also made mini pancakes with Nutella,bananas and strawberries in skewers.

Lunch is in process now, only some fries to go with left.

Violet Velvet Cake.

Hello everybody and Happy Mother’s Day.

Though it’s supposed to be a happy joyful day but I always feel sad for people who lost their moms, or childless moms or orphans and keep hoping that these people might find someone to compensate the loss ,plus I don’t like the idea that this day became a big propaganda for gifts and home supplies. If you really love your mom you must love and cherish her all year long not only in one day.
Well anyway, we’ll all gather this evening, I made this lovely cake that I saw on Instagram and been waiting for a special occasion to make it, recipe is the same as red velvet but with violet food coloring and because I didn’t find the right color is did it by mixing red and blue together, all morning doing trials till we got the exact color.
One more thing, filling inside is cream cheese icing and blueberries.

Sunny Sides in a Log!

Hello everybody.

Forgot to tell you that O made spinach with minced meat and kofta yesterday,had some left for today but won’t be enough so I decided to make this appetizer or mostly breakfast kind of dish but nevertheless my boys love to eat eggs anytime no problem.

I would like to thank my cousin Rania for posting this idea to me,really easy and very  presentable way to serve eggs ,love it.

You simply make holes in a French loaf ,drizzle it with olive oil,crack your eggs add salt,pepper and some parsley, I added oregano and cheese also then bake it till eggs are done, amazingly easy.
