Hello everybody.

Big fully loaded burgers are our typical Friday lunch whenever we’re all home.

Today with eggs, cheese and all toppings,tried these tiny breaded fried potato balls also, nice looking for a change.

A must with these burgers Mirinda,cold with lots of ice.

Fried Courgette Flowers.

Hello everybody.

Lunch today was mloukhieh from yesterday, fresh from the farm and so yummy with garlic and lemons.

Alongside with it I made these cute fresh courgette flowers that u couldn’t resist not bring cause they were so intact, a waste to throw them away.

Stuffed with cheddar and Parmesan cheese, garlic and oregano then dipped in an egg,milk, flour batter with a pinch of salt and baking powder.

So crunchy and tasty, I even took some for the guy working at grocery store cause he can’t believe or imagine that these can be cooked.

تحشى الوردات بمزيج من الاجبان الصفراء مع ثوم واعشاب.

يحمى زيت القلي جيدا ثم تغمس كل قطعه بمزيج متجانس عباره عن كوب طحين, 2 بيض, , نصف ملعقه ملح ونصف باكينغ باودر ويضاف حليب بالتدريج حتى يصبح القوام سلس .

ثقلى بالزيت الغزير لمده 5 دقائق.

Bread in a Pan.

Hello everybody.

Have some dear friends coming over this evening and upon their request I did some light dishes cause they’re on diet and frankly so do I at least trying to cut down meals and sweets,a decision I try to comply to every September.

So I did a cheese platter, Caprese salad with some watermelon,labaneh with walnuts and some veggies.

A healthy bread loaf to go to with all this was in my mind since morning so after some research I found this healthy easy one that you bake in a deep pan.

Ingredients and method :
# 5 cups whole-wheat flour or a mix of two kinds.
# 1 tablespoon yeast.
# 1 tablespoon sugar.
# 2-3 cups warm water.

* Mix 2 cups of the flour with all the ingredients and cover till it’s bubbly.

Then add the remaining flour with
# sun-dried tomatoes.
# fresh oregano.
# pitted olives.
# any kinds of seeds you like.

Mix all very well with a wooden spoon and cover till it doubles in size.

# heat the oven with a deep metal pan in it till both are very hot.
# sprinkle some flour or semolina in the pan and add dough quickly.
# bake covered for 40 minutes then uncovered for 15 to get a crunchy crust.

Leave to cool then cut to slices.

Sour Cream Chicken Enchiladas.

Hello everybody.

Was going through recipes looking for something different to do with chicken breasts cause all ones I did are repeated when I saw this one, didn’t have tortilla bread through but I have some thin Arabic shrak,worked well enough cause result was delicious.

Guess the sour taste gave the sauce a sharp nice flavor. Believe me this is a good recommended one.

Ingredients and method :

 

# 1 shredded chicken breast.
# 1 small onion diced.
# 2 chopped sun-dried tomatoes (optional)
# 3 tsp butter
# 3 tsp flour.
# 2 cups chicken broth.
# 1 cup sour cream (I mixed 1/2 labaneh and 1/2 yogurt)
# 1 chili green pepper crushed.
# grated cheese (used cheddar and mazorella or any kind you like)
# 10 soft tortilla bread or shrak.

# mix chicken, onions, sun-dried tomatoes and some of the cheese together.
# In a pan heat butter then add flour and mix well.
# slowly add chicken broth and mix well till it boils and thickens.
# leave to cool down then add sour cream and chili and mix well.
# stuff tortillas with chicken mix and roll.
# In a deep oven pan add a bit of the sauce then line up chicken rolls.
# add the rest of the sauce on top.
# sprinkle rest of cheese on top.
# bake in a medium heated oven for 20 minutes.
# roast top till golden.

Note: leave to cool a bit before serving to give it time to hold up.

Cheese and Capsicum Steak Stacks.

Hello everybody.

Today is meat day for protein source in the diet.

For a change I looked through my cookbooks for something new and came across this one, personally I loved it meaning not all family members found it unusual but it was worth trying.

It’s basically two thin slices of steaks stacked together with cheese, onions and blackened or roasted capsicum or sweet red peppers.

You then wrap them as a parcel then grill on both sides till golden. Leave in the oven covered for half an hour later on in very low heat.

I did some mushroom risotto and sauce on the side.

Summery Watermelon Salad.

Hello everybody.

Back to normal life routine today, went grocery shopping and kitchen started buzzing after a three day vacation.

Since it’s extremely hot and nobody wants to eat something hot or heavy after eating in restaurants past couple of days one feels so full right?
Well end result for lunch was this amazingly cool salad which consists of watermelon cubes, cherry tomatoes, feta cheese and sprinkled with green onions, mints and lemon slices, I then added a drizzle of pomegranate sauce and olive oil. Really yummy.

I also made some pasta with white cheese and parsley and tacos. All very delicious.

White Cheese Sweet (Saudi recipe)

Hello everybody.

Tried a new kind of dessert today, found the recipe in an old magazine,love easy basic desserts.

Ingredients and method :

# 1 1/2 cups sweet white cheese ( one used for qatayef)
# 3/4 cup butter.
# 1 egg.
# 1 pack cream.
# 1/2 cup powdered milk.
# 1 tablespoon sugar.
# pinch of salt.
# 1/2 tsp baking powder.
# 1 cup flour.

# syrup.

# beat the cheese well with butter and egg.

# add the cream, sugar, salt.
# add the milk then baking powder and flour.
# pour in a greased small pan and bake in a medium heated oven for 35-40 minutes.
# when cooled add syrup all over.

Dinner today was chicken with broccoli and mushrooms with pesto pasta, noodles soup,samboosek and spring rolls.

Made a nice cool salad with simple ingredients which are lettuce, fried noodles on top.dressing is lemon olive oil and soy sauce.

Homemade Qatayef.

Hello everybody.

Today I decided to try my cousin’s recipe of Qatayef ,a homemade one cause she lives abroad and this typical Ramadan dessert is not available, but my version was to make a big one filled half with cheese and half with walnuts.

ingredients and method:

* 1 cup flour.

*1 cup semolina.

* 1 tablespoon corn flour.

* 1 tsp vanilla.

* 2 tsps baking powder.

* pinch of salt.

* 1 tablespoon sugar.

* 2 1/4 cups warm water.

* syrup

* Mix all ingredients well in a blender then leave to rise or bubbly.

*heat a nonstick pan till very hot then reduce heat and pour a bit of dough the size you like.

* leave till all dry then remove to cool on a clean cloth.

* stuff and close with sweet cheese or walnuts.

* fry or bake as you wish then dip in syrup.

 

Dinner tonight was a bit of leftovers a plus a steak sandwich loaf ,which is usual steak sandwich filling ( shredded beef,onions,peppers,mushrooms) spread over a rectangular pizza dough , I added mustard and cheese also. Fold the dough and bake all in a medium heated oven till golden and crispy.

 

Usual appetizers were mashed fava beans and fatoush.

Light Lunch.

Hello everybody

No cooking today not only cause tomorrow is the first day of Ramadan but nobody’s home lunch time so I fixed myself a labaneh and Seniora sandwich with a pickle with remaining beans salad, desert was white cheese with apricot jam I made last night.

Noon time I made a big brownies pan for my son going to a picnic and some extra pickles.

Centro Supermarket.

Hello again.

Was planning to cook green beans today but all plans changed cause I went grocery shopping at this new supermarket and bought some  fresh ka3ek and baked eggs and some cold cuts and cheeses so I decided to fix a quick brunch,good desicion cause boys slept late anyway so it was kind of a breakfast lunch meal.

Centro is a new centrally located supermarket in the middle of Madina Munawara strt. Very clean and tidy,various kinds of goodies specially some Italian brands of pastas olive oil and delicacies,fresh fruit and vegetables, freshly baked breads, excellent butcher…etc.

Very highly recommended, prices are good also, they do have lots of offers.
