Nachos ♡.

Hello everybody,  hope you’re enjoying the weekend.

Wasn’t planning to do nachos but today is my youngest birthday, and I did it upon his request. Couldn’t let him down though I had an extremely busy morning.

Ingredients and method:
* 1 big pack nacho chips.
* 1 small onion finely chopped.
* 1/2 cup red beans.
* 1 big ripe tomato also finely chopped.
* a bit of hot pepper and Tabasco.
* salt and pepper.
* cheddar cheese.
* sour cream or labaneh.

* saute onions till tender in oil.
* add all other ingredients except cheese
* simmer on low heat till done.
* spread nachos in a wide oven pan.
* spread sauce over it.
* add cheese and put in the oven till cheese melts.
* serve with sour cream or guacamole on the side.
* Note: you can add jalapenos, black olives and fava beans to sauce also.

Really really yummy. .beats any Mexican food restaurant I bet you.:)

Tuna Sandwiches and Cheese Buns.

Hello again.

We’ve been eating too much meat, chicken, fatty food this week. So today I’m keeping it simple.

I made tuna sandwiches,  only added lettuce, lemon juice, mayonnaise, salt and pepper to a can of tuna, with some pickles in the sandwich and that’s it.

Early morning though I was rearranging the fridge, found lots of already cut  cheeses from breakfast,  thought to make cheese buns with them. So I kneaded a dough, exactly like  pizza , then arranged cheese slices with tomato slices and thyme. Form them into buns and baked them. Perfect for school lunches or snacks for kids.
Well, I had some dough left so I cut some fresh oregano from the garden, chopped a tomato on them, added dry oregano and sesame and made more buns.

Ended with a light delicious lunch…important point is that hubby and kids loved it ♡♥♡♥

Meatloaf with Cheese.

Hello everybody.
What a week..too much invitations and food of various kinds,all yummy!!!!

Tonight all family ladies are invited to dinner,, must cook for boys and hubby though. I made an old meatloaf recipe. Easy, juicy and kids love it, what more could one wish for??

Ingredients and method:
* 1 kg minced veal.
* 1 egg.
* 1 spoon ketchup.
* 1/2 cup breadcrumbs.
* 1 spring onion.
* 1 bunch parsley or spinach.
* 1 tsp soy sauce.
* salt, pepper, oregano, all spice.
* 3-4 slices cheddar cheese.
* extra ketchup for surface.

* chop onion and parsley saute in a bit of oil.
* add to meat with rest of ingredients and knead well till mixed.
* spread on wax paper into a rectangle.
* add cheese slices and fold.
* spread olive oil and ketchup on surface.
* bake in medium heated oven for 30-40 minutes.
* serve with fries or wedges.

Cannelloni and Cheesy Garlic Bread.

Hello again.
   Well got back home to cook lunch.:)

Today I’m making cannelloni the way a friend on fb cooks it, I usually stuff it then add tomato sauce on top then in the oven,  but last time Mary posted a photo of cannelloni that looked nicer than the ones I make. Told me she does it the other way around..I mean tomato sauce then cannellonis on top..this keeps their shape better.

A change today also, I used chicken instead of meat cause we ate too much meat last week.

    I also made a  cheesy garlicky loaf,  been wanting to make this recipe for so long..though it didn’t turn out exactly like the original.

Ingredients and method:
*1 pack cannelloni.
* 1 can chopped tomatoes.
* 1 spring onion or leek.
* 2 big ripe red tomatoes.
For cannelloni filling:
* 2 chopped chicken breasts.
* 1 cup spinach.
* 2-3 cups thick white sauce ( 2 big spoons butter,  2 big spoons flour, 2-3 cups milk.)
* cube of white or fetta or ricotta cheese.
* some grated parmesan.
* mozzarella or kashkaval chesse for topping.

* start by making the filling cause it must cool before you use it.
* sautee chicken pieces with some oil.add salt and pepper till golden.
* make the white sauce by adding flour to heated butter, stir well till golden then add milk slowly and whisking at the same time.take care cause it may clott , if so use electric whisker to make it creamy.
* add spinach and chicken, cheeses then season to taste.
* keep uncovered to cool.
* make the tomato sauce by frying chopped onions, adding tomatoes (2 kinds) and salt, pepper, chilli, paprika as you like.
* leave for 15-20 to cook.
* stuff cannellonis with filling with a small spoon or as I do….wear a disposable glove and stuff..much more quicker:)
* arrange over tomatoes then put them covered in a medium heated oven 45-50 minutes.
* note: I actually added a bit of water on top  during baking cause I felt pasta is drying.
* sprinkle with cheese and roast till it melts.

Cheesy garlic bread:
Saw this recipe on fb, thought it’ll go well with cannelloni.
You’ll need :
* a whole  loaf
*butter.
* various kinds of cheeses.
* garlic powder.
* fresh coriander or parsley or oregano as you like.
* cut the loaf to rectangles only from the top.
* stuff the cheeses in holes.
* sprinkle garlic, butter and coriander.
* bake till cheese melts and ….. eat:)

Za’tar Sticks.( اصابع الزعتر)

Hello everybody. How’s your weekend so far???
Hope you’re enjoying the great weather♡.
We’re invited to lunch today at my brother’s fiancee family house…off cooking  also!!! . Actually we had great time and had delicious whole roasted lamp with rice followed by knafeh.
This morning I cut some fresh green za’tar leaves from my garden, so aromatic and tempting to do something with them.
I always bake these sticks whenever I have fresh za’tar, very good in the morning as quick breakfast with cheese or labaneh.

Ingredients and method:
* fresh za’tar or thyme.
* 2 big spoons of each eating za’tar (the one usually bought ready from stores ), dried oregano, sesame seeds, black seeds (قزحه ).
*1 spoon instant yeast.
* 1 spoon salt.
* 1 tsp sugar.
* 3/4 cup olive oil.
* 3 cups  whole  wheat flour.
* 3 cups white flour.
* enough lukewarm water to knead (1-2 cups)

* take one cup from the flour,add yeast, sugar and 1 cup water ( not hot nor cold) mix well and leave till bubbles are formed.
* add all remaining ingredients. Knead well with water enough to form an elastic  non sticky dough.
* cover it with a bit if oil and leave for 1/2 hour to rise.
*  spread it to a thin layer in a big oven tray.
* cut to long rectangles or any shape you like.
* bake in a well heated oven till golden from bottom then roast the upper part.
* store in a well closed jar or tin.

Spinach Quiche.

Hello everybody.

Very long and hectic day, full of events…didn’t have time to cook actually. Thank God I made a spinach quiche yesterday afternoon so we ate the rest of it.
  You can do quiche with different fillings, spinach, mushroom, cheese, vegetables. I made a mix of all cause I had some spinach left after making tabouleh on Thursday and some mushrooms also plus many kinds of cheeses.
Ingredients:
For the crust:
* 1 egg, beaten.
* 1 tsp salt.
* 3/4 cup butter.
* 1 1/2 cup flour.
* 2 big spoons cold water.

* Mix all ingredients together to form a firm ball.keep in fridge for 1/2 hour then spread in a pie pan.
* bake at 250 º for 20 min.

Filling:
* 3 eggs.
*bunch of chopped spinach.
* chopped mushrooms.
* grated cheese, white, feta, cheddar.
* small finely chopped green hot pepper.
* 1 small pack cream or 1/2 cup milk.
* salt pepper and a dash if nutmeg.

Mix all together then add to partially baked crust and bake for 30-35 minutes on low heat.
Serve with green salad.

Onion Soup :)

Hello everybody.

When I asked the kids what do you want for lunch tomorrow?  They suggested onion soup.I usually make it in Ramadan, then forget about it rest of the year.so onion soup it is.I’ll make a pasta salad on the side with a bit of beans from yesterday. .that’ll be a nice lunch.
For the soup you need:

*4 large onions.
*1/2 cup vegetable oil or butter.but oil is much lighter.
*4 big tablespoons flour.
*4 cups water.
*1 cube chicken stock or you can use homemade chicken stock if you have instead of water.
*One small spoon :salt.pepper. cinnamon.all spice.
*Pinch of nutmeg powder.
*Any kind of cheese.
Cut onions to small pieces, I used to cut it to thin slices but small ones are easier when you eat.heat the oil then add onions till very tender on low heat.add all spices.salt.chicken cube and flour..mix well,then add water, leave to boil then turn down the heat, leave to simmer .you may need to add more water if soup is too thick.
Serve the soup with croutons topped with mozzarella, cheddar, kashkaval cheese or any kind you prefer.or you can roast buns in the oven, remove the pulp and pour soup in it.

As for the salad you need:
*Mixed colored sweet peppers sliced.
*Fresh mushrooms slices.
*One cup sweet corn.
*1 big spoon lemon juice.
*2 big spoons mayonnaise.
* 1 small spoon balsamic vinegar.
*1 small spoon of salt and oregano.
*Half a cup olive oil.
*2 cups boiled shaped small sized pasta.

Mix lemon juice, mayonnaise, vinegar, salt, organo together. Add all peppers, mushroom, corn and mix with sauce.
Add pasta and toss it well before serving.
I’m positive kids will love it…plus it’s a way to let them eat some veggies.

Magical Cake.

Well today we’re invited to my uncle’s house for dinner….I’m sure any house wife is relieved when  invited to lunch or dinner….no worries about what to cook that day.

So today’s lunch will be light….cause dinner will be stuffed turkey. …must keep room for it:)
…I will post pictures of it for sure.

I will make light grilled cheese sandwiches and green salad…with a twist.
Meaning…I use lettuce.tomatoes.some walnuts…and for the dressing..mix lemon juice..a small spoon of balsamic vinegar.a drizzle of of pomegranate molasses ( دبس رمان ) .and salt.simple and tasty.

As for the cheese sandwiches. ..you can use any type of cheese…halloum.white nabulsi cheese..cheddar. ..today I have  white cheese..
I spread the toast with a bit of pesto. (Optional of course) or sprinkle a bit of thyme…as you prefer.
Heat the pan..add a bit of butter…put the cheese sandwiche and press it with a spatula or heavy pan…till bread is toated.then flip and toast the other side…
sometimes I grill the cheese also… especially if  it’s halloumi…Enjoy

I usually make something sweet and take with me when invited to lunch or dinner….homemade sweets are much more desired from readymade…
I will also take a jar of the orange jam I made last week…a perfect gift♡.

The cake I made is  Magical Cake….it’s called like that cause it separates to three layers when baked.
I got this recipe from Ro’ya tv channel..made by chef Ghada El-Tally….her recipies are always easy and delicious. …
Ingredients:
4 eggs seperated.
1 cup sugar.
1 spoon water.
1 tsp vanilla.
100 g melted butter.
2 cups warm milk.
3/4 cup flour.
1 tsp baking powder.
1 small spoon vinegar

Mix egg yolks.vanilla. water.sugar  very well then add butter..milk .flour and baking powder…mix.
Note:make sure butter is melted and milk is warm or else butter will clot if milk is cold.
Beat egg whites with vinger until it’s foamy and no liquid stays at the bottom…by using electric mixer.
Fold the egg whites into the yolks mixture gently..until all mix together.
Use a small pan…grease with oil and sprinkle with flour…or for easier handling use waxed paper..let it cover all sides of pan and out so that you can remove cake from pan easily.

Bake in medium heated oven for 45 minutes  ..or till upper layer is crispy.
Cool for half hour then put it in the fridge for 3-4 hours.
The cake will seperate to a cake layer.custard layer and upper crust.
Sprinkle with icing sugar before serving.
