Lentils ( mujadara)

Hello everybody.

Lots of events going on today,I went out to breakfast with my lovely friends to celebrate dear Wafa’s birthday, early this morning I baked another Nescafe Cake, I think this one will be my trademark from now on,with the same ornament and flowers. Everybody enjoyed it and was a delightful surprise.

Back home I got the nicest present from my lovely niece Layan,a box of mixed herbs from Istanbul, thank you dear 🙂

At lunch time plans changed a bit,I’ve  already cooked some lentils before I left ,thought I’ll make one of Mary’s recipes from her lovely book “On Healthy Cooking” but then discovered I don’t have all ingredients available,so ended up making mjadara with fried onions and some salad.

Happy Birthday Sis ♡♥( Hawaiian Blessing)

Hello everybody.
Though thousands of miles away this year but still,a usual custom I made my baby sister a birthday cake,actually not a baby now for sure, but guess she’ll always be my baby sis no matter how old. Wish you happiness, health and joy in your new life my dear.

As for the cake, to be honest I baked one yesterday, new recipe for a strawberry cake but it was a failure, I was planning to take it to my Mom’s cause her cousins are coming and we’ll celebrate long distance.

Anyway as I said cake wasn’t good at all even the custard vanilla frosting tasted like starch . I always make the same mistake, try new recipe when guests are coming, big big mistake.

I ended up doing Nescafe Croquant cake again this morning, to be on the safe side. I also made a kind of fruit custard pie called Hawaiian Blessing, similar to the one I made on Valentine’s .
Made also spinach tabouleh and french pizza.

ingredients and method:
* plain biscuits.
* 1 can sweetened condensed milk.
* 1 cup milk.
* 3 big spoons starch.
* 1 tablespoon butter.
* 1 pack cream.
* 1 can pineapple.
* strawberries and kiwi.
* coconut.

* mix condensed milk, milk, half juice of pineapple, butter and starch very well then heat till boiled and thick, keep mixing while on stove so it won’t clot.
* remove from heat then fold in cream.
* layer biscuits in spring pan and sprinkle with pineapple juice.
* add half of mixture then add sliced strawberries.pineapples and coconut.
* add another layer of biscuits and repeat
* cool in fridge for several hours.
* toast some coconuts to decorate top and slice kiwi to sides.

You can use any kind of fruit you have, excellent dessert for hot summer days.:)

Nescafe Croquant Cake.

Hello everybody.

No cooking today, still have cauliflower,plus nobody is coming at lunch time, so it’s sweets day 🙂

My neighbor’s ( which is my husband’s auntie at the same time) birthday is today,we’re going for coffee to celebrate with her so thought I’ll bake a cake.I also made some cookies and Tabouleh, might make the gathering at my house better than taking all this food with me,plus it’s a chance to pamper our sweet Auntie Um Rasheed <3

A friend of my niece asked me a while ago for this cake’s recipe and I promised her to make it soon, so today is a good chance,cause I want to make a kind of birthday cake, this will do just great.

This recipe is very old,I remember when I first learned it I used to make it every weekend, it was such a trend that time , a sweet auntie of mine used to call it the glass cake 🙂

Ingredients and method:

* 5 eggs.

* 1 big spoon Nescafe dissolved in 1/2 cup of water.

* 1 tsp vanilla.

* 1  1/2 cups sugar.

* 1 cup vegetable oil.

* 4 tsp baking powder.

* 2 cups flour.

* 1 1/2 cups sugar and 3/4 cup almonds for the croquant.

* whipping cream.

* extra Nescafe in water for the cake when done.

* beat eggs with sugar till creamy then add vanilla,oil,Nescafe,baking powder and flour alternatively.

* bake in a medium heated oven in two small baking tins for 30-35 minutes or till dry from inside.

* when cooled, place one layer in serving plate then add some Nescafe on it.

* cover with cream and croquant then add other layer and repeat.

* decorate cake with anything you have .

*Croquant :

* heat sugar and almonds till it caramelize.

* pour in a well greased pan till cold and stiff.

* crush or use food processor to make fine crumbles. ( it actually resembles glass 🙂 )

* leave in fridge to settle before serving.

Oreo Cheesecake. ♡♥

Hello everybody.

Festive mood in the air. Mother’s day is tomorrow, our dear friend’s birthday,  my son’s birthday also…♡♥♡♥.
Today we had a lovely gathering to celebrate ourselves “lovely moms” plus the birthday. It was a sharing brunch actually. Many delicious dishes..table was elegantly full of both salty and sweets variety. .I will post some new recipes of them soon.

My share was sweets..I made a plain chocolate  cake upon request of bday girl plus Oreo Cheesecake. It was superb..testimony of everybody not me alone.

Ingredients and method:
* 1-2 large packs Oreo biscuits ( 36 piece)
* 3-4 tablespoons butter.

* 3 eggs.
* 3/4 cup sugar.
* 3 tablespoons yoghurt.
* 1 small pack fresh cream.
* 1 pack kiri or cream cheese.
* 2 tablespoons flour ( sorry forgot to add in ingredients photo. )
* zest of lemon.
* 1 tsp vanilla.

* in food processor beat half of biscuits with the butter to form a base. Spread in a spring pan and keep in fridge.
* beat sugar, kiri, cream , lemon zest till fluffy then add eggs one at a time.
* continue beating, add vanilla then flour.
* add coarsely chopped Oreos,  around 10 and mix slowly.
* pour over base.
* bake in a medium heated oven for 40-50 minutes or till dry.
* keep in oven to cool but keep oven door open.
* cool in the fridge preferably overnight.
* decorate with crushed Oreo and chocolate syrup.

The One and Only: Chocolate Cake.

Hello again everybody.
Last night my dear friend living in USA asked us if we can go visit her mom here in Amman on the occasion of her birthday,,, a request I can’t but to do willingly and with big big love…cause Auntie Georgette is the sweetest most lovable person in the world..and all of us would do anything to make her happy.

Chocolate cake recipies are various..I think one of the most searched and favored all over the world. This is my first and most successful ever ,  I even remember took it from my English teacher in 9’th grade,, though I tried many other recipies but I always go back to this one.
Ingredients and method;
* 3 eggs.
* 1 1/2 cups sugar or 1/2 brown and 1 regular white.
* 1/2 cup vegetable oil.
* 3/4 cup yoghurt.
* 1/2 cup cocoa powder
* 1 tsp vanilla.
* 3 tsp baking powder.
* 1 1/2-2 cups flour.

* Beat eggs with vanilla till frothy.
* add all other ingredients gradually.
* add 1 1/2 cups flour then if the batter is too thin add the other half.
* bake in a medium heated oven for 30-35 minutes or till dry when checked with toothpick or knife.

Topping:
* 3 big spoons sugar.
* 3 big spoons powder milk.
* 4 big spoons cocoa.
* 1 big spoon cornflour or starch.
* 1 big spoon butter.
* 1/2 cup water.
* you can add some chocolate of any kind you like (optional).
* stir very well over a water bath then cover cake with it.

Pistachio Cake

Hello everybody.

Morning breakfast birthday celebration was superb, beautiful weather we even sat outside with best company and delicious chocolate orange mousse cake. Happy Birthday Reemo ♡♥.

As I told you we have visitors coming this afternoon. Last night I baked the cake and mixed the cream and kept it in the fridge..I assembled it this morning.
Well this cake has very little ingredients and very easy to make, but it’s success depends upon baking heat and time.Oven must be on 180 º and may need to lower it after 15-20 minutes to 130º. Another issue is baking time, recipe says 20-25 minutes, it may need a bit more but you must be careful not to over bake or else it will dry or collapse..turn off the oven when surface is golden and sides crispy. Then leave to cool completely before removing it from pan.

Ingredients:
* 3 cups finely crushed pistachios
* 6 eggs.
* 1 1/2 cups sugar.
* 1 tsp vanilla.
* 1 1/2 tsp baking powder.

Method:
* Mix eggs, vanilla and sugar till fluffy and creamy.
* Add baking powder and pistachios.
* Grease 2 small baking pans or line with wax paper.
* Devide batter in pans.
* Heat oven at 180º. Bake for 20-25 minutes. Leave to cool.
For the filling:
* 1 pack kiri or cream cheese.
* 1 pack dream whip.
* 1 pack cream.
* icing sugar if you like your cream extra sweet.
Mix well till fluffy and doubled in size. Leave in fridge overnight.
Assemble the cake and leave in fridge to firm for 2-3 hours. Decorate it as you wish.

Bounty Squares

Hello again.
 
My mother in law has visitors coming tomorrow afternoon, and I’m going out with my friends in the morning to celebrate our dear friend Reem’s birthday.  So I will make two kinds of sweets today, better to save time.♡

     I have this recipe from my beloved friend Abeer. It’s usually done in a pyrex but today i’ll make it in a spring pan and cut it to squares to be served with coffee instead of normal chocolate.

Ingredients:
* 1 cup plain biscuits crushed and mixed with butter.
* 2 cups coconut.
* 2 spoons flour.
* 1 spoon corn flour.
* 1/2 cup sugar.
* 1 spoon butter.
* 2 cups milk.
* cooking chocolate.
* 1 spoon butter.
* 2 spoons peanut butter (optional).

Method:
* spread the biscuits as base un pan or pyrex.
* in a sauce pan, mix milk, coconut, sugar, flour, corn flour, butter and heat till mixture thickens.
* cool in fridge for 2-3 hours.
* in a water bath heat chocolate , add a bit of butter and milk and mix till creamy and totally melted.
* spread over coconut in a thin layer.
* leave to cool then cut to small squares or serve as it is in a pyrex.

Tastes a lot like Bounty for those who love it, I know I do♥
