Beetroot Hummus.

Hello everybody.

Boiled some beetroots yesterday , it’s the season you know, so today I searched for something new to make with them other than salads .Since I have a box of ready made hummus this mix seemed a good option.

Mix is so easy ,all together in the food processor :

*boiled beetroots.( I used 2 large ones)

* half cup of hummus or 1 cup boiled chickpeas.

*1 tablespoon tahini sauce.

*1 tablespoon lemon juice.

*1 tsp of each, salt, cumin and chili powder.

*1 clove garlic.

That’s it! see super easy especially if you have ready hummus. By the way one can find many kinds and flavors of them these days, all  good .

A really healthy cheerful dish that works great as dip with chips or veggies and of course a great option for kids as a trick to eat healthy stuff.

Eggplant Appetizer.

Hello everybody.

Got some fresh vine leaves yesterday so better to cook them immediately, hate freezing fresh stuff feels like a waste of something valuable.

So I stuffed some courgettes with them, best dish ever. Plus I made this appetizer that my Italian cousin posted yesterday.

You simply grill your sliced eggplants after salting them then add sliced tomatoes, minced garlic, chopped parsley, lemon, salt and oil on top before serving, I even added some olives turned out absolutely delicious.

Happy day with good food and best friend coming for a short visit.

Sunny Sides in a Log!

Hello everybody.

Forgot to tell you that O made spinach with minced meat and kofta yesterday,had some left for today but won’t be enough so I decided to make this appetizer or mostly breakfast kind of dish but nevertheless my boys love to eat eggs anytime no problem.

I would like to thank my cousin Rania for posting this idea to me,really easy and very  presentable way to serve eggs ,love it.

You simply make holes in a French loaf ,drizzle it with olive oil,crack your eggs add salt,pepper and some parsley, I added oregano and cheese also then bake it till eggs are done, amazingly easy.

Shawerma Fatteh.

Hello everybody.

Last night my dear cousin Samar posted this dish she made for dinner,kindly she also posted the recipe which is perfect to do today with the lasagna leftovers, I needed something light and small and this  was just it.

Remember I did meat shawerma before,you can use same spices and marinate for chicken also.

 

Ingredients and method:

* shredded chicken breasts.

* salt,pepper,all spice,pinch of cinnamon,cardamon,cloves.

* small tsp balsamic or white vinegar.

* sliced onions with summaq.

* chopped tomato.

* tahini sauce ( yogurt,tahini,lemon and salt mixed together)

* chopped parsley to garnish.

* fried or toasted pitta bread.

* saute chicken till almost done.

* add tomatoes and onions,cook all together till most water evaporates.

* line a deep dish with toasted pittas then add chicken mixture just before serving.

* add tahini sauce and parsley.
