Cheese Stuffed Burgers.

Hello everybody, hope you’re all enjoying the amazing weather.

Well today I can assure you that everything happens for a reason, I absolutely had no idea what to cook this morning then by coincidence I found out that my freezer was off since a while from the loosened wire so I had to cook melted stuff. End result were fava beans and steaks in yogurt, two pieces of scallop and two burgers.

My son decided to stuff burgers with cheese so I coated it with eggs, flour and breadcrumbs then deep fried the ball.

Result was variety of yummy stuff at the end

Oreo and Caramel Popsicles.

Good evening everybody.

Long busy day since early morning guess Sumner events started already!
Was invited to a big family breakfast gathering at my uncle’s house and as usual I love to bring a special dessert or dish with me so today’s pick was something new, Oreo and Caramel Popsicle.

Though recipe is very easy and simple but it’s a bit messy process specially dipping in chocolate and arranging them in a nice arrangement.

Oreo ones consists of crushed Oreo (24 pieces)  with two tablespoons of heavy cream all mixed well then formed into balls, freeze for two hours then dipped in chocolate.

Caramel ones consists of sweetened condensed milk cooked well till thick and caramelized mixed with plain or Lotus biscuits.

Taste was great but I’m not pleased with final look, next time I’ll decorate them differently,guess process needs more patience 😀

Weekend Dishes.

Hello everybody.

Weekend almost over, lazy and calm but will end up with a wedding in couple of hours 😀.

Dishes this weekend were various,first thing I delivered this beautiful full of love Red Velvet cake.

Lunch was a selection of yummy stuff, tandoori chicken with eggplants, potatoes with cream, chicken and meat scallop and coleslaw.

Sheraton Amman Spice Garden/Arabian Nights.

Good morning everybody.

I was privileged last night  to be invited to a very nice venue at Sheraton Amman on the occasion of launching Arabian Nights at  The Spice Garden restaurant which includes a variety of Jordanian, Syrian, Lebanese and Moroccan dishes along with delicious sweets and amazing live music.

Invitation came through Family Flavors magazine to all food bloggers,venue was for all social media people active on all platforms.

Evening started with a tour at the Ambassador Suite on the 7th floor, beautiful space and exquisite view to beautiful Amman, then we gathered at The Spice Garden  for a Knafeh making lesson with the chef which we ate later on.

Dinner was served afterwards,a wide selection of delicacies starting from salads, appetizers, main dishes and desserts. You even can order special dishes like kofta or hummus with meat on top ( that was so yummy).

Highlight of the evening was meeting the new GM Mrs Iva Trifonov and all marketing staff who were very kind and hospitable, nice interesting event and we even went home with a nice apron to remember it.

Recycling Old Boxes.

Today’s order was some cute strawberry and orange jams,wrapped them with a piece of paper I kept from a flower bouquet 😀

Another recycling was the box, old shoe box covered with old lively magazine papers, turned out a beautifully packed package 🎁

Busy Friday.

Hello everybody.

Such a busy day,usually Fridays are lazy and quiet but this one was the opposite.

Started with breakfast with my friend who came by to give a German lesson to my son,followed by coffee for sure.

Then preparing today’s last minute order, falafel rolls and great  depression vanilla cake with pineapples and roasted coconuts on top.

Corn Chicken Soup.

Hello everybody.

Woke up with a terrible flu,headache and fever that shouts out for hot drinks and soup.

I boiled some chicken with whole onion, carrot and seasoning ( cinnamon stick, pepper kernels, cardamom and bay leaf)  with the intention to make chicken vegetable soup but then I switched to corn and cream cause kids prefer it I’m sure.

Ingredients and method:

*one small onion finely chopped.
* 1 cup corn.
* some cooked chopped chicken pieces.
* 2 tablespoons butter.
* 3 tablespoons flour.
* 4 cups chicken broth.
* 1 cup fresh cream.
* salt,pepper and a pinch of nutmeg.

* heat butter then saute onions.
* add flour and whisk well.
* add broth and keep whisking or you can use hand blender if you got clots.
* add corn and chicken.
* season and leave to simmer for 20-25 minutes.

Hello everybody.

An idea clicked my mind last night why not make a small market at my house as a trial, this came up after visiting a local farmer’s market yesterday. Well I do make or already have many products so why not sell them the same way but through social media instead of going to a market.

So my kitchen started buzzing early this morning, baked some za’tar puffs, date rolls, jams and marmalade, walnut cookies and a full basket of farm eggs .

After I posted the products on Facebook all was gone in an hour specially the eggs, already have orders for the next batch , guess my mini market will be a fixed event !

Persian Walnut Cookies.

Hello everybody.

As always I like to try a new recipe,it’s becoming like a weekly challenge for me. Today’s trial was an interesting cookie one from the Persian cuisine.

Ingredients can give you a hint that it’s delicious, all nutty and aromatic but next time I’ll make them a bit smaller cause they spread well when baked.

Ingredients and method:

* 1 1/2 cups crushed walnuts.
* 3/4 cup sugar.
* 3 egg yolks.
*  1 tablespoon rose water.
* 1 tsp cardamom.
*  1 tsp vanilla.
* 1 tsp baking powder.
* pinch of salt.
* 1 extra egg yolk plus one tablespoon water.
* extra whole walnuts for garnish.

* Beat eggs, vanilla, cardamom, sugar well.
* add walnuts,rose water, baking powder and salt.
* dough will be sticky so use two spoons to scoop small amount on baking tray layered with wax paper.
* put a walnut on each cookie then brush with egg water mixture ( I think I’ll skip this next time maybe)
* bake in a medium heated oven (180 c) for 15-20 minutes only or till edges are brownish.

Note: cookies will be soft when hot but don’t worry they’ll harden later on.

Store in a closed jar later, they great with coffee or tea,rich in flavor and extremely delicious.

Apple Raisins Rice Pudding.

Hello everybody.

Last night as I was about to turn off the TV the Italian chef Lidea caught my attention making this recipe, rice pudding but with a twist, she added apples and raisins which really looked yummy and rich. Actually I think anything with cinnamon is delicious.

Well today I decided to implement it right away, a nice dessert for my hubby cause he’s on diet, I used skimmed milk, sativa sugar and only a small spoon of butter and cornstarch instead of egg yolks.

Ingredients and method :
* 4 cups milk.
* 1/2 cup sugar.
* 3 tablespoons cornflour.
*1/4 cup rice.
* 2 large peeled sliced apples.
* 1/2 cup raisins.
* 1 tsp butter.

* heat 3 cups of milk till warm.
* in the remaining cup dissolve cornflour and sugar well.
* boil rice for 10-15 minutes,drain and cool.
* add rice and cornflour sugar mixture to boiled milk.
*stir well and leave to simmer for 20-25 minutes.
* in a deep baking dish, spread butter then add apples,raisins and cinnamon.
* pour rice milk mixture on top then into a minimum heated oven for 20-30 minutes or till volume reduces.
* serve with vanilla ice cream or fresh cream.
