Eggplant Maqloubeh with Sun-dried Tomatoes.

Hello everybody.

Another batch of veggies were brought from the farm yesterday, so had to do something with these eggplants before they rot.

A traditional Arabic dish Maqloubeh is always a good choice but today I added two things that I don’t use usually, onions and sun-dried tomatoes.

Well thought I’d combine a recipe I saw on Fatafeat cooking channel in Chef Daad Abu Jaber show and an advice from my lovely aunt .Result was extremely delicious ,they really did add to the taste .

Earl Grey Cookies.

Hello again.

Was searching for something new and different to make for Eid then came across these elegant cookies, first trial was yesterday but thought I’d change some things cause they were too oily and sweet ,so a moderated one came up today and it was great,crisp and light.

I also did my usual cardamom cookies,love those cause they’re so easy to make.

 

Ingredients and method of Earl Grey cookies:

  • 3/4 cup butter.
  • 1/2 cup sugar.
  • 2 egg
  • 1/2 tsp vanilla.
  • 2 tsp fine earl Gray tea ( I used content of 3 bags)
  • 1/4 tsp salt.
  • 1/2 tsp baking powder.
  • 2 cups flour.

 

Beat sugar and butter well till light in color and creamy.

Add eggs and vanilla and continue baking.

Add flour,tea leaves and baking powder , dough will be soft a bit and sticky it’s ok.

Cool in fridge for 1 hour then roll to a big rectangle and cut to any shape you like using the cookie cutters.

NOTE: for easier handling roll dough between wax paper so as to avoid sticking.

NOTE: if dough became too soft put it again in fridge , or cut it in batches not all at one.

Heat your oven very well then reduce it to medium and bake cookies for 8-10 minutes at the most.

Leave to cool then store in a well closed jar.

 

Cardamom Cookies:

Ingredients and method:
*2 cups flour.

* 1/2 tsp baking powder.
* 4 teaspoons cardamom powder.
* 1/4 tsp salt.
* 1/2 cup grounded almonds.
* 1/2 cup sugar.
* 3/4 cup melted butter.
For the coating:
* 1 cup confectionary sugar (سكر ناعم ).
* 2 teaspoons powdered cardamom.
* almonds.

* mix flour, cardamom powder, sugar, grounded almonds and salt together.

* add butter and mix with your hands till you have a from dough. You can add a bit of cold water for easy handing.
* form dough into small balls.
* coat with powdered sugar-cardamom mixture.

* press balls with a small cup to flatten a bit.
* decorate with almonds.
* bake in a medium heated oven for 10-13 minutes.
* store in a well closed jar.

Perfect with black coffee, please try them, they’re really good ♡♥.

Old and New Vegetarian Dishes.

Hello everybody.

Today is no meat or chicken day, a break is in need sometimes.

One dish was a new recipe, steamed broccoli flowers with garlic tahini sauce on top and a sprinkle of summaq,though all said sauteed is much nicer but it’s not bad, healthy and light.

The other was my favorite “Chili Potatoes” my kind of dish,hot with some lemon juice, great with the stuffed pickled peppers .

Ingredients and method of chili potatoes.

  • 3-4 large potatoes peeled and cut to medium sized cubes.
  • 2 cloves garlic minced.
  • 1 bunch of fresh coriander.
  • salt,pepper,paprika,chili powder.

* deep fry the potatoes till golden.

* when still hot season with salt,pepper,paprika and chili.

  • saute garlic in some olive oil till golden then add potatoes and mix all well.
  • leave on to cook together over very low heat for 10 minutes.
  • add fresh chopped coriander just before serving.

Baked Feta Cheese.

Hello everybody.

Alone for lunch today so I was looking for something light and quick to do,though hate eating alone but well one have to sometimes.

Found a pack of feta cheese in my fridge so I directly decided to this super easy appetizer that we always eat in our favorite restaurant in Limassol /Meze Tavern in old town. Of course it’s served alongside a wide selection of meze but today only with some rocca salad and crisp toasted bread.

Though the one they make stays more firm cause it’s originally this way so it stays the same after baking,mine was a bit crumbly but yummy nevertheless.

You simply coat the feta in foil paper then drizzle with olive oil and add oregano,tomatoes,olives and herbs. bake for 10-15 minutes and that’s it.

Chicken Liver.

Hello everybody.

Leftovers aren’t enough today so I had to do something as a backup. Option was chicken Ceazar salad but it turns out I don’t have any chicken left so a plain one was done.

Found a small plate if chicken liver in my freezer,healthy easy option as well though as my hubby said they turned out a bit dry, always in my case when I make them unlike when he cook them don’t know why.

My sweet stuffed pickled peppers are done, so yummy!

Thank God all leftovers and today’s dishes are gone except a bit of salad that I kept for the boys as a night snack.

 

Chicken Liver:

* 1/2 kg chicken liver.

* 2 sliced onions.

* chili green pepper.

* olive oil,salt,pepper and pomegranate sauce.

* saute onions and peppers in heated oil,then add livers and stir.

* add salt and pepper then leave to simmer on low heat till dine ( 30-40 minutes)

* when done turn off heat and add one big spoon pomegranate sauce and stir all together.

Ka3ek and Cheese.

Hello everybody.

Two lovely friends came to visit this morning and since I woke up so early today I decided to bake some ka3ek.

A small simple breakfast with minted tea,I always feel good about myself when I bake breads don’t know why, guess it’s the smell maybe.

Dough ingredients :
* 6 and extra half cups flour.
* 2 tablespoons oil.
* 1 tablespoon instant yeast.
* 2 tablespoons sugar.
* 2 1/2 cups lukewarm water.
* 2 teaspoons salt.
* 1/2 cup milk.
* some sesame seeds.
* some semolina to sprinkle under the Ka3ek.

* Mix water,yeast and sugar and leave ten minutes till bubbles are formed.
* Mix flour,salt and oil then add yeast and water and knead well.
* leave in a warm place till it rises ( 1-2 hours)
* knead again then form it to loaf shape or place a metal ring inside to make a circle in the middle.
* Brush with milk and sprinkle sesame seeds in top.
* leave to rise again then bake in a well heated oven for 15 minutes.

Rocca Mushroom Pomegranate Salad.

Hello everybody.

Pomegranates are in season now, healthy nutritious fruit that most people love.

These days one can find many recipes using it not like old times.

Today I made rocca salad added too many things walnuts,cranberries,mushroom, pomegranate and simple dressing.

Typical Friday Lunch.

Hello everybody.

Big fully loaded burgers are our typical Friday lunch whenever we’re all home.

Today with eggs, cheese and all toppings,tried these tiny breaded fried potato balls also, nice looking for a change.

A must with these burgers Mirinda,cold with lots of ice.

Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

Toffee Cake with Butterscotch Sauce.

Hello everybody

No intention at all to do a cake or dessert cause we’re all trying to cut down sugars , at least try, but my mother in-law gave these dates she didn’t like cause they ‘re too sweet so I thought i’d do this cake with them and send her most of it.

 

Recipe is easy so is the cake specially if you eat it with ice cream and sauce.

Ingredients and method:

  • 3 tablespoons butter.
  • 1/2 cup vegetable oil.
  • 2/4 cup brown sugar.
  • 1 1/2 cups pitted dates.
  • 1 tsp baking soda.
  • 1 tablespoon molasses.
  • 2/3 cup boiling water.
  • 3 eggs.
  • 1 tsp vanilla.
  • 1/2 cup chopped walnuts.
  • 2 tsp baking powder.
  • 1 tsp ginger.
  • 1 tsp cinnamon.
  • 1 2/3 wholewheat flour.

* In a deep bowl soak dates,molasses,baking soda,ginger and cinnamon in the boiling water.

*Beat butter,oil and sugar till creamy.

*Add  eggs one at a time at a time then vanilla.

*Add flour and baking powder.

*Add walnuts and date mixture and mix with wooden spoon.

  • bake in a medium heated oven for 40-50 minutes or till done from inside.
  • Cool then serve with ice cream and sauce on top.

 

Butterscotch sauce:

1/2 cup brown sugar.

1 tablespoon butter.

1 pack cream

2 tablespoons maple syrup.

Mix all ingredients together and heat till heat till sugar dissolves then simmer for 2 minutes.

keep warm .
