Today’s lunch was eggplant maqloubeh but with a twist.
Saw this method of arranging maqloubeh on Instagram, an easy nice way specially if you have guests.
You simply arrange eggplant slices around and in bottom of pan, cook rice in broth halfway then arrange meat and rice inside eggplants.After that add a bit of broth and keep pan on very low heat till all done together.

Today I decided to try an interesting recipe I saw on Tastemade, the new unusual ingredient is coffee ! guess it did give a special flavor cause end result was really delicious.

Had these three ripened bananas in my fruit basket that said please use me 😀😀
Best thing to do was this recipe I always pops out on Facebook, easy energy balls that serves great as snack or breakfast even.
Just mash your bananas, add oatmeal, crushed biscuits, honey and peanut butter (optional), pinch of cinnamon then mix well and form into balls.
I drizzled chocolate on top as well, really yummy 😋

Hosted my dear cousin for lunch today, as I always say when you cook with love for special people everything will taste amazing.
Made fresh green stuffed vine leaves and courgettes, fava beans fatteh, rocca and cucumber yogurt salads.
New dish was the squid ink pasta I got as a present from Maysas Pasta yesterday
though it’s usually done with fish or shrimps but unfortunately I didn’t have the time to buy some so I made it with garlic, pesto, sun dried tomatoes and lemon zest.So yummy and fresh.
