French Pizza.

Hello everybody.

Lunch today was steak with mushroom sauce and mashed potatoes, though potatoes weren’t successful cause I cut them to cubes then boiled them till done ( I usually keep it as is)  so mash was runny  didn’t like it at all, never again.Thank God steaks were excellent.

On the side I made my famous French Pizza, always a favorite side dish at any meal or occasion,very simple and easy.
Chopped peppers, mushroom, olives with some cheese, mayonnaise, salt and pepper mixed then topped over sliced French baguettes.

Soft Pretzels.

Hello everybody.

Stayed home today,a relief after busy days and a chance to put away heavy clothes and boots, hoping that no more cold rainy days are coming.

Since I have leftovers for lunch from yesterday which was fresh new baby string beans in olive oil and I had time before lunch I tried this recipe, been searching for the most suitable and light one for a while and did this with slight changes.

I also made a simple cake since the oven is on and hot,been craving it since I made it for my brother’s colleagues last week.

Ingredients and method :
* 1 1/4 cups warm water.
* 2 tablespoons instant yeast.
* 1 tablespoon sugar
* 5 cups flour.
* 1 tsp salt.
* 1 tablespoon butter.
* 1 tablespoon vegetable oil.
* 1/2 cup baking soda.
* 4 cups boiled water.
* 1 egg yolk.
* some kosher or coarse salt.
* some melted butter.

* mix water, yeast, sugar till bubbly.
* mix flour, salt, butter and oil.
* add water yeast mixture and knead well.
* leave to rise for 40-50 minutes.
* make long ropes from the dough, this quantity makes 10-12.
* shape them into Pretzels.
* mix soda with hot water then dip each pretzel into it for few seconds.
* line them in a floured pan.
* brush with egg yolk then sprinkle with salt.
* leave to rise again then bake in a medium heated oven for 10-15 minutes.
* brush with a bit of butter to keep them shining then roast till golden.

Turned out amazingly delicious, kids loved them.

Hawaiian Blessing.

Hello everybody.

Picnicking today, beautiful weather, company and place.

Went with my cousins to a farm near Amman, each one brought something, my share was a dessert so I made my specialty Hawaiian Blessing.

This dish is always a favorite and gone in minutes cause it’s not too sweet and full of fruits plus refreshing in hot weather.

Carrot Cake Puffs.

Hello everybody.

Long busy Saturday, too much errands and things to do. End of the day will be a dinner at our friend’s house.

As usual I always make a carrot cake cause it’s her favorite, this time made them in a different way,puffs or soft cookies filled with cream cheese frosting in between. Very easy and cute better than a big cake.

Ingredients and method :
* 3/4 cup raisins.
* 100 g butter.
* 1/4 cup brown sugar.
* 1/3 cup sugar.
* 1 egg.
* 1 tsp vanilla.
* 1 tsp baking powder.
* 1 cup grated carrotts.
* 1 tsp cinnamon.
* 1/4 tsp ginger.
* sprinkle of nutmeg.
* 1/2 cup crushed walnuts.
* 1 1/4 cups flour.

Cream cheese filling :
* 1 pack cream cheese.
* 1 tablespoon butter.
* 1/4 cup caster sugar.

* Beat butter and sugar well till creamy then add all other ingredients ending with flour.

* batter will be a bit firm,take a spoonful and line them on wax paper.
* bake in a medium heated oven for 10-15 minutes.
* cool then combine each two with cream cheese filling in between.

Basil Cherry Tomatoes Mazorella Steaks.

Hello everybody.

Last minute decision of what to cook for lunch came out after lots of ideas and guesses, typical Friday.

Well finally I took out some steaks since I have all ingredients of the dish, Rita’s recipe, simple sautéed thin steaks topped with fresh basil, cherry tomatoes and a slice of mazorella. Extremely delicious, all gone in minutes.
I made mashed potatoes, sweet creamy corn, gravy with mushrooms and a bowl of Ceazar salad.

Date Rolls.

Hello everybody.

It’s been such a long time since I did these, maybe in Eid Al-Adha meaning seven months now.

  Date Rolls are such a favorable kind of cookies, they have a nice aroma, taste and texture that everyone love, made a small batch for my dear sis to take with her back home next week and hopefully I’ll have time to make her some rock cookies also.

No Bake Chocolate Cookies.

Hello everybody.

On the occasions of my youngest son getting his driver’s license this morning I made him one of his favorite recipes,one I did long time ago when I started my blog,no bake chocolate cookies, but this time with less chocolate and honey smacks .

Lunch was courgettes in cooked yogurt and rice and some hummus ,good choice in this cold weather.

Hello again.

Invited to a gathering at my cousin’s house in my  hometown Huwwara-Irbid,each one bringing something so I made this old recipe I had.

Gathering was full of many different dishes all very yummy as expected.

Big Big Mloukhieh.

Hello everybody.
First of all this morning I cooked for my brother’s colleagues at work, they wanted mloukhieh both coarse and fine with chicken.
