Ka3ek and Cheese.

Hello everybody.

Two lovely friends came to visit this morning and since I woke up so early today I decided to bake some ka3ek.

A small simple breakfast with minted tea,I always feel good about myself when I bake breads don’t know why, guess it’s the smell maybe.

Dough ingredients :
* 6 and extra half cups flour.
* 2 tablespoons oil.
* 1 tablespoon instant yeast.
* 2 tablespoons sugar.
* 2 1/2 cups lukewarm water.
* 2 teaspoons salt.
* 1/2 cup milk.
* some sesame seeds.
* some semolina to sprinkle under the Ka3ek.

* Mix water,yeast and sugar and leave ten minutes till bubbles are formed.
* Mix flour,salt and oil then add yeast and water and knead well.
* leave in a warm place till it rises ( 1-2 hours)
* knead again then form it to loaf shape or place a metal ring inside to make a circle in the middle.
* Brush with milk and sprinkle sesame seeds in top.
* leave to rise again then bake in a well heated oven for 15 minutes.

Jamie Oliver’s Ginger Lemonade.

Hello again.

Made this refreshing juice this afternoon, a recipe I saw in one of Jamie Oliver’s tv shows, very cooling in this hot weather.

You simply mix together son=me grated fresh ginger,lemon juice and slices,mints and brown sugar then add some hot water to dissolve sugar then before serving add cold sparkling water.

Very nice one try it.

Rocca Mushroom Pomegranate Salad.

Hello everybody.

Pomegranates are in season now, healthy nutritious fruit that most people love.

These days one can find many recipes using it not like old times.

Today I made rocca salad added too many things walnuts,cranberries,mushroom, pomegranate and simple dressing.

Hello everybody.

Big fully loaded burgers are our typical Friday lunch whenever we’re all home.

Today with eggs, cheese and all toppings,tried these tiny breaded fried potato balls also, nice looking for a change.

A must with these burgers Mirinda,cold with lots of ice.

Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

Toffee Cake with Butterscotch Sauce.

Hello everybody

No intention at all to do a cake or dessert cause we’re all trying to cut down sugars , at least try, but my mother in-law gave these dates she didn’t like cause they ‘re too sweet so I thought i’d do this cake with them and send her most of it.

 

Recipe is easy so is the cake specially if you eat it with ice cream and sauce.

Ingredients and method:

  • 3 tablespoons butter.
  • 1/2 cup vegetable oil.
  • 2/4 cup brown sugar.
  • 1 1/2 cups pitted dates.
  • 1 tsp baking soda.
  • 1 tablespoon molasses.
  • 2/3 cup boiling water.
  • 3 eggs.
  • 1 tsp vanilla.
  • 1/2 cup chopped walnuts.
  • 2 tsp baking powder.
  • 1 tsp ginger.
  • 1 tsp cinnamon.
  • 1 2/3 wholewheat flour.

* In a deep bowl soak dates,molasses,baking soda,ginger and cinnamon in the boiling water.

*Beat butter,oil and sugar till creamy.

*Add  eggs one at a time at a time then vanilla.

*Add flour and baking powder.

*Add walnuts and date mixture and mix with wooden spoon.

  • bake in a medium heated oven for 40-50 minutes or till done from inside.
  • Cool then serve with ice cream and sauce on top.

 

Butterscotch sauce:

1/2 cup brown sugar.

1 tablespoon butter.

1 pack cream

2 tablespoons maple syrup.

Mix all ingredients together and heat till heat till sugar dissolves then simmer for 2 minutes.

keep warm .

Lemon Velvet Cake.

Morning everybody.

Did this moist fresh cake this morning for my mother in-law’s friend .

here’s the recipe:

# 3 eggs.
# 11/2 cups suger.
# 1/3 cup margarine or butter.
# 2/3 cup vegetable oil.
# zest and juice of one big lemon.
# 1 tsp lemon essence (optional)
# 1/2 cup yogurt.
# 1/2 cup milk.
# 1 tsp vanilla.
#3 tsp baking powder.
# 3 cups flour.

Frosting :
# 3/4 cup butter.
# 2 cups icing sugar.
# some lemon zest.
# juice of half a lemon.
# some milk.

Frosting this time was different

  • 1 pack cream cheese.
  • 2 packs dream whip.
  • zest and juice of one lemon.

Rice In Puff Pastry (اوزي صرر)

Hello everybody.

Hope all is well in this dusty weather specially people with asthma or respiratory problem.

 

Lunch today was spiced rice with meat,peas and carrots all bundled in puff pastry squares and baked till crunchy and golden.You can do this with phyllo pastry but of course you must add butter between layers that’s why I prefer puff pastry,all buttered by itself ,I only add some flour in the pan so that buns won’t stick.

Serve with simple salad or yogurt.

Ingredients and method:
* 1 pack puff pastry.
* 1 cup cooked minced, or cubed meat or cooked boneless chicken. As you desire.
* some toasted almonds or pine nuts.
* 1 cup peas and carrots, some people use only peas. So go with whatever your family like.
* salt, pepper, all spice, cinnamon, cardamom, nutmeg,, all according to taste.
* 1 cup rice.

* saute peas and carrots with a bit of oil or butter.
* wash rice and add all spices to it.
* add rice to vegetables and mix.
* add water to cover over rice by an inch and leave on high heat till water absorbed then lower heat to minimum till rice is done.
* add the meat and mix.
* leave to cool cause if stuffed while very hot pastries will have holes.
* spread puff pastry over floured tray.
* spread each pastry to bigger squares with a roller.
* put the pastry in a deep dish.
* add some almonds and 2 big spoonfuls of rice mixture then close it to form a ball.
* bake in a medium heated oven for 30-40 minutes.
* roast the surface till golden.

Fried Courgette Flowers.

Hello everybody.

Lunch today was mloukhieh from yesterday, fresh from the farm and so yummy with garlic and lemons.

Alongside with it I made these cute fresh courgette flowers that u couldn’t resist not bring cause they were so intact, a waste to throw them away.

Stuffed with cheddar and Parmesan cheese, garlic and oregano then dipped in an egg,milk, flour batter with a pinch of salt and baking powder.

So crunchy and tasty, I even took some for the guy working at grocery store cause he can’t believe or imagine that these can be cooked.

طريقه وردات الكوسا:

تحشى الوردات بمزيج من الاجبان الصفراء مع ثوم واعشاب.

يحمى زيت القلي جيدا ثم تغمس كل قطعه بمزيج متجانس عباره عن كوب طحين, 2 بيض, , نصف ملعقه ملح ونصف باكينغ باودر ويضاف حليب بالتدريج حتى يصبح القوام سلس .

ثقلى بالزيت الغزير لمده 5 دقائق.

Pickled Eggplants( مخلل باذنجان)

Hello everybody.

Saw those lovely small eggplants yesterday just perfect for pickling for now and making makdous later on.

I combined two recipes together, so stuffing was a mix of tomatoes, garlic and chili peppers.

Ingredients and method :
# small eggplants.
# finely chopped tomatoes.
# minced garlic.
# hot green and red peppers.
# lemon slices and juice.
# salt, chili flakes.
Water and salt brine.

# boil eggplants till a bit tender.
# mince garlic with chili peppers then mix all with tomatoes, lemon juice and 1 tablespoon salt.
# stuff eggplants as much as you can.
# arrange them in a clean glass jar then add water salt brine.
# leave to be done for 1 week.
