Hello everybody…lovely weather today..I’m sure most of you will think ..no cooking today..good day to eat out …good idea for sure.
Well…my day started with coffee with oatmeal raisin cookies..out in the garden, (recipe below)
As for lunch..we’re going to my mom’s..she’s cooking Ablama or (شيخ المحشي ) as we call it in Irbid. .it’s ,for people who don’t know it, squash filled with minced meat and pine nuts..oven or deep fried then cooked in thickened boiled yoghurt and served with rice.
It’s a typical wintery dish, some people cook it in (jameed) instead of yoghurt..and some add garlic and coriander fried in ghee or butter just before serving.

Recipe for oatmeal raisin cookies:
Ingredients:
1 egg beaten.
1 tsp vanilla.
3/4 cup butter.
1/2 cup of brown sugar or regular sugar or molasses as preffered.
1 small spoon of…cinnamon. aniseed.
1/4 small tsp ginger..cardamom. cloves.
1/2 cup raisins.
1/2 cup of nuts (almonds.walnuts.) if desired
1tsp baking powder.
Pinch of salt.
1 cup oatmeal.
11/2 to 2 cups flour.
Mix all ingredients but leave flour till the end..add flour gradually untill dough is stiff enough to hold but not very hard…mostly you’ll need 1 1/2 cups not 2.
With the help if two spoons scoop an amount of the dough into balls of medium size.place on a non greased tray and bake for 10-13 min in a well heated oven…or until sides are golden..don’t over bake or they’ll be hard.
Wait till cookies cool then store in a well closed jar or container….Enjoy♡♥
