Authentic Italian Potato Pizza.

Hello everybody.

Couldn’t resist and wait to make this pizza, search for the original recipe was very easy and anyways my cousin living in Rome posted it last night and told me how to make it.

Some recipes add ranch sauce or sour cream but guess this one is more basic and pure Italian.

Well taste and aroma are miraculous, rosemary gives it a real nice twist.

Ingredients and method :
#simple pizza dough (the 10 minutes miracle one)
# 2 large potatoes cut to very thin slices ( don’t peel them)
# fresh or dry rosemary.
# coarse kosher salt.
# crushed pepper.
# olive oil.
# mozzarella cheese.

# coat potatoes with some olive oil,cover and microwave for 2 minutes so as to tenderize.
# spread pizza dough then sprinkle with a bit of the cheese.
# arrange potatoes all over then sprinkle with salt and pepper.
# bake in a medium heated oven for 30 minutes or till bottom and crust are golden.
# add cheese on top and roast till it melts.

Veal Broccoli Stir Fry.

Hello everybody.

Nice relaxing Friday with only me and my eldest son home for lunch so lunch was a small portion for two and it was superb.

Decided to make this easy quick recipe I saw on Pinterest couple of days ago,with a small addition from me,roasted sesame seeds, really yummy.

  • Ingredients and method :
    # 4 pieces of veal steaks cut to squares.
    #1 tablespoon flour.
    # 1 green onion.
    # broccoli florettes.
    # sweet and sour sauce:
    * 2 tablespoons soy sauce.
    * 1 tablespoon honey.
    * 1 tablespoon vinegar
    * 1 tablespoon corn starch.
    * 1 tsp chili powder.
    * 1 tsp fresh ginger.
    * 3/4 cup water.

#some sesame seeds.

# coat veal with flour very well then stir fry in some hot sesame or vegetable oil.
# when golden and crisp  add chopped onion and broccoli and stir well till all crispy.
# add the sauce which is a mix of all ingredients.
#leave to simmer for 5 min then sprinkle sesame seeds on top.

Serve with steamed rice or noodles.

Homemade Yogurt.

Hello everybody.

Back to normal routine now that Eid vacation is over.

Cleaning and arranging back Eid stuff till next year Inshallah.

Milk man passed by with fresh milk this morning,took some and made caramel muhalabieh for my uncle,an extra kilo also to make some yogurt.

It’s a very easy way though it’ll be much more thick and creamy if I used goat milk but cow is fine also.

You simply boil milk very well then leave to cool till warm (28-30 degrees) I actually could tell when it’s tolerable for me to dip my finger it ( clean hands of course).  Then to each kilo of milk you add one tablespoonful of ready yogurt, stir well then cover and wrap very good in a blanket,I use this special handmade wrap for rice.

Leave to ferment for one night or several hours then cool in fridge.

That’s it, will show you results tomorrow.

Happy Eid everybody.

Today Muslims all over the world celebrate Eid Al-Adha.

Wishing all of you in these blessed days peace, health and happiness.

Guests visiting me will taste the new Earl Grey cookies,cardamom cookies and my famous date rolls plus chocolate and candy.

A small surprise this time are the yummy liquorice gummies, a treat nobody hates for sure.

Chicken With Eggplants.

Adha Mubarak everyone.

I’m pretty sure most people are fasting today so it’s a late lunch or Iftar.

We’re all gathered so it’s a kind of big dinner.

Menu was a new chicken recipe I took from our dear family friend Osama,  really easy and yummy,plus pesto pasta, potatoes with cream,red or rice with tomato paste.

Ingredients and method of chicken :
# whole chicken with skin on.
# eggplants.
# carrots.
#red peppers.
#1 clove garlic.
# juice of a lemon.
# salt, pepper, cumin, all spice, tandoori spices.
# olive oil.

#Cut all veggies to big shunks.
# Season chicken and veggies with all spices,lemon and olive oil.
# In a deep oven pan arrange chicken and veggies around it.
# heat the oven from upper section then roast chicken and veggies till golden or brownish.(الشوايه من فوق)
# cover all with foil paper then leave in oven for one hour or more till done and sauce is thick.

Serve with any kind of rice you prefer.

Chicken Liver.

Hello everybody.

Leftovers aren’t enough today so I had to do something as a backup. Option was chicken Ceazar salad but it turns out I don’t have any chicken left so a plain one was done.

Found a small plate if chicken liver in my freezer,healthy easy option as well though as my hubby said they turned out a bit dry, always in my case when I make them unlike when he cook them don’t know why.

My sweet stuffed pickled peppers are done, so yummy!

Thank God all leftovers and today’s dishes are gone except a bit of salad that I kept for the boys as a night snack.

 

Chicken Liver:

* 1/2 kg chicken liver.

* 2 sliced onions.

* chili green pepper.

* olive oil,salt,pepper and pomegranate sauce.

* saute onions and peppers in heated oil,then add livers and stir.

* add salt and pepper then leave to simmer on low heat till dine ( 30-40 minutes)

* when done turn off heat and add one big spoon pomegranate sauce and stir all together.

Ka3ek and Cheese.

Hello everybody.

Two lovely friends came to visit this morning and since I woke up so early today I decided to bake some ka3ek.

A small simple breakfast with minted tea,I always feel good about myself when I bake breads don’t know why, guess it’s the smell maybe.

Dough ingredients :
* 6 and extra half cups flour.
* 2 tablespoons oil.
* 1 tablespoon instant yeast.
* 2 tablespoons sugar.
* 2 1/2 cups lukewarm water.
* 2 teaspoons salt.
* 1/2 cup milk.
* some sesame seeds.
* some semolina to sprinkle under the Ka3ek.

* Mix water,yeast and sugar and leave ten minutes till bubbles are formed.
* Mix flour,salt and oil then add yeast and water and knead well.
* leave in a warm place till it rises ( 1-2 hours)
* knead again then form it to loaf shape or place a metal ring inside to make a circle in the middle.
* Brush with milk and sprinkle sesame seeds in top.
* leave to rise again then bake in a well heated oven for 15 minutes.

Hello everybody.

Pomegranates are in season now, healthy nutritious fruit that most people love.

These days one can find many recipes using it not like old times.

Today I made rocca salad added too many things walnuts,cranberries,mushroom, pomegranate and simple dressing.
