Naked Red Velvet Cake.

Hello everybody.

Went out this morning to celebrate a precious friend’s birthday, lovely people deserves beautiful things that’s why I made a colorful red velvet caked topped with strawberries and red currents.

Recipe is the same one I usually do but this time in three layers and naked style frosting, meaning only a bit of icing around the cake. It was really amazing, light and fluffy.

Here are ingredients and method of the cake:

* 2 large eggs.

* 1 1/4 cups sugar.

* 1/2 cup oil.

*1/2 cup butter.

* 2/3  cup yogurt.

* 1/3 cup milk.

* 1 tablespoon cocoa powder.

* 1 tablespoon vinegar.

* 1 teaspoon baking soda.

* 1 teaspoon baking powder.

* 1 tsp vanilla.

* 2 teaspoons red food coloring.

* 2 1/2 cups flour.

Icing:

* 2 packs cream cheese.

* 1/2 cup whipping fresh cream.

* 2 cups powdered sugar .

or :

*1 pack cream cheese.

* 2 packs dream whip.

* 1/2 cup powdered sugar.

* some red colored food glitter for decoration.

* beat eggs,vanilla,sugar  till frothy and creamy.

* add rest of ingredients consequently.

* bake cake in two round baking pans (same size)

* Beat frosting ingredients well together and leave to cool in fridge.

* when cake is done and cooled assemble the two layers with frosting in between and all over.

* leave in fridge to settle for couple of hours.

* decorate top with sprinkles in any shape you like.

Full Day!

Hello everybody.

Long full day, sometimes all work comes altogether like today.

First order was two lasagnas and cookies plus one for us.

Then I made a beautiful simple chocolate cake and chocolate chip cookies for my friend’s mom.

Then a sudden quick order came up, falafel rolls and shawerma for a young lady’s birthday.

All in all it was delicious and elegant.

Turkish Beans Salad.

Hello everybody.

Busy Saturday as usual but warm Summer breeze lightens up the day for me.

Lunch today was fresh green fava beans with olive oil,garlic and coriander along with rich ewe yogurt all bought from Jerash yesterday.

I also made this new salad recipe I saw in the newspaper, full of nutritious beans like corn, hummus and black beans tossed with lettuce,parsley and green onions. Dressing is simple vinegrett but I added some pomegranate sauce.

I also dipped some hard labaneh balls in olive oil, fresh thyme and rosemary leaves,again fresh from Jerash.

Veggie Stuffed Steaks.

Happy International Woman’s Day lovely ladies around the world.

I’m sure all women wherever they are and whatever they do deserve to honored and thanked everyday cause each one is important and plays a significant role no matter how small.

On this occasion I cooked this elegant lunch today, steaks stuffed with thinly stripes of veggies ( carrots, onions, peppers and green onions) with sauce and mashed potatoes.

* season steaks with salt, pepper and all spice then add the vegetables, roll and close them with toothpicks.

* add a bit of soy sauce on top of each roll
* heat some oil and butter well, add rolls till golden on all sides, lower heat and leave to cook slowly for 15-20 minutes.

* remove from pan and leave to rest
* in the same oil add remaining veggies, saute till golden then add one tablespoon of flour and 1 1/2 cups water.

*stir very well till creamy then mix all in blender to get a thick creamy sauce.

Smoked Salmon Bagels.

Hello everybody.

Thought I’d do some fresh bagels today,still have a pack of smoked salmon so a well combined rich bagel would be a lovely lunch for sure.

Did the same recipe as before, though today dough was so sticky so I added some more flour for easier handling.

Filled some with salmon, avocado, cream cheese, dill and capers and others with cheese,tomatoes and rocca.

Baking Cookies Again.

Cookies order today, it’s been a while since I baked so many of them specially the crinkles.

Made chocolate crinkles but jumbo size, rock cookies and coconut orange ones.

Chocolate Strawberry Cake.

Hello everybody.

I can proudly say that this cake is almost perfect as the original photo, unfortunately it’s not always the case when you try a new recipe,results can be awful sometimes.

Cake is simple basic chocolate cake baked in three pans while frosting is somehow new or kind of my own creation of a not too sweet or heavy frosting

I mixed :
* 2 packs whipped cream ( Dream Whip)
* 4 Kiri pieces.
* 1/2 cup fresh cream.
* 1 tablespoon butter.
* 1 cup chopped fresh strawberries.
* 1/4 cup strawberry sauce.

Taste and texture are perfect, topped cake with ganache and fresh strawberries.

Delicious Spring Dairies .

Hello everybody.

Nice quick trip up North to Irbid, beautiful green hills and scenery.

As always we stopped by dairy products store on our way back, a speciality of the city,Irbid is known of its best yogurt ever specially these days.

Lunch was what we got, fresh ewe yogurt, labaneh and hot bread. Personally I consider this the best meal ever.

Small Lovely Gathering.

Hello everybody.

Made some lovely finger food for a small gathering at a friend’s house.

Loved the idea of the menu, small shawerma, mini burgers, mini kibbeh and a cheese platter.
