In order to keep everyone happy I cooked a large amount of jameed and ewe yogurt then made half as Mansaf for my youngest son and courgettes in the other half.

Nice relaxing Friday with only me and my eldest son home for lunch so lunch was a small portion for two and it was superb.
Decided to make this easy quick recipe I saw on Pinterest couple of days ago,with a small addition from me,roasted sesame seeds, really yummy.
#some sesame seeds.
# coat veal with flour very well then stir fry in some hot sesame or vegetable oil.
# when golden and crisp add chopped onion and broccoli and stir well till all crispy.
# add the sauce which is a mix of all ingredients.
#leave to simmer for 5 min then sprinkle sesame seeds on top.
Serve with steamed rice or noodles.

Waiting for my sister in-law and her son for lunch, upon his request his grandma made freekeh and I made kofta with tomatoes peppers and potatoes.
Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.
* form the kofta to fingers shape then cook on low heat till golden and done.
* grill veggies till brownish on both sides, some people fry them but dish will be too oily.
* arrange veggies in rows then add kofta in between. * dissolve tomato paste and maggi in water then add on pan.
* add salt and pepper.
* cook on low heat for 1 hour.
* serve with white rice.

Another batch of veggies were brought from the farm yesterday, so had to do something with these eggplants before they rot.
A traditional Arabic dish Maqloubeh is always a good choice but today I added two things that I don’t use usually, onions and sun-dried tomatoes.
Well thought I’d combine a recipe I saw on Fatafeat cooking channel in Chef Daad Abu Jaber show and an advice from my lovely aunt .Result was extremely delicious ,they really did add to the taste .

Hope all is well in this dusty weather specially people with asthma or respiratory problem.
Lunch today was spiced rice with meat,peas and carrots all bundled in puff pastry squares and baked till crunchy and golden.You can do this with phyllo pastry but of course you must add butter between layers that’s why I prefer puff pastry,all buttered by itself ,I only add some flour in the pan so that buns won’t stick.
Serve with simple salad or yogurt.
Ingredients and method:
* 1 pack puff pastry.
* 1 cup cooked minced, or cubed meat or cooked boneless chicken. As you desire.
* some toasted almonds or pine nuts.
* 1 cup peas and carrots, some people use only peas. So go with whatever your family like.
* salt, pepper, all spice, cinnamon, cardamom, nutmeg,, all according to taste.
* 1 cup rice.
* saute peas and carrots with a bit of oil or butter.
* wash rice and add all spices to it.
* add rice to vegetables and mix.
* add water to cover over rice by an inch and leave on high heat till water absorbed then lower heat to minimum till rice is done.
* add the meat and mix.
* leave to cool cause if stuffed while very hot pastries will have holes.
* spread puff pastry over floured tray.
* spread each pastry to bigger squares with a roller.
* put the pastry in a deep dish.
* add some almonds and 2 big spoonfuls of rice mixture then close it to form a ball.
* bake in a medium heated oven for 30-40 minutes.
* roast the surface till golden.

Only me and my son are home for lunch today so it’ll be a favorite of his choice ‘Meatloaf’
Easiest quickest thing to do, added some spinach,breadcrumbs,one egg,mustard,ketchup,salt,pepper and a pinch of nutmeg all to 1/2 a kilo of minced veal.Mixed all well then shaped them into a loaf and in the oven for 30 minutes that’s it.
Alongside I baked some wedged potatoes with skin, added salt,pepper,chili and some breadcrumbs also.All done and eaten with an hour!

Today is meat turn,I always try to make variations during the week between poultry, meat, veggies and no protein day. Unfortunately we’re not a fish loving family so I rarely cook it if you noticed.
Lunch today was steak sandwiches, homemade chips crunchy baked eggplants and sun-dried tomatoes, grilled halloum salad with roasted pine nuts.
Trick in homemade chips to be a lot like ready ones is soaking potato in iced cold water for 30 minutes then drying it completely before frying in very hot oil.
Crunchy baked eggplants are simply sliced, soaked in egg and milk wash then dipped in breadcrumbs and baked in some olive oil, that’s it.
Lovely big salad with sun-dried tomatoes,grilled halloum and pine nuts over a bed of greens and avocados with simple vinaigrette.

When there’s a will there’s a way, never ever did I make kibbeh at home, always said I don’t know how and never tried,but upon my husband’s frequent request for kibbeh in a pan specifically which is the easiest kind I thought why not try .So he ordered the shell which is burgul and meat mixed together in specific proportions from the butcher and today was my first trial.
First of all I cooked the minced meat to make the filling then added to it chopped onions,salt, pepper, all spice, some walnuts, pine nuts and pomegranate to give it a sour taste.
Then I made three kinds of the kibbeh ,one spread in a pan, regular round ones for frying and tried these cute mini ones in the cupcake tray.
All was super yummy thank God, good job for a first timer I guess.
Did some tzasiki with it also.

Lunch today was an old fashion heart warming meal,green beans with meat and tomato sauce with rice on the side, good choice specially that it’s been a while since I cooked it.
You will need:
1/2 kg of lamb meat cut to cubes or big pieces with bones as you prefer.
1kg cut, washed green beans.
2 or 3 large ripe tomatoes.
2 cloves of garlic.
1 small onion.
2 big spoons tomato paste.
5 cups of water.
Salt.pepper. mixed spice.paprika.
1 big spoon olive oil.
In a pressure cooker or regular pan..heat the oil then add meat pieces, salt.pepper.spices. paprika, stirr well till meat is brownish and crispy.
Add the beans and keep stirring till it softens.
In a blender mix the onion, garlic, peeled tomatoes, tomato paste and water then pour it over the beans and meat..
You can add one more cup of water if the juice is too thick.then leave to boil for 30-40 minutes on low heat if in pressure cooker or for hour and half if in regular pan.. or till meat is well done.
Of course this dish is served with rice..today I made rice with small noodles (شعيريه ) I toasted it with vegetable oil and salt till golden.added the rice, mix them well together then added water till above rice by one inch.
When all water is absorbed lower the heat ,, I usually place a tin under the pan to keep heat very low and rice won’t burn, then leave till rice is done.
