Energy Bites!

Hello everybody.

Did a massive fridge and freezer cleaning today and took out many things stored since a long time so as to do something useful or throw them away.

Result was a mix dried fruits,nuts, crushed biscuits,blueberries, oats all bound together with honey and molasses with a bit of cinnamon, cardamom and ginger. They’ll make a super snack during Ramadan specially at suhour time cause they’re full of nutrients and fiber which will help during fasting next day.

Another outcome was a plate of chickpeas with tahini sauce ( مسبحه) decorated with parsley and nuts.

Lunch was Shakshouka, no cooking till beginning of Ramadan, that’s my decision so far.

Kebab Sandwiches and Seperable Cheese Garlic Bread.

Hello everybody.

Another busy day though it was planned to be a relaxing Friday.

Well thank God that I have a pack of kebab meat that were not done last night so they were a rescue today at lunch,grilled them with some onions and summaq, did some yogurt mayonnaise dip with it.

On the side I made two loaves of cheesy garlic bread one for lunch and the other for tomorrow’s picnic.

Fresh Stuffed Courgettes.

Hello everybody.

My hubby started planting some veggies in the farm in a small scale for household use.

First crop started yesterday, a big box of fresh courgettes, separated big ones for sautéed use, mediums stuffed today and cooked in tomato sauce and small ones to stuff with meat for ablama, I’ll prepare  and freeze them for Ramadan, a rescue in a busy or tiresome day.

Sharing Lunch ( Rice with veggies, leg of lamb,eggplant with kibbeh).

Hello everybody.

Today we had a lunch gathering at my mother in-law’s friend house,each one cooked something and we took the food to her house cause she’s in mourning.

Well I did my famous rice, veggies and chicken with curry.

My mother in-law did a roasted leg of lamb with potatoes and steamed veggies.

My sister in-law did the Iraqi dish eggplant with kibbeh.

Lovely close warm lunch, love you auntie Haifa.

Cherry Cake and Pasta with White Sauce.

Hello everybody.

Unfortunately not a bite from yesterday is left so I had to cook something today specially that my son has finals and wanted to eat quickly and go out to study.

So after searching for what to do I grabbed a pack of pasta and quickly made white sauce and some meat tomato sauce then fixed a big pan of bachemel pasta for today and tomorrow as well.

When done I made a lovely cherry cake upon my husband’s request, it’s been a while since I baked something, love this one it’s amazing with tea and coffee.

Cheese Stuffed Steaks.

Hello everybody.

My husband bought some meat yesterday preparing for Ramadan coming in couple of weeks so as to avoid crowded roads and shops as usual,anyway I kept some fresh steaks to do today.

Well as I always say my number one application to look for new recipes or ideas is Pinterest, just love this it !

Found this super easy recipe, you simply stuff then roll steaks and grill them in some oil and butter. Stuffing was minced garlic, chopped onions and parsley, some pesto sauce and a hard sharp cheese with spices and salt of course.

Happens to be that my friend did the same but stuffing was shredded veggies, looks yummy as well.

Made mashed potatoes and a salad on the side plus a sauce made of balsamic vinegar,steak sauce,a bit of Worcestershire sauce and one teaspoon butter all boiled till it thickens

Chicken Tikka Masala.

Hello everybody.

Love this dish, full of spices and different from everyday tastes, prepared all ingredients early morning and quickly cooked it when my tiny guest left home.

Chicken tikka masala and Indian rice was our lunch today.

Homemade Vimto.

Hello everybody.

Went back home in a hurry, made some burgers, my son in order to give it a twist topped it with a sunny side up egg, full satisfying sandwich.

Found some old berries and strawberries so I did them same way as raseberry lemonade and result was a really fresh tasty Vimto imitation drink, I know many people consider Vimto a must in Ramadan well this juice is much healthier of course.

Bagels.

Hello everybody.

Housework and cleaning up today, too much dust in this country.

When done I was looking for something to do for a quick breakfast cause my son wants something ready to go or easy to fix each morning before going to the university.

Crossed over this bagels’ recipe and thought I’d give it a try,resembles a lot the soft pretzels one, result was not bad I guess waiting for the boys to judge.

Lunch was leftover lasagna with some chili potatoes with garlic and coriander.

I also made dried fruit cake,light and not sweet to have with Nescafe in the morning.

Ingredients and method of bagels :
# 3 1/2 cups flour.
# 1 1/3 cups warm water.
# 1 tsp salt.
# 2 tsp sugar.
#1 1/2 tsp instant yeast.
# boiled water.

# mix dry ingredients together well then add warm water and incorporate well together.
# knead for 5-10 minutes till smooth.
# cover and let rise for 1 hour.
# when doubled in size knead once more then form 6-8 balls.
# with a floured finger make a hole in the middle.
# leave to rise again then broil in boiling water for 1 minute on each side then remove to dry.
# line up on a floured oven pan.
# brush surface with some egg whites then sprinkle with sesame seeds or poppy seeds or salt.
# bake bagels in a medium heated oven for 20-30 minutes.

Guess they’re fine as a first trial.

Lasagna and Pan Garlic Bread.

Hello everybody.

Another busy Saturday, I think I should change my schedule sometimes I really wish to have a real lazy weekend, always failing to do so.

Well lunch today was lasagna with mushrooms and spinach inside,a bowl of Ceazar salad and I did the same pizza procedure as yesterday but with garlic powder, oregano, salt and a drizzle of olive oil on top, really yummy and crispy.

Guess this pan pizza will be on my easy to do stuff list.
