Pumpkin Cupcakes.

Hello everybody.

First day in Winter timing and it coincides it’s cold and rainy today, plus It’s Halloween this weekend. I made these cupcakes for my friend’s son going to a sharing party today.

I love pumpkin and all its recipes,gives you a feeling of warmth specially in cold weather, I think I’ll make the remaining pumpkin a soup or stew tomorrow !

Lunch was out in Taj Mall at Hanin Cafe today,really yummy go try it, knafeh cheescake is a must try believe me.

Ingredients and method:

* 3 eggs.

* 1 cup sugar.

* 1 cup pumpkin puree ( boiled till done then mashed)

* 1/2 cup oil.

* 2 tablespoons butter.

* 1 tsp cinnamon,pinch of nutmeg and pumpkin pie spice if available.

* 1 tsp vanilla.

* 2 tsp baking powder and pinch of salt.

* 2 cup flour.

 

* Icing is cream cheese with whipping cream and orange food coloring.

 

* Mix all ingredients alternatively then fill cupcakes till half and bake till done.

* decorate with icing and sprinkles.

Stuffed Cabbage and New Ma3moul Recipe.

Hello everybody.

Kids cheered when they knew I’m making cabbage today,favorite dish for all in my house,though making it is a long process sometimes specially if all done the same day like this morning, I usually boil and cut them a day ahead and stuff the next day,but yesterday was a full day already,had no strength to do them in the afternoon.

First time trial this time I put one of the cabbages in the freezer last night,upon an advice from my cousin living in Rome,took it out today and it’s true leaves peeled so easily and were ready to stuff no need to boil, but nevertheless I put them for seconds in the hot water to kill any germs ( Rome cabbages are clean and round like a ball not like ours!) ,thank you dear for the tip really helpful.

Since I’m home not going anywhere I did this new ma3moul recipe my aunt posted before Eid,been intending to try it for a while, though I was afraid dough will be too sweet cause one basic ingredient in it is sweetened condensed milk,but result was AWESOME, really easy to handle and very tasty, highly recommended.

Ingredients and method:

* 5 cups flour.

* 400 gm butter.

* 1/4 cup vegetable oil.

* 3/4 can sweetened condensed milk.

* 1/4 cup water.

* dates,walnuts or pistachios for filling .( added cinnamon,icing sugar and rose water to walnuts and cinnamon,anise and cardamon for dates)

* mix all ingredients well till you form a dough.

* start working directly by making small balls and stuffing them, use a mold or decorate them as you wish.

* bake in well heated oven at first then lower the heat when you start till golden.

 

I added anise seeds to the extra dough and sliced it as Biscotti  really yummy also, thanks 3amto for the recipe,love you <3

Beef Sweet and Sour.

Hello everybody.

Typical lazy Friday,started by waking up really late for a change, usual coffee at Rula’s noon time then asking what to eat for lunch, decided to make this dish cause It’s been long time since we ate it plus me and my friends went out to dinner the other night at Ren Chai and ordered the same dish but It wasn’t that good or I didn’t enjoy it well !

Searched for an easy recipe to do,found this at Allrecipes.com,great web by the way!

Ingredients and method:

* meat balls (sauteed ahead till golden)

* sweet peppers chopped to large pieces.

* 1 onion chopped to large pieces also.

* 3-4 pieces pineapples.

* 1 tablespoon brown sugar.

*1 tablespoon starch.

* 2 big spoons ketchup.

* 2 big spoons soy sauce.

* 1 tablespoon vinegar.

* 1 small cup water.

 

* saute peppers and onions in a bit of vegetable oil till tender.

* add the meat balls .

* mix ketchup,soy sauce,sugar,starch,vinegar and water well together.

* add mixture to pan and stir,then add pineapples.

* simmer for 15-20 minutes.

* serve with boiled rice.

 

Really tasty and well flavored I even didn’t add salt or pepper !

How to Pickle Olives (كبيس الزيتون)

Hello everybody.

Headed North to hometown Irbid yesterday for two reasons, buying olives ,since it’s the season to pickle them,from the same guy we buy each year on the road before reaching Jerash and then to go visit my lovely cousin and have lunch with our dear family members.

To tell you the truth I’ve been making olives only recently , used to be my mother in-law’s annual ritual specialty but since two years ago  ,as she says, retired from the mission so I’ve been doing it her way and send her share.

Pickling olives is a very easy process but needs a day work and messes your kitchen a bit specially if you’re making large amounts. First you must pick the kind of olives you like,some people prefer big ones some son’t,I usually buy local kind (نبالي بلدي),then you must press it either manually or in a special machine usually found at the shop or seller.

You can find many ways and methods to pickle olives in books or by experience or in factories, personally I found this method the easiest and always works with me.

Wash olives well,try to remove leaves and stems as much as you can, then soak them in water overnight or two , the next day wash again then mix them with a good amount of sliced lemons,hot peppers and lemon juice. Make the pickling brine which is exactly one big spoon of coarse local salt to each cup of water ( each liter of water needs 4 big spoons of salt), put olives in big glass or plastic jars then fill with salted water to the rim,close tightly and leave till done.

*Note: olives might take a longer period of time to be ready this way (a month maybe) if you want to be ready earlier you must soak it in water and replace it each day for a week then pickle it.

*Note: a tip to make sure your brine is perfect,place a raw egg in it,if it floats to the top then it’s good if it sinks then you need to add more salt.

* Note: usually I remove some of the olives when done, make a new salt solution and add new lemon and peppers, that way it’ll always be fresh and green.

 

Well now back to yesterday’s lunch, it was AMAZING ,elegant table,delicious food,various dishes and most important of all good loving caring company, I’m so lucky to have such kind generous loving cousins in my family.

Dishes were: Mansaf,lasagna,rolled steaks,sauteed veggies,chicken pie and a salad, dessert was chocolate cake,yummy coconut balls (took the recipe and will make it soon) and I made my Almond Orange cake, even coffee and tea tasted great believe me.

No Eggs,No Flour,No Milk Cookies.

Hello everybody.

Gave my second cooking lesson today,really excellent one,we did carrot soup,lettuce mushroom salad,chicken rolls filled with broccoli and cheese then dessert was chocolate mousse.

Went back home with an intention to make these cookies,actually a member in banancooking group asked me if I have no flour,no eggs and no milk recipes cause recently she developed an allergy to all these ingredients, so after some research I found a couple of ones, did the cookies today and hopefully will try bread or loaf tomorrow.

Well cookies tasted really good and crunchy,ingredients are  all healthy so everybody on diet can eat them without guilt even if not allergic.

Ingredients and method:

* 3 ripe bananas.

* 1 cup raisins ( I added some cranberries also)

* 1 tsp vanilla and 1 tsp baking powder.

* 1/2 cup crushed mixed nuts.

* 1/3 cup oil.

* 2 cups oatmeal.

*1/2 tsp cinnamon.

* pinch of salt.

 

* mash bananas then mix all ingredients together.

* use a small spoon and scoop from the batter into a baking tin,then bake for 10-13 minutes .

* leave to cool then store in a closed jar or box.

My First Cooking Lesson:)

Hello everybody.

New teaching experience started today as I gave my first cooking lesson to some lovely ladies, Hope as they said were delighted and liked it.

Lesson was with in co-operation with my cousin and owner of Ribbon Cake, we’ll be sharing  each time by either doing the dessert or main dish. Today she began by doing strawberry cheesecake and I did broad green beans salad and Shepherd Pie,all was excellent and tasty.

As for lunch at home  I cooked Chicken with Pepsi before I left this morning,really yummy !!!

Pasta in White Sauce (معكرونه بالبشاميل).

Hello everybody.

Bright clear sunny morning after heavy thunder and rain all night,really refreshing though dusty day all over again 🙁

Went shopping as usual , very crowded streets and shops!!! came back to make quick lunch as I have cooked minced meat in freezer so pasta with white sauce was the option,  did fresh roca pomegranate salad with walnuts and grated cheese on top and fresh fruit salad for dessert,all extremely fresh and nutritious.

Ingredients and method for pasta:

* cooked tube shape pasta.

* white sauce (bechamel) ,try to make it not too thick so as it can fill pasta easily.

ingredients and method of white sauce:

  • 4 tablespoons butter.
  • 4 tablespoons flour.
  • 4-5 cups milk.
  • salt,pepper .
  • heat pan then add butter and flour, stir well till flour is golden.
  • add milk gradually and whisk well while doing that till all quantity is well incorporated.
  • add salt and pepper.
  • keep whisking till it boils and becomes thick.
  • add cheese now or later on between pasta layers as you wish.
  • Note: if clots appears you can simply use hand mixer a bit or blender.

* cooked minced meat with tomato sauce ( I added small chopped onion,garlic,basil,oregano and tomato paste.)

* some butter for greasing the pan.

* mozzarella cheese for the top.

 

* grease oven pan with butter then add half of the pasta.

* add half the amount of white sauce then add tomato meat sauce over it.

* add other half of pasta and white sauce,sprinkle with dry oregano and cover.

* bake in a medium heated oven for 30-40 minutes then add cheese on top and roast till golden.

* let it stand to cool a bit for easier serving.

Tomato Thyme Pastries.

Hello everybody.

End of a long holiday,rearranging Eid sweets and Arabic coffee stuff,back to cooking and kitchen work.

lunch was fava beans with rice,didn’t make much cause only me and my youngest son like it,so I made some pastries the old fashion way, dough is simple flour (whole grain and white),yeast,oil, salt then added some sesame seeds and black seeds (قزحه).

Filling was green thyme leaves,finely chopped onion rubbed with salt and pepper,finely chopped fresh tomatoes and sun dried tomatoes, salt,pepper and chili powder and a good amount of olive oil.

Make the dough into balls then spread them,fill and close as triangles,I filled the extra dough with cheese and turkey.

Welcome Home Lunch.

Hello everybody.

My sister in-law and her son came home to spend Eid holiday today, so lunch was upstairs at my mother in-law’s house.

Upon upon our young handsome guest’s request she made freekeh with chicken,kofta with tahini sauce,mloukhieh and a green salad.

Everything was delicious, great family gathering like old times! tomorrow my turn to cook for iftar cause all will fast Insha’Allah.

Roast Beef.

Hello everybody.

Bought this extremely tender roast beef last week and hadn’t got the chance to do it till today,you can cook it in many ways either baked or boiled with vegetables.

 

This time kids wanted it roasted and crispy,they didn’t even wait to make a gravy or any sauce, just sliced as a cold cut and they made different sandwiches, it was really good and well done.

Ingredients and method:

* piece of tender lean beef.

* some garlic cloves.

* salt and various mixed spices ( pepper ,mixed spices,roast spices,chili…etc)

* olive oil.

 

* cut garlic to slices and then made a deep cut into meat and insert it all over the piece.

* rub salt and spices all over the roast and leave for some time to be well absorbed.

* heat oil very well then place meat to be browned from all sides very well.

* put the meat on a rack and in the oven for 30-40 minutes till done,you can tell when no juices are out when you pinch it with a sharp knife.

* leave to stand and cool before cutting to slices or pieces according to how you want it.

* serve with sauteed potatoes or vegetables or salad.
