Hello everybody.

Thursday is cake baking day, did the usual hunting one for my hubby with dried fruits and walnuts and another Samoa Bundt Cake for the boys but without frosting.

Cherry Pound Cake.

Hello everybody.

Did this awesome cake yesterday for my hubby to take with him to the hunting trip.

Found this recipe on Pinterest but reduced the sugar in it, turned out very good.

Ingredients and method :

# 1 1/4 cups butter.
# 1 3/4 cup sugar.
# 5 eggs.
# 1 cup evaporated milk.
# 1 tsp vanilla, 3 tsp baking powder.
# pinch of salt.
# 3 cups flour.
# 2 cups halved glace cherries.

# beat butter and sugar well till creamy then add eggs, vanilla.
# add milk alternatively with flour and baking powder.
# fold in cherries.

Bake in medium heated oven for 45-50 minutes or till toothpick inserted is dry.

ٍStrawberry Cake.

Hello everybody.

Invited to another breakfast at my cousin today,very busy eventful week right?

Just this morning I decided to do this cake to take with me, my friend’s famous recipe ( Suhaila’s cake I call it) usually done with cherries but strawberries will do .

Very delicious as usual ,all gone in minutes.

 

Ingredients and method:

* 5 eggs separated.

* 2 coffee cups (small like espresso cups) (فنجان قهوه ) vegetable oil.

* 4 small cups sugar.

* 5 small cups flour.

* juice and zest of a lemon.

* 1 tsp vanilla.

* 2 tsp baking powder.

* pinch of salt.

* cherries or strawberries sliced.

* beat egg yolks,oil,2 cups of sugar,lemon zest and juice,baking powder and flour together very well, batter will be a bit thick in texture,

* beat egg whites,remaining 2 cups of sugar and vanilla very well till frothy and creamy.

* fold in batter into egg white mixture and mix well but not hard.

* pour mixture in greased oven pan,then arrange pitted cherries on top.

* bake in a medium heated oven for 10-15 minutes then lower heat to minimum till top is golden.

* cool then add icing sugar as decoration on top.

Toffee Cake with Butterscotch Sauce.

Hello everybody

No intention at all to do a cake or dessert cause we’re all trying to cut down sugars , at least try, but my mother in-law gave these dates she didn’t like cause they ‘re too sweet so I thought i’d do this cake with them and send her most of it.

 

Recipe is easy so is the cake specially if you eat it with ice cream and sauce.

Ingredients and method:

  • 3 tablespoons butter.
  • 1/2 cup vegetable oil.
  • 2/4 cup brown sugar.
  • 1 1/2 cups pitted dates.
  • 1 tsp baking soda.
  • 1 tablespoon molasses.
  • 2/3 cup boiling water.
  • 3 eggs.
  • 1 tsp vanilla.
  • 1/2 cup chopped walnuts.
  • 2 tsp baking powder.
  • 1 tsp ginger.
  • 1 tsp cinnamon.
  • 1 2/3 wholewheat flour.

* In a deep bowl soak dates,molasses,baking soda,ginger and cinnamon in the boiling water.

*Beat butter,oil and sugar till creamy.

*Add  eggs one at a time at a time then vanilla.

*Add flour and baking powder.

*Add walnuts and date mixture and mix with wooden spoon.

  • bake in a medium heated oven for 40-50 minutes or till done from inside.
  • Cool then serve with ice cream and sauce on top.

 

Butterscotch sauce:

1/2 cup brown sugar.

1 tablespoon butter.

1 pack cream

2 tablespoons maple syrup.

Mix all ingredients together and heat till heat till sugar dissolves then simmer for 2 minutes.

keep warm .

Happy Birthday Lovely Whard

Hello everybody.

Yesterday was the birthday of the loveliest young girl ever, my best friend’s youngest daughter. Can’t believe how years flew this fast, the small cute baby is turning into a beautiful elegant artistic young lady. Love you dear  wish you all the happiness in the world.

Since we’re all going to my friend’s farm I made her a colorful chocolate cake, hope she’ll like it.

White Cheese Sweet (Saudi recipe)

Hello everybody.

Tried a new kind of dessert today, found the recipe in an old magazine,love easy basic desserts.

Ingredients and method :

# 1 1/2 cups sweet white cheese ( one used for qatayef)
# 3/4 cup butter.
# 1 egg.
# 1 pack cream.
# 1/2 cup powdered milk.
# 1 tablespoon sugar.
# pinch of salt.
# 1/2 tsp baking powder.
# 1 cup flour.

# syrup.

# beat the cheese well with butter and egg.

# add the cream, sugar, salt.
# add the milk then baking powder and flour.
# pour in a greased small pan and bake in a medium heated oven for 35-40 minutes.
# when cooled add syrup all over.

Dinner today was chicken with broccoli and mushrooms with pesto pasta, noodles soup,samboosek and spring rolls.

Made a nice cool salad with simple ingredients which are lettuce, fried noodles on top.dressing is lemon olive oil and soy sauce.

Cherry Cake and Pasta with White Sauce.

Hello everybody.

Unfortunately not a bite from yesterday is left so I had to cook something today specially that my son has finals and wanted to eat quickly and go out to study.

So after searching for what to do I grabbed a pack of pasta and quickly made white sauce and some meat tomato sauce then fixed a big pan of bachemel pasta for today and tomorrow as well.

When done I made a lovely cherry cake upon my husband’s request, it’s been a while since I baked something, love this one it’s amazing with tea and coffee.

Happy Independence Day Jordan

Hello everybody and Happy Independence Day to all.

To live the spirit of today’s celebration we started with a colorful breakfast decorated with Jordanian symbols. Bagels with cream cheese, labaneh and peanut butter jam filling.

Lunch was old fashioned green za’tar tomatoes fatayer or pastries.

Dessert was a beautiful Jordan’s flag colored cake, made four layers of colored batter then assembled all with cream and fruit salad, like a rainbow cake but with different colors.

Lemon Velvet Cake.

Hello everybody.

ً Went out to celebrate my friend’s birthday this morning to the Boulevard-Abdali ,first time for me to go and I was really impressed, beautiful place and scenery, didn’t expect it to be like this.

Birthday cake was a new recipe “Lemon Velvet Cake ” very similar to the red velvet but with lemons, really delicious and fresh,will definitely be on my favorite list.

Ingredients and method :

# 3 eggs.
# 11/2 cups suger.
# 1/3 cup margarine or butter.
# 2/3 cup vegetable oil.
# zest and juice of one big lemon.
# 1 tsp lemon essence (optional)
# 1/2 cup yogurt.
# 1/2 cup milk.
# 1 tsp vanilla.
#3 tsp baking powder.
# 3 cups flour.

Frosting :
# 3/4 cup butter.
# 2 cups icing sugar.
# some lemon zest.
# juice of half a lemon.
# some milk.
Note: I think next time I’ll make cream cheese frosting with lemons it’ll be better, this one is good but too rich in butter.

#Beat oil, butter and sugar till creamy then add eggs, yogurt, milk, vanilla.
#add lemon zest and juice.
# add baking powder and flour.

# pour batter in two small round oven pans.
# bake in a moderate heated oven for 35-40 minutes or till dry from inside.
# leave to cool then assemble two cakes with frosting in between and all over.
# decorate with lemon zest or roasted coconut.

Happened that I have two chocolate decorations one for a girl graduate and the other a boy which were so convenient cause my friend has both occasions for her children aside from her birthday.

Lime Poke Cake.

Hello everybody.

Amazing day out with my mother in-law’s cousins to a farm near Amman,beautiful place and fortunately warm weather.
Lady organizing the trip brought lunch food and each one of us brought dessert or coffee or tea. We had great time indeed.

I made this new cake recipe,easy and refreshing.

Lime or lemon poke cake :
* 1 pack French Vanilla cake mix.
* 2 packs lime jello.
* 1 cup boiled water.
* 1/2 cup cold water.
* 1 pack fresh cream.
* 1 pack heavy cream.

* juice of half a lemon.
* 1/2 cup caster sugar.

* Mix cake and bake as directed then leave to cool.
* mix jello with hot water till dissolved then add cold water.
* poke the cake wit a wooden spoon then pour the jello all over.
* put in fridge overnight or 4-5 hours.
* beat creams and sugar till stiff then add the lemon juice.
* spread cream over cake and decorate with fruits or coconut.
