Chicken and Greek Quesadillas.

Hello everybody.
Though shopped groceries and went to vegetables’ shop but still had no clue what to cook till just before lunch.

Winner was chicken quesadillas and when I had two more extra pitta breads I made them Greek style,very tasty.

On the side I made a fava bean smashed dish,with tomatoes onions peppers and cumin also yummy.

Baked Fennel!

Hello everybody.
So excited today, my friend’s son is getting married tonight, so happy for her and looking forward for the gathering of all of us at the party and thank God for the sunny nice weather so that all ceremonies won’t be difficult cause of rain or cold, congratulations to the beautiful bride and groom wish them all the happiness in the world.

Lunch was quick and easy, chicken scallop with mashed potatoes,salad and some baked fennels.

I have lots of these from our friends farm so thought I’ll try baking some,tastes really nice. You only add salt,pepper, olive oil and a bit of balsamic vinegar and bake uncovered in a well heated oven, that’s it.

Suborek (Turkish Borek).

Hello everybody.

Just got back from a gathering at Mom’s in  the honor of my cousin coming for vacation.

Mom made super delicious stuffed vine leaves and I made this Turkish style borek, very easy to do and extremely yummy,secret is lots of butter used for sure,everything tastes good with butter.
Ingredients and method :
* 2 packs thin phyllo pastry (رقائق الهنا)
*melted butter.
* white and yellow cheese ( I used white cheese, kashcaval and kraft).
* bunch of parsley finely chopped.
* some dry mint.

I also made spinach and feta cheese mix with black pepper and a bit of chili powder.

* grease and deep dish or pan with butter then start adding the pastry layers adding butter between all layers.
* after layering one pack add the stuffing then continue with the other pack.

Note: today I used four packs and made a big pan,half with cheese and half with spinach.

* cut into squares and tuck sides well.
* before putting in the oven beat one egg in 1- 1 1/2 cups milk and add all over.
* bake in a well heated oven for 20 minutes.
* toast surface till golden.

A super yummy dish, felt myself part of a Turkish series while doing it.

Beetroot Apples Dip.

Hello everybody.

What a busy eventful day, nonstop activities since morning which started by a gathering at mom’s for my dear aunties , lovely ladies with so many old stories to tell. I made some spinach pastries and almond pudding,mom made za’tar cookies and orange cake.

As for lunch at home I made this lovely bright beetroot apple dip or salad that my sister told me about since beetroots are in season  these days,this can be a very nice healthy dish to make instead of processed ready dips.

Ingredients and method:

* 2 large beetroots boiled or baked.

* 2 apples.

* 2 tablespoons mayonnaise.

* 2 tablespoons labaneh.

* 2 tablespoons crushed walnuts.

* salt and pepper.

* grate beets and apples then squeeze them with your hands to remove all excess water.

* mix mayonnaise,labaneh,walnuts,salt and pepper.

* add beets and apples then mix well.

* put mix in a bowl then leave in fridge a bit .

* turn it upside down and serve with chips or toasted bread.

Then I went out with my lovely college friends to Yoshi for sushi, though I’m not a fan of it but food was great and atmosphere and service were excellent, company was the best part of the evening as always.

Banana Caramel Pie.( فطيره الموز والكراميل)

Hello everybody.

Craved something sweet last night or actually I saw this recipe on TV couple of days ago,bought puff pastry Saturday so as to do it when the occasion pops up.

It’s a very easy dessert that you can do anytime you have sudden guests, just keep a pack of puff pastry always ready in your freezer and I guess bananas are always available most of the times.

 

Ingredients and method:

* 1 square pack of puff pastry.

* 1 cup sugar.

* 1/4 cup water.

* 1 tsp butter.

* 5-6 big bananas.

* a sprinkle of cinnamon.

 

* In a deep oven skillet or pan add sugar and water, heat till caramelized and golden.

* add butter then cut bananas to medium sized pieces and arrange over caramel.

* sprinkle with cinnamon.

*roll the pastry to a big circle then cover all over bananas and secure edges.

* bake in a well heated oven till pastry puffs and become golden.

* while still hot turn it upside down quickly.

* serve with vanilla ice cream or whipping cream.

Lunch today was frittata ( عجه) and I made some spinach pastries and rest of dough I baked it in a deep pan and made a loaf.

Gundelia عكوب.

Hello everybody.

Finally found some good quality Gundelia or عكوب cause I bought some from a roadside boy last week that were unfortunately not good at all I actually throw them away.

This plant or even bush is usually found this time of the year in the wilderness, well known in the Levant region and cooked in various ways either with meat as stew or with cooked yogurt or as I did them today sauteed with onions and garlic with olive oil,salt and pepper. Really good and very nutritious by the way but problem is that it has so many thorns in them so you have to clean them very well and make sure you remove all thorns usually using scissors.

To compensate the not so romantic meal I made a red healthy romantic juice containing strawberries,pomegranate,kiwi and cranberry juice.

Top story today was different photos of people celebrating Valentine’s day ,too extreme I think 🙂

Valentine’s Day Ideas.

Hello everybody.

No cooking today so I decided to do some cute dishes for Valentine’s Day which is coming up in the next few days or you can even make them in anniversaries or birthdays.

I made these cute little pies with beets and remaining pieces turned to a small salad then made Red Velvet cupcakes and used smashed beets instead of food coloring but seems I over baked beets cause color turned so dark not red, results looked like a chocolate cupcake rather than a red velvet, taste was pretty good .

 

Ingredients and method of beet pies:

* puff pastry squares.

* some olive oil,salt and pepper.

* boiled or baked beetroot.

* feta cheese or blue cheese as you prefer.

* walnuts.

* balsamic vinegar.

 

* make heart shapes ( small or big) with cookie cutters.

* spread puff pastry squares on  wax paper then prick them with a fork so as they won’t puff a lot.

* brush with olive oil,salt and pepper.

* line up the beets then bake in a medium heated oven for 30 minutes or till puffs are golden.

* sprinkle feta cheese or blue cheese, walnuts then drizzle with condensed balsamic vinegar.

 

As for the red velvet I took the recipe from a nice food blog called little sunny kitchen , very easy recipe that uses beets instead of food coloring.

Friday Lunch.

Hello everybody.

Though general atmosphere in all Jordan is still sad and angry after the tragic passing of away of the Jordanian pilot but I’m sure he’s included in all our prayers all the time.R.I.P Muath Kasasbeh.

Lunch today was kofta with tomatoes and potatoes on top, Iranian rice, avocado dip, roasted courgettes and hummus. I tried to use all vegetables and stuff in the fridge in order to clean and rearrange the fridge for tomorrow’s shopping.

Hummus with Sweet Potato.

Hello everybody.

Boiled some chickpeas this morning, hummus is a good low carbohydrate high in protein dish so it makes a good appetizer or even a breakfast choice.This time I tried it with a piece of boiled sweet potato as my friend Mary advised one, really yummy and added smoothness to the hummus.

I also made the special salad as they call it in restaurants thee palmetto artichoke mushroom and baby corn salad with a creamy dressing of mustard,mayonnaise,lemon,balsamic,herbs and olive oil. A fancy dish for sure .

Main dish was chicken curry from yesterday.

After Eight Cake.

Hello everybody.

Busy Saturday as usual,many errands and work at home plus cooking and baking a cake, but all was done by time to go to the gathering at my uncle’s house.

I promised my auntie to bring something sweet and after searching a lot for something new and different ended up taking this recipe from my dear friend Ola,turned out really yummy everybody loved it.

Lunch was chicken curry and chicken giblets ( قوانص).

Ingredients and method:

* 3 eggs.

* 1 cup sugar.

* 1/2 cup vegetable oil.

* 8 small spoons cocoa.

* 2 tsp baking powder.

* 1/2 tsp bicarbonate.

* 1 big spoon peppermint essence.

* 1 1/2 cup flour.

* 1 cup boiled water.

* 1 pack After Eight.

* 1 pack cream.

 

* Beat sugar and oil well till creamy then add eggs,vanilla,mint,cocoa, baking powder, soda and flour.

* In a small baking greased baking pan pour batter and directly add a cup of boiled water on top.

* bake in a medium heated oven for 35-45 minutes or till surface and center are dry.

* On a water bath melt 10-15  After Eight pieces and whisk till they melt then add the cream and mix well.

* when cake is cooled cover with minty ganache and decorate as you like.

 

Afternoon gathering was nice as usual,we had tabouleh,yalanji,chicken pastries,oregano loaf, salad and cheese cake all yummy yummy 🙂
