Pineapple Cake (كيكه الاناناس).

Hello everybody.

It’s Thursday already? don’t you agree this week ended quickly?  even all days  I guess!

Anyway I did this cake for the hunting trip tonight,old fashioned pineapple cake, I remember maybe in the 80’s when people started doing this cake it was a must in every occasion or gathering, I always love to make it, burned sugar is so yummy right?

Ingredients and method:

* 4 eggs.

* 1 1/2 cups sugar plus extra one for caramelizing the bottom.

* 1 cup vegetable oil.

* 1/2 cup pineapple juice.

* 2 big spoons yogurt.

* 2 cups flour.

* 1 tsp vanilla and 2 baking powder.

* 5-6 slices canned or fresh pineapples.

* in a metal cake pan burn one cup sugar till it’s golden and caramelized.

* add pineapple slices in a line.

* mix all other ingredients to form a smooth cake batter.

+ pour over pineapples then bake in a medium heated oven for 40-50 minutes.

* when cooled turn it upside down,you can add some pineapple juice over it if you like.

Cauliflower with Rice (مقلوبة زهره)

Hello everybody.

Usually when I cook meat either cubes or minced I keep some of it in the freezer so that when a day like today where you leave the house early to do some errands and go later coffee-ing somewhere you come home to cook lunch, half of cooking steps will be done.

Last night boys said they wanted cauliflower for lunch,so I took out the cooked meat before I went out,bought some fresh cauliflower on my way back  and lunch was ready just on time.:)

Spinach with Cream and Cannelloni.

Hello everybody.

Mom had guests this morning,did spinach tabouleh for her with other yummies as well,so I cooked cannelloni before I left since I already have cooked minced meat and chopped spinach so I fixed it quickly and left.

Yesterday my cousin posted this dish on banancooking page,spinach with cream,mushroom and cheese,decided to try it also, unfortunately I made a nice video of the recipe and way of cooking then deleted it by mistake 🙁 will repeat it soon for sure.

Ingredients and method:

* fresh mushrooms.

* bunch of chopped spinach.

* fresh cream.

* any kind of cheese,cheddar,mozzarella or kashkaval.

* salt,pepper and pinch of nutmeg.

* saute mushrooms in a bit of butter till tender.

* add spinach ,salt,pepper and nutmeg.

* add cream and leave to simmer 10 minutes.

* put them in a pottery pan or deep oven pan add cheese then bake for 10 minutes.

Really yummy either as dip or appetizer or with garlic bread.

Potato Cups (بطاطا كاسات).

Hello everybody.

Still have some cabbages from yesterday but a small side dish is needed for sure cause it won’t be enough for all and because I’m going out for coffee with my friends to the Cake Shop I did this simple dish.

My mom used to make these cups too much when we were kids specially end of the week,really yummy, today they tasted exactly the same as old days, a pinch of nutmeg is the secret I guess.

Ingredients and method:

* 3-4 boiled till done potatoes.

* 2 eggs.

* small bunch chopped parsley.

* grated cheese ( white and cheddar usually)

* salt,pepper and pinch of nutmeg.

* mash potatoes with some salt,pepper then form it into cups and put them in fridge a while.

* mix eggs,cheese,parsley,salt,pepper and nutmeg.

* grease an oven pan then place potato cups and fill with mixture.

* bake in a well heated oven for 25-30 minutes.

Easy quick delicious yummy what else to say??

Stuffed Cabbage and New Ma3moul Recipe.

Hello everybody.

Kids cheered when they knew I’m making cabbage today,favorite dish for all in my house,though making it is a long process sometimes specially if all done the same day like this morning, I usually boil and cut them a day ahead and stuff the next day,but yesterday was a full day already,had no strength to do them in the afternoon.

First time trial this time I put one of the cabbages in the freezer last night,upon an advice from my cousin living in Rome,took it out today and it’s true leaves peeled so easily and were ready to stuff no need to boil, but nevertheless I put them for seconds in the hot water to kill any germs ( Rome cabbages are clean and round like a ball not like ours!) ,thank you dear for the tip really helpful.

Since I’m home not going anywhere I did this new ma3moul recipe my aunt posted before Eid,been intending to try it for a while, though I was afraid dough will be too sweet cause one basic ingredient in it is sweetened condensed milk,but result was AWESOME, really easy to handle and very tasty, highly recommended.

Ingredients and method:

* 5 cups flour.

* 400 gm butter.

* 1/4 cup vegetable oil.

* 3/4 can sweetened condensed milk.

* 1/4 cup water.

* dates,walnuts or pistachios for filling .( added cinnamon,icing sugar and rose water to walnuts and cinnamon,anise and cardamon for dates)

* mix all ingredients well till you form a dough.

* start working directly by making small balls and stuffing them, use a mold or decorate them as you wish.

* bake in well heated oven at first then lower the heat when you start till golden.

 

I added anise seeds to the extra dough and sliced it as Biscotti  really yummy also, thanks 3amto for the recipe,love you <3

By the way stuffed cabbage is the most seen post from all my 300 till now !!!!!!!
