Hello everybody.

My sister in-law and her son came home to spend Eid holiday today, so lunch was upstairs at my mother in-law’s house.

Upon upon our young handsome guest’s request she made freekeh with chicken,kofta with tahini sauce,mloukhieh and a green salad.

Everything was delicious, great family gathering like old times! tomorrow my turn to cook for iftar cause all will fast Insha’Allah.

Roast Beef.

Hello everybody.

Bought this extremely tender roast beef last week and hadn’t got the chance to do it till today,you can cook it in many ways either baked or boiled with vegetables.

 

This time kids wanted it roasted and crispy,they didn’t even wait to make a gravy or any sauce, just sliced as a cold cut and they made different sandwiches, it was really good and well done.

Ingredients and method:

* piece of tender lean beef.

* some garlic cloves.

* salt and various mixed spices ( pepper ,mixed spices,roast spices,chili…etc)

* olive oil.

 

* cut garlic to slices and then made a deep cut into meat and insert it all over the piece.

* rub salt and spices all over the roast and leave for some time to be well absorbed.

* heat oil very well then place meat to be browned from all sides very well.

* put the meat on a rack and in the oven for 30-40 minutes till done,you can tell when no juices are out when you pinch it with a sharp knife.

* leave to stand and cool before cutting to slices or pieces according to how you want it.

* serve with sauteed potatoes or vegetables or salad.

Roya TV Interview.

Hello everybody.

BIG day yesterday,I think I’ll mark it as a turning point or new start for something different,not sure what it’ll be but I was really happy and very emotional from the huge amount of loving and cheering comments specially from my family and friends, my dearest friends took me out to celebrate my, as everybody assured me, first TV interview.

I was interviewed on Donya Ya donya morning show/ Roya TV ,talked about my blog, how it started and grew and about my future plans. Had to admit I was very nervous at first but it all went smoothly and the beautiful anchor was very nice and natural.

Thank you again to all family members,friends,followers and members of group banancooking for your support.

Well all this doesn’t mean I didn’t cook,my son just arrived from Berlin after a month absence and of course cooked his most favorite dish stuffed courgettes,made some stuffed vine leaves and string beans in olive oil .

Salmon Cream Cheese Sandwich.

Hello everybody.

Usual Saturday, but today nobody will have lunch at home,each had plans to do so no cooking till tomorrow.

As for me though I’m invited to an engagement dinner at night but was feeling hungry by mid afternoon so I fixed myself some sandwiches,one with  Cypriot kashkaval cheese and another with salmon and cream cheese left from dinner the other night,really tasty with lemons and dill.

I love light lunches like this, comfort food for me I guess !

Pizza Loaf.

Hello everybody.

Full of activities this Friday,usual coffee at my sister in-law then lunch with my family at Zuwar Restaurant, beautiful place and scenery, then my dear auntie and cousin came for tea. feeling blessed as they say in Facebook statuses , love you all <3

I made this loaf for afternoon tea and a bowl of fresh fruit salad, this loaf recipe is easy and quick,tastes a lot like pizza but all mixed together, or can slice it and spread cheese or labaneh on top.

Ingredients and method:

* 2 eggs.

* 1 tsp salt.

* 3/4 cup vegetable oil.

* 1/2 cup chopped mushrooms.

* 1 cup chopped peppers.

* 1/2 cup pitted olives.

* finely chopped green thyme leaves.

* 2 tsp baking powder.

* 2 cups flour.

* white cheese and sesame seeds for decoration.

 

* beat eggs,salt and oil till creamy.

* add all other ingredient and mix with a wooden spoon (it’ll be like a thick cake but not a dough)

* decorate with cheese pieces and sesame seeds.

* bake in a well heated oven for 30-40 minutes or till done.

Appetizer Platter.

Hello everybody.

After yesterday’s big breakfast I went shopping to prepare for dinner,our dear friends Salam and Flora came to dinner last night with sweet adorable baby Mariam,lovely evening and food.

I made a big appetizers platter similar to the one we ate last week at Bonita Restaurant,well it was close enough but not as perfect. It contained avocados with tomatoes,smoked salmon with cream cheese dill filling on a bed of rocca, frilled chicken with pesto sauce on top and grilled eggplants ant tomatoes with cheese in between or as they name it eggplant tower.

Salad was Rocca with pomegranate seeds,walnuts and cheese, main dish was grilled steaks with lemon thyme butter on top and baked potatoes and veggies on the side.

Dessert was an extremely rich delicious Velvet Cake done by my lovely guest ( homemade from scratch), you’re right Flora tasted even better today, thank you my dear <3

Summer Farewell Breakfast.

Hello everybody.
This morning all family ladies gathered at my uncle’s garden for breakfast, a kind of farewell to Summer days cause as usual here in Jordan we suddenly go into Winter, no in betweens !
As agreed from last week it was a sharing party, though my aunt almost prepared most of the food from her household pantry, cheese, labaneh, olives and delicious newly ripened stuffed eggplants (مقدوس )…etc.
The star of the table was fresh home baked bread done by my dear cousin, unbelievably tasty, wiped out instantly.

At the meantime I’m preparing dinner for our dear friends, made some lovely appetizers and salad, will post them later.

Inshallah we always gather each year in all seasons and times in good health and happiness, love you aunties and cousins and sorry expats, I know you all wished to be with us.♡

Ma3moul and Date Rolls Lesson ( حصه عمل مقروطه ومعمول)

Hello everybody.

Today I was honored and privileged to share a lesson with my dear cousin in her training center ‘Ribbon Cake’ ,she gave her part in making ma3moul with its stuffing, dates,walnuts and pistachios plus making Sable cookies in various shapes.

My part was teaching how to make my specialty Date Rolls, I really enjoyed my time a lot,it’s the first time I do this, did it before but in my house and with family and friends, hope the ladies enjoyed the lesson as well.

As you all know Adha Eid is within 10 days and many housewives started preparing for it,this lesson today was a great help for sure, Adha Mubarak everybody <3

Old Fashioned Date Cake.

Hello everybody.

No cooking today,made a salad and lentil soup since weather is cooling down or actually really cold at night.

Did this very old recipe in my book to my mother in-law,her friends coming for tea, no need for a sophisticated creamy or heavy cake,this one will be just fine.

Ingredients and method:

* 3 eggs.

* 1 cup sugar.

* 3/4 cup vegetable oil.

* 1 cup pitted dry dates.

* 1 cup hot milk.

* 2 tsp cinnamon,1 tsp cardamom,1/4 tsp cloves and pinch of pumpkin pie spice if available.

*1/2 cup raisins and crushed walnuts.

* vanilla and 3 tsp baking powder.

* 1/4 tsp baking soda.

* 2 1/2 cups flour.

 

* chop dates and add hot milk on it with the baking soda,spices and raisins,cover then leave to cool down.

* beat eggs,vanilla,sugar and oil.

* mix flour,walnuts and baking powder with a hand mixer.

* finally mix date mixture with eggs and fold all in flour,be sure the batter is thick enough so that dates won’t sink down.

* bake in a medium heated oven for 30-40 minutes or till done.

* add icing sugar or cream cheese icing if you like.
