Caramel Cake.

Hello everybody.

Full busy day, order was apple pudding and teramisu cups, guess these elegant ones are a hit these days 👍.

I thought I’d send a small gift with this order, special clients deserve a special treat right?  Decided I’d try this cake that I pinned long time ago, been eager to try it cause it does look elegant and light.

End result wasn’t exactly like original photo but good enough I think. I changed a bit in the cream and added almonds to give an extra nutty flavor.

Ingredients and method :

Cake batter :

* 1 cups sugar.
*1/2 cup brown sugar.
* 1/2 cup butter.
* 1/2 cup vegetable oil.
* 3 eggs.
* 1 1/4 cup milk.
* 2 tsp baking powder.
* 1/2 tsp baking soda.
* 1 tsp vanilla.
* 2 1/2 cups flour.

* Beat sugar, butter and oil till creamy.
* add eggs, vanilla and milk.
* add baking powder, soda and flower.

*heat oven (medium) then bake the batter in two or three pans as you wish for 25-30 minutes or till dry from inside.
* remove from pans and leave to cool.

Meanwhile make caramel and frosting.

Caramel sauce :
* 2 cups sugar
* 2 tablespoons water.
* 2/3 cup butter.
* 1 cup heavy cream.

* heat sugar and water till it’s caramelized and reaches the color desired, add butter and stir well.
* remove from heat and add cream very slowly and mix.
Note: better use a deep pan to avoid hot sugar from splashing.
* leave to cool completely.

Frosting :
* 1 cup heavy cream.
* 2 envelopes whipping cream.
* 1/2 cup caramel sauce.
* beat all ingredients well till double sized and stiff.

Assemble cake in two or three layers stuffed with frosting and caramel sauce, I added some roasted caramelized almonds also.

Creamy delicious rich cake.

Apple Pudding Eclaires Again.

Hello everyone.

Order for tomorrow done today cause it’s better cooled overnight, apple pudding eclaires in small cups.

ingredients and method:

* 5-6 large apples.

* 1 tsp cinnamon.

* 1 tablespoon flour.

* sugar if desired.

* 1 pack whipping cream.

* 1 pack fresh cream.

* 1 pack cream cheese.

* 4 packs vanilla pudding or you can use homemade pudding also.

* plain biscuits and some milk.

* peel and chop apples then add flour,cinnamon and sugar and mix well.

* mix together whipping cream,fresh cream,cream cheese and pudding very well .

* line the biscuits in a deep serving dish and sprinkle with some milk.

* add half the amount of cream then half of apples.

* repeat the layers then decorate with crushed biscuits and cinnamon.

* keep in fridge overnight for better results.

Lunch was fresh pasta salad from my talented friend Maysa ,a must try all kinds of homemade pasta can be found at Maysas.Pasta, mixed it with fresh mushroom and cooked veggies with lemon,mustard,mayonnaise dressing .

Friday Lunch Order.

Hello everybody.

Though I try not to take orders Friday but this one I couldn’t say no to cause it’s from a special old friend to her family.

Thank God though order was a bit variant but all went smoothly and was done on time.

Coconut Custard Dessert.

Hello everybody.

Yesterday I prepared a new recipe,cold kind of dessert that’s better done a day before,love these recipes cause they’re a big rescue when you’re busy or have guests.

My aunt did this one last month so thought it’ll be nice with today’s order to my uncle’s,a treat cause they’re busy moving to a new house.

Ingredients and method:

* 4 cups water.
* 15 tablespoons powdered milk.
* 1 cup sugar.
* 2 tablespoons custard powder.
* 2 tablespoons cornflour.
* 1 cup coconut.
* 1 tsp vanilla.

* mix all ingredients well till custard and starch dissolve
* keep stirring and heat till mixture boils and thickens.
* pour into any desired mold or pan.
* refrigerate for 2-3 hours or preferably overnight.
* remove into a plate and decorate with strawberries or chocolate.

Cauliflower Stew.

Hello again.

Started to think about what to cook today after morning order was done and delivered.

Well to tell you the truth I had to improvise anything according to what I have, so end result was cauliflower stew with minced meat, garlic, onions and tahini sauce on the side plus a small kibbeh for the boys.

Teramisu in Easter Chocolate Eggs.

Hello everybody.

Have this teramisu order tomorrow so as usual I always do cold dessert a day before.

Today’s twist in teramisu was that I used chocolate Easter eggs as cups, removed top with a sharp hot knife, filled them with lady finger biscuits dipped in coffee and cream.

Final presentation was really elegant and nice, hope taste will be as well.

Cheese Stuffed Burgers.

Hello everybody, hope you’re all enjoying the amazing weather.

Well today I can assure you that everything happens for a reason, I absolutely had no idea what to cook this morning then by coincidence I found out that my freezer was off since a while from the loosened wire so I had to cook melted stuff. End result were fava beans and steaks in yogurt, two pieces of scallop and two burgers.

My son decided to stuff burgers with cheese so I coated it with eggs, flour and breadcrumbs then deep fried the ball.

Result was variety of yummy stuff at the end

Oreo and Caramel Popsicles.

Good evening everybody.

Long busy day since early morning guess Sumner events started already!
Was invited to a big family breakfast gathering at my uncle’s house and as usual I love to bring a special dessert or dish with me so today’s pick was something new, Oreo and Caramel Popsicle.

Though recipe is very easy and simple but it’s a bit messy process specially dipping in chocolate and arranging them in a nice arrangement.

Oreo ones consists of crushed Oreo (24 pieces)  with two tablespoons of heavy cream all mixed well then formed into balls, freeze for two hours then dipped in chocolate.

Caramel ones consists of sweetened condensed milk cooked well till thick and caramelized mixed with plain or Lotus biscuits.

Taste was great but I’m not pleased with final look, next time I’ll decorate them differently,guess process needs more patience 😀
