Homemade Msakhan Bread! (مسخن)

Hello everybody.

Due to weather conditions it’ll be risky to go out and stuck in snow and since the plan was to make msakhan today

so I decided to bake the bread at home,after searching many websites to find a way of baking it in a regular oven I found this good one,very easy and outcome was superb !!

 

Msakhan is an old traditional dish made from chicken,onions,plenty of summaq and olive oil all placed on special kind of bread with nuts on top.

ingredients and method of bread:

Note : this quantity makes 4-5 bread pieces.

* 2 cups flour.

* 1 tsp salt.

* 1/2 cup warm milk.

* 1 1/2 spoons instant yeast.

* 1 tsp sugar.

* 1 cup warm water.

 

* Mix water,yeast and sugar and cover till bubbles are formed.

* add to flour milk and salt.

* knead well by hands for 10 minutes.

* cover and leave to rest and rise in a warm place for 1 hour.

* divide to 4-5 balls.

* roll or spread them into bread shape.

* heat the oven very well with a big oven tray in it.

* when well heated turn on the upper flame .

* place the breads on the tray and bake till surface is golden,bottoms will be done cause tray is already very hot.

* do all breads the same way,make sure the pan is always very hot before each batch.

 

You can do these not only for msakhan,actually boys ate some as is before lunch. Fresh bread is the best food ever 🙂

Homemade Pasta !

Hello everybody.

After a chit chat with my cousin living in Rome last night discussing how fresh homemade pasta is much more tastier than commercial ones and since I do have a pasta making instrument stashed away in my kitchen cabinet,I decided to start rolling it while we’re already stuck indoors in the cold weather.

Basic egg pasta recipes are all similar ,only 2 ingredients but secret to a successful dough is to let it rest and flour surfaces and roller so as pasta won’t stick to each other.

 

Ingredients and method:

* 2 cups flour.

* 1/2 tsp salt.

* 3 eggs.

 

* on a clean surface or in a bowl mix flour and salt then make a well in the middle and crack eggs in it.

* start whisking eggs into flour with a fork gradually.

* continue working with your hands or in a food processor till you get a firm dough.

* cover with cling film and leave to rest for 30-50 minutes.

* divide to 4 pieces then roll in the thickest number in roller.

* keep dusting with flour so as layers won’t stick.

* roll again to a thinner layer and so on till you have very thin ones.

* last thing roll in pasta shape and dust them with flour when done ( an extra helping hand during this process is not a bad idea:) )

* cook in salted boiling water for 4-5 minutes only.

* remove and cook the way you want,today I made it with mined meat,mushrooms,onions with herbs and tomato paste .

* sprinkle with cheese when served.

 

Hope you try it if you have this magical machine ,really worth it, totally different taste !

Thyme Tomatoes and Green Onions Pastries.

Hello everybody.

Mom and my lovely niece visited me this morning, great timing cause I was about to begin making some pastries so a helping hand was a blessing.

I made three kinds of fillings, cheese,green fresh thyme with onions,tomatoes,sun dried tomatoes and olive oil plus some stripped green onions that I always make like swirls . really yummy and great with labaneh dip .

While we were working my niece made a small strawberry cake and decorated it, it came out a beautiful all over pinkish lively cake,her favorite color of course.

 

Well, hope all is ready for the snow coming tomorrow,I went grocery shopping today and people were crazy buying piles of stuff, hope we won’t be stuck for a long time like last year, fingers crossed !!!!!

Eggplant Rolls and Mushroom Soup.

Hello everybody.

Extremely cold today,bet most moms made a soup in this weather, I did a super mushroom soup from the ones my cousin sent me from Rome,I also used the mushroom cubes which made a big difference in taste,really rich aroma and flavor I didn’t even add any spices. Big evidence is it’s all gone !

Lunch was Kebabs in tomato sauce(كباب هندي) ,kept some of the kebabs and wrapped them in thinly sliced fried eggplant then cooked wraps in tomato,onion and garlic sauce then sprinkled some chopped parsley on top. Really good and well stewed ,eggplants gave it a nice twist !

Oh and I made a fresh pesto sauce to keep in my new pistol and mortar all from scratch!

Mshabbak (مشبك بمناسبه عيد المولد النبوي الشريف).

Hello everybody.

Today marks the Birth  of Prophet Mohammad ( صلى الله عليه وسلم) on this occasion almost all sweet shops sell this kind of dessert called “Mshabbak” ,I looked through different recipes last night and decided to do it at home ,cause the ones you buy though maybe crunchy and better looking but they’re too sweet , heartburn often starts after the first bite.

Recipe is simple but process is a bit difficult, first one is usually a mess .

Mshabbak recipe:

* 1  1/2 cups flour.

* 1 cup starch.

* 1 big tablespoon instant yeast.

* 1 tablespoon sugar.

* pinch of salt.

* 2 cups warm water.

* some red food coloring.

* sugar syrup.

* oil for frying.

 

* Mix flour,starch,yeast,sugar,salt and warm water very well till no clogs are formed.

* leave covered in a warm place to rise for 45-50 minutes.

* heat the oil then drop the dough in circle or strips form using the cream decorating device.

*Remove when golden from both sides then dip half of it in red food coloring dissolved in some water.

* dip them right away in sugar syrup.

 

It might be a difficult messy process but outcome is super delicious,of course I sent dishes to neighbors,mom and mother in-law  to lesson the crime as usual.

Hedge Mustard (حويرنه).

Hello everybody.

Home  alone today,boys and hubby went to the farm early morning so no need to cook and since I’m going with my mom to visit her cousin this afternoon which will definitely serve lots of goodies,so a light lunch will do.

This herb crossed my mind this morning  and I was lucky to find some at the grocery store, though it’s much tastier if picked fresh from fields but we city people will have to live with bunches in stores , not so fresh but good enough.

 

It’s usually salted and washed many times then mixed with some yogurt or labaneh and some green onions,sharp peppery taste . For me this is the most perfect meal ever, love dairies in all shapes and kinds 🙂

I did some search for benefits of hedge mustard turned out it’s a very useful herbs as anti-inflammatory and anti-fungal actually long time ago it was called the “Singers Plant” cause of great effect in laryngitis and cough and soothing effect on throat , well good to know right?

Chicken with Noodles.

Hello everybody.

Lazy day off , had no idea what to cook till after 2 when boys suggested Chinese or chicken with veggies and noodles,which is great cause I have all ingredients and chicken breasts are the easiest to defrost and cook .

 

When done I suddenly decided to make some Rock Cookies to take with me to some dear friends we’re visiting, thank God I finished just on time,even made a nice packaging 🙂

Happy New Year :)

Hello everybody.

Waited till now to write my post so as not to ruin the surprise,  I baked  a beautiful birthday cake for my lovely cousin  requested by her sweet sister-in-law,I also made an Apple Pecan Pie as a gift from me. Happy Birthday dear doc and Happy New Year to you and all your family, love you all.

As for our new year’s eve, we had a small special candle lit dinner at home , very early so as not to eat heavy late at night then ended it with our usual coffee with chocolates, typical family celebration, we’ll watch T.V for the rest of the night.

Dinner was steaks with sauteed veggies, cheese pastries, mixed green salad with lentils pomegranate and feta cheese  and a new dish which was extremely delicious “Italian Mushroom Risotto” got these dried mushrooms from my cousin living in Rome, soaked them in water then sauteed them with onions and butter then cooked the rice with mushroom soaking water, really yummy yummy.

 

Ingredients and method of Apple Pecan Pie:

* pie crust.( same as apple pie)

* filling:

* 3 big peeled chopped apples.

* 3/4 cup chopped pecans.

* 1/2 cup sugar ( brown or regular)

* 1 tablespoon starch.

* 1 tablespoon cinnamon.

* 1 tablespoon butter.

 

For the crumble:

* 1/2 cup finely chopped pecan.

* 2 tablespoons butter.

* 3/4 cup flour.

* 1/2 cup sugar.

 

* spread pie crust in special pie pan.

* mix filling ingredients together and add on crust.

* mix crumble ingredients in food processor till crumbly .

* add on top of pie filling.

* bake in a medium heated oven till golden from sides. (30-40 minutes)

Fava Beans in Yogurt.

Hello everybody.

Found these fresh small fava beans in the supermarket early this morning so I changed my plan at once,intended to make shushbarak cause I have some Ewe yogurt that must be cooked but couldn’t resist the beans though not everyone at home loves it but personally this is one ofmy favorite dishes.

 

You simply cook the beans with some onions, salt and pepper then add cooked steaks or lamb cubes and leave to simmer then add cooked yogurt on them and leave on low heat till done.

I also made some fava beans with olive oil,garlic and coriander,really yummy.

Shakshuka.

Hello everybody.

Invited to breakfast this morning so I wanted to cook something as quick as possible, this simple rich dish was the rescue recipe, my husband saw and wrote it down  long time ago in Fatafeat cooking channel. Though the original recipe on the net usually doesn’t contain sausages like this one so you can do it with or without. Very tasty and good for a Friday brunch by the way.

Anyway breakfast was at a nice place in Taj Mall called Majnoon Qahwa, though service is slow as always in MOST Amman restaurants but food was really good and all in all atmosphere is cozy and nice,most important thing is that smoking area is completely separated so no Argileh smoke to suffocate you !

And they do have excellent Yemeni coffee,really strong and aromatic.

 

Ingredients and method of Sahkshuka:

* 1 large thinly sliced onion.

* 4 cloves of garlic ( used my new mortar to crush them)

* 1 can or 5 big diced tomatoes.

* some fresh sausages (optional).

* chili powder,salt and pepper.

* some chopped parsley (optional)

* 4-5 eggs.

* olive oil.

* saute onions and garlic in hot olive oil till tender.

* chop sausages and add  them.

* add the tomatoes,salt,pepper and chili then leave to simmer till done.

* crack the eggs on top and cover .

* leave over low heat till eggs are done the way you like them.
