Fava Beans and Eggs ( Iraqi Dish,باقلاء بالدهن)

Hello everybody.

Special brunch today at my sister in-law’s house,her hubby made us a famous Iraqi dish which is usually done for breakfast but we had it as lunch this time.

Main ingredients are cooked fava beans and scrambled eggs , it’s a sort of fatteh type of dish  cause bread is soaked a bit in boiled water of cooked beans is the base , then you add over it a good amount of beans,lemon juice, very hot oil ( usually the oil used in frying the eggs), butnuj ( which is a dried wild mint) then chopped tomatoes and onions.

Last thing you add fried eggs,scrambled and sunny side ups and dig in. Very fulfilling meal,you won’t feel hungry till next day for sure ,my late father in -law ( god bless his soul) used to call it the cement mix meal 🙂

Anyone who loves new different food should try it,really good.
اليوم الغداء طبق عراقي “باقلاء بالدهن ” الباقلاء يعنى بها الفول ويكون بالعادة فول ناشف منقوع ومسلوق ويمكن استعمال العلب للسهوله.
الطريقه تشبه مبدأ الفتات المعتادة حيث يشرب الخبز بماء سلق الفول ثم يضاف الفول، الليمون والبطنج (نعنع بري ناشف) ويسقى بالزيت الحار أو السمن حسب الرغبه.تضاف بندوره مفرومه ناعم وبصل مفروم، آخر طبقه عباره عن بيض مخفوق مقلي أو بيض عيون.
وجبه دسمه نوعا ما لمحبي الفطور مع إننا اعتبرناها غداء اليوم.

Applesauce Coffee Cake.

Hello everybody.

As I promised yesterday I made this light easy cake with the applesauce I cooked yesterday,well it is light but maybe needs a bit more sugar. People on diet or have diabetes will love it .

I found many other recipes some even without eggs at all,hopefully will try one of them later on.

Lunch was some leftover mujadara and spinach with cheese pie or pizza and za’tar manousheh .

Ingredients and method:

* Crumble on top:

*1/4 cup whole wheat flour.

* 1/4 cup white flour.

* 1/4 cup brown sugar.

* 2 tablespoons butter.

* 1 tsp cinnamon.

* Mix all together till crumbly to add on top of cake batter.

NOTE: you can skip adding the crumble,just dust the cake with icing sugar will be enough I think.

 

For the cake:

* 2 eggs.

* 1/4 cup brown sugar.

* 1 tsp baking powder.1 tsp vanilla.

*1/2 tsp baking soda.

* 3/4 cup applesauce.

* 1/2 cup vegetable oil.

* 1 cup white flour.

* 1/2 cup whole wheat flour.

* 1 tsp cinnamon.

* pinch of salt,nutmeg and cloves.

 

* Whisk eggs,sugar,oil and vanilla till creamy.

* add all other ingredients consequently.

* pour in a small baking pan and cover with crumble.

 

* bake in a medium heated oven for 35-40 minutes or till center is dry.

 

Cool and serve as slices with coffee or tea.

Homemade Applesauce.

Hello everybody.

Applesauce is a puree made from peeled or unpeeled apples and spices,it has several uses as a side sauce with meat,in cakes or to add flavor to yogurts or ice creams or simply as baby food.

A very good use is a substitute for oil or butter in cakes so you can make a very healthy kind of cake by reducing both oil and sugar in ingredients. That’s why when I looked at the apples in my fruit basket that everyone refused to eat I thought of applesauce, why waste them right? will search for a good recipe for it tomorrow.

Lunch was Mujadara with burnt onions and salad.

Ingredients and method:

* 4-5 big apples.

* 1 1/2 cups water.

* 2 lemon slices.

* 1 tsp cinnamon.

*  pinch of nutmeg.

* pinch of salt.

* Mix all ingredients and leave to boil and simmer till apples are tender.

* remove lemon slices.

* puree mixture in blender then sieve to remove rough parts and peel.

* store in a clean glass jar in fridge.

See very easy healthy useful thing to do with extra apples 🙂

Steak Sandwiches,Chips and Hummus.

Hello everybody.

Nobody answered what they wanted for lunch as always,only request was another plate of hummus cause it was  wiped out yesterday .

Searched through the blog,fridge,freezer and pantry then decided to make steak sandwiches,some potato chips with some veggies. Of course boys love this though I feel it’s a kind of Summer food but it was good as a change.

Was about to bake a cake but everybody objected,we ate too much last week ,enough for now !

How to Make Hummus?

Hello everybody.

Being locked in this snow storm made many people creative or let me say willing to try  stuff that are usually bought ready like hummus and falafel.

Hummus is high in iron and Vitamin C plus folate and  Vit B6 and a good source of dietry fibers,it’s very useful in vegetarian diets to compensate protein.

It’s not that difficult to make them from sctratch,I know many folks specially living abroad who always do, but in countries like us,the easiest cheapest meal is always a hummus plate with falafel or hummus fatteh, no need for all the fuss in the kitchen.

My cousin living in Greece made a a delicious hummus last week so I thought to share the recipe with you.

Ingredients and method:

* 2 cups of soaked ( a night before) boiled till done chickpeas.

* 1 big spoonful tahini saice.

* 2 big spoons full cream yogurt.

* 1-2 cloves garlic.

* lemon juice,salt .

* some olive oil.

* Mix all ingredients together in food processor till smooth and creamy.

*add a bit of chickpeas boiling water to make thickness as you desire.

* decorate with chickpeas,chili powder or parsley.

To make Humus Fatteh which is a Levant dish done mainly in Syria,Lebanon,Palestine and Jordan.you’ll need:

*  pitta  bread cubes or if you like use french bread (خبز حمام)

* make the same hummus mix but add more water and yogurt to make a loose sauce.

* before serving soak bread with chickpeas and water.

* add the hummus sauce.

* decorate with toasted almonds,pine nuts,chili powder and parsley ( didn’t have parsley today )

* serve hot for breakfast or appetizer .

Dry White Beans.

Hello everybody.

Guess many people cooked beans in this storm, actually it’s heart warming in this cold weather,specially with some pickles,peppers and olives.

Had a small chance to go grocery shopping today,first time out since last week,roads still slippery and full of snow, hope tomorrow will be better !

Zaynab Fingers or Tweitat.(اصابع زينب)

Hello everybody.

I guess everybody is still locked in today as well,weather was a bit better noon time but still freezing outside. Last night was phenomenal ,temperature reached -10 in some areas which is a rare thing to happen.

Lunch today wasn’t a big meal,frankly we’re all fed up from everything so I made a dish of avocado dip and fried some potatoes then topped them with herbs,garlic powder and cheese. We still have some shepherd pie from yesterday. very satisfying meal !

As for dessert I made Mom’s versions of this old Arabic sweet , baked Zaynab fingers or tweitat as some people call them. I know most people usually deep fry them but this recipe differs cause they’re baked not fried,less guilt for sure.

 

Though I posted the recipe before but I’ll write it again better for easier accessibility.

 

Ingredients and method:

2 cups plain flour.
2 cups whole wheat flour.
1 cup olive oil.( or half olive and half vegetable oil)
1 small spoon of instant yeast.
1 small spoon grounded fennel,anise and cinnamon.
Half a cup of sesame seeds. (سمسم محمص).
Half a cup of black seeds,I think they’re called sativa (الحبه السوداء.قزحه ).
1/2 cup sugar.
Pinch of salt.

For the syrup:
3 cups granulated sugar.
1 and 1/2 cups water.
1 small spoon lemon juice.
Boil all ,then leave to simmer till syrup is thick (30- 35 minutes).

*  Mix all ingredients then start adding warm water (almost a cup)  and knead well till you form a ball.
* Leave it to rest for half an hour then form it to small balls.

* Spread each ball on a grater and roll it to make it as fingers.(I use the hand grater)
*Bake in a well heated oven till bottom is brown.then roast surface as well.

Dip in syrup then remove..leave to cool and serve.

Multi-grain Soup.

Hello everybody.

Still have 2-3 freezing days to go, heavy snow since morning and expected icing this night ,they say it’ll be like never ever before !

Found this bag of Italian multi-grain mix bag in Select Food Shoppe last week, I soaked a cup last night so as to tenderize a bit for easier cooking.

Simple easy way to make this soup, you simply saute some chopped onions with some olive oil,add the soaked grains,salt,pepper and a bit of cumin then add 5 -6 cups water and a Maggi cube and leave it to cook in pressure cooker for 40-50 minutes. I added some small pasta and lemon juice as well. Of course you can add meat cubes if you like it richer.

 

I also made Shepherd Pie and some Za’tar buns for lunch.

Hubby’s Birthday Celebrations.

Hello everybody.

Big Intercontinental breakfast this morning or actually noon celebrating my beloved hubby’s birthday,his favorite dishes eggs in different kinds and cheeses, it was really a nice gathering since we seldom meet for breakfast, a benefit from this storm at least 🙂

We skipped lunch cause all was full and now we’ll have the cake he asked for Red Velvet and of course a must every year Cream Caramel also a big big favorite.

Hope you’re all having a good time in this cold weather, I know it’s boring and makes one eat a lot but what else to do ?
