Roasted Lemony Chicken and Potatoes.

Hello everybody.

As I mentioned yesterday we had a dinner gathering and I made a chicken and potato dish, which was incredibly juicy and well flavored cause of the awesome marinade I used.

 

Ingredients and method ( for 8  small pieces of chicken)

* zest and juice of one lemon and one orange.

* 1 tablespoon fresh or dry rosemary.

* 1 tablespoon oregano.

* 1 leaf fresh or dry sage (ميرميه)

* salt,pepper and olive oil.

*Marinate chicken in all these for a whole night or 3-4 hours minimum.

* in a deep oven pan,add some onion slices,bay leaves,cinnamon stick and few cardamons then add chicken with marinade close tightly with foil and leave in a medium heated oven for 1 1/2 -2 hours.

* when done roast chicken till golden then remove each piece to a deep serving dish.

* sieve remaining juices to get a clear fluid then add 1 tablespoon flour or starch diluted in cold water.

* leave to simmer till it thickens.

* You can bake some veggies or only potato cubes in another pan alongside also seasoned with rosemary,oregano,salt,pepper and a drizzle of olive oil.

* arrange potatoes around chicken pieces and drizzle sauce all over them before serving.

 

Really easy tasty dish,went well with the eggplant maqloubeh last night.

Milk Pudding with Almonds ( مهلبيه باللوز).

Hello everybody.

My mother in -law invited some of her friends for an early dinner today, main dish will be Eggplant Maqloubeh as requested and I made roasted chicken which will be posted tomorrow.

My part is to make a kind of dessert , was a bit in a dilemma of what to do then the idea just came right to me when my best friend asked me to do a rice or milk pudding for her dear father’s birthday today so I made a big quantity for her and us.

After searching for a new different recipe I decided to do this one from Nestle website,really good and almonds gave it a lovely crunchy taste.

 

Ingredients and method:

* 1 can sweetened condensed milk.

* 1 liter water.

* 2 big spoons rice flour.( رز مطحون)

* 2 big spoons corn flour.

* 3/4 cup finely crushed almonds.

* 1 tsp cardamon.

* 1 tablespoon rose water.

* 1 tsp crushed gum mastic ( mistika مستكه)

* 4 tablespoons powdered milk.

* some crushed pistachios and cherries for decoration.

 

* Mix all ingredients except rose water and gum very well with a hand mixer till all are combined.

* Over a high heat keep mixing till it’s bubbly and thick.

* add gum and rose water.

* pour in serving dish or small cups.

* when cooled decorate with pistachios.

* cool in the fridge for 2-3 hours.

NOTE: if mixture wasn’t thick enough when boiled you can dissolve another tablespoon of corn flour and add it to ensure good consistency.

Greens and Homemade Bread.

Hello everybody.

Seems all green veggies and herbs grew earlier after the snow cause I found some fresh fava beans and coriander ,beautiful fresh bunch of chicory and crisp green onions. All great with the ewe yogurt I brought from Irbid on Thursday.

I also got enthusiastic and decided to bake some bread like the one I did with msakhan, an incredible taste and as usual boys ate two loaves alone before I was done, this time I baked it on a grilling pan I use for burgers and steaks and it turned out great 🙂

Garlic Oregano Chicken with Veggies and Iranian Rice.

Hello everybody.

All requested a light lunch, we had a big mansaf the other day and boys made burgers yesterday so we’ll try to make it light for a few days.

I have some chicken breasts and various vegetables, so all was grilled in my thick grilling pan with garlic, ginger, oregano and a sprinkle of lemon. Veggies were carrots, peppers and broccoli.

Made some rice the Iranian way, recipe was posted by a friend in my page, very light and easy to do but I should’ve waited for potatoes to be toasted more but kids were hungry and couldn’t wait.

You simply soak rice in hot water for and hour then boil it till almost done in salted water. Then sieve it and place some oil and potato slices in the bottom of the same pan, add the rice and make holes in it,add some water diluted saffron and mix then cover with a clean cloth or foil and leave to simmer over very low heat till done.

Ahhh a hummus dish is our daily table friend nowadays, yummy yummy.

Big Family Gathering.

Hello everybody.

Lovely warm sunny day,perfect for today’s plan which was a big family gathering for most of the ladies in Huwwara-Irbid,my hometown. It was such a lovely event, I met many people whom I know only on Facebook face to face,we have a big various group,with members living all over the world but all share the same last name and origin.

As a contribution from banancooking I made a big strawberry pineapple cake.Thank God it was sufficient and everyone ate.

Before heading to the gathering I went to bring my order of “Irbid loaf ” we call it قراص عيد،a traditional kind of spiced loaf usually done in Irbid, today I bought some from a lady in Huwwara, yummy yummy 🙂

Oh very best part was a beautiful gift from my dear aunt Amani,a cake cutter or slicer. Thanks a lot my dear, a cake done with it is coming soon for sure.

Self-Saucing Chocolate Pudding.

Hello everybody.

As you may also noticed we’re Mansaf-ing today,and farewell treat to dear Haidar before heading back to Subway and frozen meals.As usual it was superb and we’ll done,my mother in-law’s specialty hope God give her good health and energy to keep on doing it :mrgreen:.
My part was the dessert, I arranged a small tray of sweets including fresh cream, honey, molasses and homemade halaweh with toasted bread sticks and made this new dish that was posted in my page from yummy yummy website which is self-saucing chocolate pudding.

Very easy to make plus it saves you time and effort to make a sauce or ganache for the cake .

Ingredients and method :
* 3 eggs .
* 1/2 cup butter .
* 1/4 cup coccoa .
* 3/4 cup sugar .
* 3/4 cup warm milk .
* 1 tablespoon Nescafe .
* 1 tsp baking powder .
*1 tsp vanilla.
* 1 cup chocolate chips or any kind of milk chocolate .
* 2 cups flour .

For the syrup :
* 2 1/2 boiling water .
* 1/2 cup sugar .
* 2 big spoonful of coccoa .

* whisk eggs,vanilla ,sugar,butter with milk and nescafe till frothy .
* add dry ingredients ( flour,coccoa and baking powder )
* fold in chocolate chips .

* mix syrup ingredients well.
* pour chocolate batter into a greased deep pan.
* pour hot syrup on top .
* bake in a medium heated oven for 40 minutes .
* you’ll have two separated layers of cake and pudding or thick syrup under it.
* serve alone or with vanilla ice cream .

Homemade Halaweh (حلاوه بيتيه).

Hello everybody.

Lots of events today,started with a lovely breakfast gathering with my beautiful friends at Al Narenj restaurant located in Abdoun, highly recommended by the way, delicious food,excellent service and very relaxing atmosphere plus very reasonable price. Food is Middle Eastern and various,we were really full and satisfied. Definitely going back for lunch or dinner soon.

Lunch was light,broccoli soup,mushroom and cheese quiche ( same as spinach but used mushrooms instead) and some za3tar cheese pastries I did yesterday.

After lunch I decided to try a recipe my dear young cousin ,who’s a newly wed by the way but showing great cooking skills ,posted this afternoon on my page which is homemade halaweh. A product usually bought ready from stores and not a usual at all to do at home, never thought it would be so easy to do,even simple available ingredients.

Well it’s firming up in the fridge right now but I did taste it and it’s awesome, thank you lovely Mouna for the new adventure 🙂

Ingredients and method:

* 1 cup powdered milk.

* 1 cup powdered sugar.

* 1 cup tahini sauce.

* 1 tsp cardamon.

*1 tsp vanilla.

* some pistachios to garnish.

 

* Mix sugar,milk,vanilla,cardamon well then add tahini till all mixed,you may need less quantity of tahini so pour it slowly till you get a soft paste.

* press paste in mold or jar and garnish with pistachios then leave to cool in fridge.

 

That’s it,ready to go !

Banan Cooking 1’st Anniversary :)

Hello everybody.

Today marks the first anniversary of my blog banancooking,now I can assure you that time flies when you’re having fun cause I really didn’t feel it’s been a year already!

I never thought that a small idea in a Friday noon could develop to this,hopefully to more bigger ideas and accomplishments in the future but I guess!

Well it seems that flow of thoughts and creative ideas do come out when you insist on doing something you like, I never thought that I can do it on daily basis but here I am ! it’s been an exiting eventful one for sure with growing followers and members in my Facebook page, I now feel they’re part of my daily life whether I’m posting new recipes or thoughts or answering various questions, I’m really enjoying every minute and hope to keep on doing more work .

Love you all members and supporters it wouldn’t have come this far without you all.

 

Walnut Rolls ( برمه او لفائف الجوز)

Hello everybody.

Sorry for the delay but I was tied up and busy.

Since it’s still so cold till now and you feel yourself needing something really sweet to warm up I decided to do this kind of wintry dessert.

Remembered this dish last night ,ate it many years ago at a gathering done by a relative, called her today to recall details and ingredients and she was really sweet to give me the exact small ones.It’s called Burma or simply Walnut Rolls.

 

Lunch was stuffed cabbage,a favorite on our table all times.

Ingredients and method:

* 1 pack phyllo pastry leaves ( رقائق الهنا)

* 2 cups finely crushed walnuts.

* 1 tablespoon cinnamon.

* 1 tsp cardamon.

* 1 tablespoon rose water.(ماء ورد)

* 1 tablespoon blossom water ( ماء زهر)

* 1 tablespoon sugar (optional)

*some vegetable oil in bottom of a Pyrex.

*thin long piece of metal (  I cut a part of metallic clothes hanger)

* 1 1/2 cup sugar syrup ( قطر)

 

* cut the phyllo sheets to in half.

* mix walnuts with cinnamon,cardamon,rose and blossom water.

* spread one sheet then place the wire in half and add one spoonful of walnut mix.

* cover with other side of sheet and roll with wire inside.

* close up the side of roll till it form wrinkles.

* remove wire slowly then place in the oiled Pyrex and so on till all sheets are used.

* bake in a very hot oven till crispy from bottom and surface.

* while still very hot pour cold syrup on top.

 

Wait till it cools and serve, absolutely delicious specially with a cup of Turkish coffee.

Double Meat Pasta.( معكرونه بالسجق والدجاج)

Hello everybody.

Grocery shopping today, had to think of something quick to make  cause boys were hungry and I had no time so I bought stuff for this recipe my cousin made yesterday , it was absolutely delicious, so from now on it’s Manal’s Pasta.

This dish is suitable for meat lovers cause it contains both beef sausages and chicken with lots of garlic,a rich tasty combination.Of course you can use one kind alone up to you but both together are very homogeneous <3

 

Ingredients and method:

* 1 cup chopped sausages.

* 2 pieces chopped chicken breasts.

* 4-5 cloves of garlic.

* 1 bunch finely chopped fresh coriander.

* 1 pack or bottle pasta sauce.

* 1 pack (500 ml) fresh cream.

* pasta of any shape.

* salt,pepper and chili powder.

* grated Mozzarella cheese.

 

* saute sausages in olive oil till tender and brown in color.

* add chicken, salt,pepper and chili and saute alongside till almost done.

* add garlic and saute with them.

* add salt,pepper,chili and some garlic powder if you want a stronger garlicky taste.

* add the tomato sauce over all meat mix.

* add the cream,stir and mix till bubbly.

* add the boiled pasta and mix well.

* cover and leave to simmer for 15 minutes.

* add cheese on top and roast in the oven till golden.
