Rock Cookies Gift

Hello everybody.

Went to a lovely gathering at a newly wed friend’s house, we really had a great time, different generations all together around a delicious elegant variant table. Thank you sweet cheerful Nisreen we really had great time.

Because Friday is usually a long  day and afternoon went so slowly I was really bored that I suddenly decided to bake some Rock Cookies last night to take some with me.

I even created a box to fill them in,I wrapped an old  Lindt chocolate box  with gift’s paper then added a small decorative flower, never throw away these small things on chocolates or giveaways you never know when you’ll use them .

Lunch today is simple basic pasta with minced meat and tomato sauce with some leftovers from yesterday.

Friday Lunch.

Hello everybody.

Though general atmosphere in all Jordan is still sad and angry after the tragic passing of away of the Jordanian pilot but I’m sure he’s included in all our prayers all the time.R.I.P Muath Kasasbeh.

Lunch today was kofta with tomatoes and potatoes on top, Iranian rice, avocado dip, roasted courgettes and hummus. I tried to use all vegetables and stuff in the fridge in order to clean and rearrange the fridge for tomorrow’s shopping.

Greek Moussaka.

Hello everybody.

Prepared and bought this dish ingredients since Saturday, since my youngest is on a trip so it’s an opportunity to cook it cause he usually grumbles when I make it.

Though I did post it long time ago but i’ll write it again, today’s photos are much nicer than the beginning ones. Greek moussaka is a different version of (منزله باذنجان) cause it has white sauce on top and you can add veggies with it , today I added some potatoes and courgettes.

 

Ingredients and method:
* 1 cup cooked minced veal.
* 2-3 large eggplants.
* 2-3 potatoes. (optional).

* 2-3 sliced courgettes (optional)
* thinly sliced green peppers (optional).
* 1 small onion finely chopped.
* 1 clove garlic.
* 1 big ripe tomato. Peeled and chopped.
*1 spoon tomato paste.

*moussaka spices which are a blend of all spice,nutmeg,cinnamon ginger,oregano
* 2-3 cups white sauce (bechamel).
*  mozzarella cheese for topping.

* saute onion, garlic with meat till tender then add chopped tomato and paste, season with salt and pepper and leave to simmer for 15-20 minutes.
* cut eggplants and potatoes to circles, sprinkle with salt and leave for 15 minutes to drain.
*  cook sliced potatoes in boiled water till half done.

* microwave courgettes for 3 minutes till tender.

* sprinkle eggplants with olive oil and roast in the oven till golden or you can deep fry them as well.
* layer potatoes ,courgettes and half of eggplants and green peppers in a deep oven pan.
* add meat tomato sauce.
* layer the other half of eggplants.
* pour all white sauce on top.
* cook in the oven in low heat for 30-40 minutes then sprinkle grated cheeese on top and roast.
* serve hot with Greek salad .

Hummus with Sweet Potato.

Hello everybody.

Boiled some chickpeas this morning, hummus is a good low carbohydrate high in protein dish so it makes a good appetizer or even a breakfast choice.This time I tried it with a piece of boiled sweet potato as my friend Mary advised one, really yummy and added smoothness to the hummus.

I also made the special salad as they call it in restaurants thee palmetto artichoke mushroom and baby corn salad with a creamy dressing of mustard,mayonnaise,lemon,balsamic,herbs and olive oil. A fancy dish for sure .

Main dish was chicken curry from yesterday.

After Eight Cake.

Hello everybody.

Busy Saturday as usual,many errands and work at home plus cooking and baking a cake, but all was done by time to go to the gathering at my uncle’s house.

I promised my auntie to bring something sweet and after searching a lot for something new and different ended up taking this recipe from my dear friend Ola,turned out really yummy everybody loved it.

Lunch was chicken curry and chicken giblets ( قوانص).

Ingredients and method:

* 3 eggs.

* 1 cup sugar.

* 1/2 cup vegetable oil.

* 8 small spoons cocoa.

* 2 tsp baking powder.

* 1/2 tsp bicarbonate.

* 1 big spoon peppermint essence.

* 1 1/2 cup flour.

* 1 cup boiled water.

* 1 pack After Eight.

* 1 pack cream.

 

* Beat sugar and oil well till creamy then add eggs,vanilla,mint,cocoa, baking powder, soda and flour.

* In a small baking greased baking pan pour batter and directly add a cup of boiled water on top.

* bake in a medium heated oven for 35-45 minutes or till surface and center are dry.

* On a water bath melt 10-15  After Eight pieces and whisk till they melt then add the cream and mix well.

* when cake is cooled cover with minty ganache and decorate as you like.

 

Afternoon gathering was nice as usual,we had tabouleh,yalanji,chicken pastries,oregano loaf, salad and cheese cake all yummy yummy 🙂

Reef Pizza.

Hello everybody.

No intention to time to cook today so best solution was Pizza,to tell you the truth before this blog thing we used to bring pizza every other weekend sometimes. Just realized today that it’s been really a long time since we ordered food.

We usually order from this same pizza place,same taste and quality since it opened many years ago. Al-Reef pizzeria, thin crust on wood with many kinds and toppings to your liking.

Dry Fruits Cookies.

Hello everybody.

Was privileged by a visit from my dear uncles this morning,e had coffee and Coconut Jam cake, a favorite of my best uncle Ziad, I was really happy he ate from it cause I know how much he loves coconut.

Started cooking lunch after they left which was upon kids request ” Shakshouka” and some baked beets. Did them a different way than usual, wrapped in foil then baked till tender , yummy and easy.

My son invited some of his friends over so I baked some mixed dried fruits cookies and prepared a chocolate chip giant skillet cookie to bake when they arrive. I actually prepared a basic batter then divided it to two portions one with fruits and one with chocolate.

Basic cookie dough is:

*1 egg.

* 3/4 cup butter.

* 1/2 to 3/4 cup brown sugar.

* 1 tsp vanilla.

*1/2 tsp bicarbonate.

* 1 tsp baking powder.

* 1/2 cup oats ( optional)

* 1 1/2 cups flour.

* pinch of salt.

* beat butter and sugar till creamy then add egg and rest of ingredients then you can add any kind of nuts,dried fruits,dark or white chocolate or marshmallows.

* spoon a walnut size amount of dough and place in a big oven pan.

* bake in a medium heated oven for 10-13 min max.

* I decorated today’s cookies with some melted chocolate.

Strawberry Jam.

Hello everybody.

The minute I started writing today’s  I saw a sad post on Facebook,my cousin and friend’s mom just passed away now, feel so sad it’s a big loss for sure, she was such a lovely old lady whom I saw only last Summer with a sweet smile and kind heart . R.I.P Om Azmi and my deep condolences to all her family.

Today’s lunch was mallow with onions and oil and I emptied strawberry jam in jars for giveaways and usage.

I also made some fresh cream cheese to go with jam and toasted bread 🙂

Coconut Jam Cake.

Hello everybody.

My hubby’s friends are coming over tonight,I had no idea of what to do till I came back from a visit to my uncle’s house at noon, guess once you enter the kitchen ideas will flow.

Result was some cheese and chicken pastries,fruit salad and a beautiful cake that I found in Jammie Oliver’s website,it’s a typical British cake served usually at tea time.I used my new cake slicer to make 4 layers of it then stuffed each layer  with strawberry jam, cream and coconut.

Lunch was lasagna and a dish of labaneh with  hedge mustard ( حويرنه)

Ingredients and method:

* 1 1/2 cups butter.

* 1 1/2 cups sugar.

* 4 eggs.

* 1 tsp vanilla.

* 1/4 cup milk.

* 1 1/2 cups flour.

* 2 tsp baking powder.

* Strawberry jam.

* whipping cream ( 2 cups)

 

* whisk butter and sugar till creamy then add eggs,milk,vanilla.

* add flour and baking powder.

* add either whole batter in one deep baking pan or two small ones.

* bake in a medium heated oven till done and center is dry.

 

* cool then slice cake to four pieces.

* assemble layers by adding jam,cream then coconut between each layer.

* cover all layers with remaining cream and decorate with coconuts.
