Beetroot Apples Dip.

Hello everybody.

What a busy eventful day, nonstop activities since morning which started by a gathering at mom’s for my dear aunties , lovely ladies with so many old stories to tell. I made some spinach pastries and almond pudding,mom made za’tar cookies and orange cake.

As for lunch at home I made this lovely bright beetroot apple dip or salad that my sister told me about since beetroots are in season  these days,this can be a very nice healthy dish to make instead of processed ready dips.

Ingredients and method:

* 2 large beetroots boiled or baked.

* 2 apples.

* 2 tablespoons mayonnaise.

* 2 tablespoons labaneh.

* 2 tablespoons crushed walnuts.

* salt and pepper.

* grate beets and apples then squeeze them with your hands to remove all excess water.

* mix mayonnaise,labaneh,walnuts,salt and pepper.

* add beets and apples then mix well.

* put mix in a bowl then leave in fridge a bit .

* turn it upside down and serve with chips or toasted bread.

Then I went out with my lovely college friends to Yoshi for sushi, though I’m not a fan of it but food was great and atmosphere and service were excellent, company was the best part of the evening as always.

As soon as I arrived back home my aunt and her lovely daughters passed by and brought Falafel sandwiches, unfortunately I was full 🙁 though I love it, again it’s the company that matters. Love you 3amto <3.

Banana Caramel Pie.( فطيره الموز والكراميل)

Hello everybody.

Craved something sweet last night or actually I saw this recipe on TV couple of days ago,bought puff pastry Saturday so as to do it when the occasion pops up.

It’s a very easy dessert that you can do anytime you have sudden guests, just keep a pack of puff pastry always ready in your freezer and I guess bananas are always available most of the times.

 

Ingredients and method:

* 1 square pack of puff pastry.

* 1 cup sugar.

* 1/4 cup water.

* 1 tsp butter.

* 5-6 big bananas.

* a sprinkle of cinnamon.

 

* In a deep oven skillet or pan add sugar and water, heat till caramelized and golden.

* add butter then cut bananas to medium sized pieces and arrange over caramel.

* sprinkle with cinnamon.

*roll the pastry to a big circle then cover all over bananas and secure edges.

* bake in a well heated oven till pastry puffs and become golden.

* while still hot turn it upside down quickly.

* serve with vanilla ice cream or whipping cream.

Lunch today was frittata ( عجه) and I made some spinach pastries and rest of dough I baked it in a deep pan and made a loaf.

Kebab with Tomatoes ( كباب هندي)

Hello everybody.

Had to go  to Irbid this morning so I needed to cook something quick, after giving the boys two options kofta or spinach they agreed on the first, I even cooked the onions and tomatoes last night to save time.

Early this morning I added ketchup, mustard and  to kofta, made them finger shaped,sautéed them in some oil then added them the the sauce, I even cooked the rice in case I was caught up in time which is exactly what happened.

Ingredients and method:

* kofta meat ( ready from butcher)
* onions.
* garlic.
* tomatoes.
* green peppers.
* 1 can chopped tomatoes
* 1 spoon ketchup and mustard.

* mix kofta with ketchup and mustard.
* form it to small kebabs finger shaped.
* coat them with flour then keep in fridge for a while.
* heat some olive add the kebabs till brownish from all sides.
* add chopped onions, garlic, peppers sautee with meat till tender.
* add 2 peeled chopped  tomatoes and the can.
* leave to simmer for 30-40 minutes. Or you can put it the oven if you like.
* serve with rice.

Gundelia عكوب.

Hello everybody.

Finally found some good quality Gundelia or عكوب cause I bought some from a roadside boy last week that were unfortunately not good at all I actually throw them away.

This plant or even bush is usually found this time of the year in the wilderness, well known in the Levant region and cooked in various ways either with meat as stew or with cooked yogurt or as I did them today sauteed with onions and garlic with olive oil,salt and pepper. Really good and very nutritious by the way but problem is that it has so many thorns in them so you have to clean them very well and make sure you remove all thorns usually using scissors.

To compensate the not so romantic meal I made a red healthy romantic juice containing strawberries,pomegranate,kiwi and cranberry juice.

Top story today was different photos of people celebrating Valentine’s day ,too extreme I think 🙂

Yemini Mendi and Digestive Log.

Hello everybody.

Planning  to cook this dish a month ago or actually since my cousin posted it in my group,this is a traditional Yemini dish usually bought ready here from several restaurants.

My husband bought a pack of ready mixed Mendi spices and I added a bit of the spices originally in the recipe, I also used local chicken that my husband brought from the farm.

I  also made this super easy dessert cause I have some cream left from yesterday’s cupcakes thought I’d use them, you simply stack plain digestive biscuits with cream in between,I added some coconuts also , then you cover all with cream, leave to cool completely then top with chocolate ganache all over and decorate, looks a lot like Christmas Log Cake and looks very elegant , a nice idea for Valentine tomorrow right?

 

Ingredients and method of Mendi:

* Marinade for chicken:

* Ketchup.

* olive oil.

* salt,pepper,coriander,cardamon,cloves.

* bay leaves.

* copped onions and garlic.

* Marinade chicken pieces in all these for two hours then cover and leave in a medium heated oven 1 1/2 -2 hours then roast till golden.

 

* Rice:

* saute some sliced onions and garlic till golden.

* add one grated carrot.

* wash the rice and add it on them.

* add same spices as above then add add water and leave to simmer till rice is done.

*Note: use basmati rice or long .

 

* When rice and chicken are done arrange all in a deep serving dish then heat a piece of coal till very hot and red then add some oil on top and place it in the middle of rice chicken dish and cover for 15 minutes so as to give a smoky flavor to the whole dish.

* serve with roasted raisins,Tabasco and green salad.

Valentine’s Day Ideas.

Hello everybody.

No cooking today so I decided to do some cute dishes for Valentine’s Day which is coming up in the next few days or you can even make them in anniversaries or birthdays.

I made these cute little pies with beets and remaining pieces turned to a small salad then made Red Velvet cupcakes and used smashed beets instead of food coloring but seems I over baked beets cause color turned so dark not red, results looked like a chocolate cupcake rather than a red velvet, taste was pretty good .

 

Ingredients and method of beet pies:

* puff pastry squares.

* some olive oil,salt and pepper.

* boiled or baked beetroot.

* feta cheese or blue cheese as you prefer.

* walnuts.

* balsamic vinegar.

 

* make heart shapes ( small or big) with cookie cutters.

* spread puff pastry squares on  wax paper then prick them with a fork so as they won’t puff a lot.

* brush with olive oil,salt and pepper.

* line up the beets then bake in a medium heated oven for 30 minutes or till puffs are golden.

* sprinkle feta cheese or blue cheese, walnuts then drizzle with condensed balsamic vinegar.

 

As for the red velvet I took the recipe from a nice food blog called little sunny kitchen , very easy recipe that uses beets instead of food coloring.

Veal Escalope and Potatoe Skins.

Hello everybody.
Though I still have some cauliflower from yesterday but nobody accepted the idea to eat from it again,so rather than making something small with it I decided to keep it in the freezer and make something new.

After searching in  my Beef cookbook for something different to do I made this recipe, though I have previous failures in cooking veal this way but I liked this one and result was great, veal was tender inside and crispy from outside.

On the other hand I baked potatoes instead of making fries so as to try to minimize the damage, when done I sliced them lengthwise, removed pulp and mixed it with cream cheese, cheddar cheese, herbs and chili powder, filled potato skin again and roasted them.

Ingredients and method of veal:
* lean pieces of veal.
* one small grated onion, salt, pepper, mixed herbs and paprika.

Egg batter:

* 1/2 cup flour.
* 3 eggs.
* 2 tablespoons milk.

* Coating:

* 2 cups breadcrumbs.
* 2 tablespoons Parmesan cheese.
* some herbs and paprika if you like.

* rub spices, onion and herbs all over veal.
* mix flour, milk and eggs very well.
* coat veal with egg batter.
* coat with breadcrumbs Parmesan mixture.
* refrigerate for 1-2 hours then deep fry in very hot oil till golden.

Serve with potatoes and salad, made Ceazar today.

Cauliflower Stew.

Hello everybody.

Had to go many errands with my hubby this morning so a quick somewhat half cooked dish is required.

Thought to do okra but then cooking the meat will take some time since it’s still in the freezer,so thought was dismissed and shifted to cauliflower with minced meat stew since I already have cooked meat and boiled cauliflower just tossed them all with sautéed onions and garlic added a Maggi cube and some water. Served with tahini sauce and summaq.

I also made some lentil soup cause my youngest doesn’t eat cauliflower at all.

Burger in a Bun and Ka3ek.

Hello everybody.

Made this awesome dough today,recipe was posted last week on my page done on Roya TV during cooking segment.

Most important thing is to use exact ingredients to get the required Ka3ek taste,we usually buy this kind of bread from bakeries specially the one located downtown called Nasser El-Deen,well these today tasted almost the same and I’ll certainly do them again.

I filled half the dough with half cooked burgers,cheese, tomatoes and ketchup. Ready to be eaten right away, kids just love these.

Dough ingredients :
* 6 and extra half cups flour.
* 2 tablespoons oil.
* 1 tablespoon instant yeast.
* 2 tablespoons sugar.
* 2 1/2 cups lukewarm water.
* 2 teaspoons salt.
* 1/2 cup milk.
* some sesame seeds.
* some semolina to sprinkle under the Ka3ek.

* Mix water,yeast and sugar and leave ten minutes till bubbles are formed.
* Mix flour,salt and oil then add yeast and water and knead well.
* leave in a warm place till it rises ( 1-2 hours)
* knead again then form it to loaf shape or place a metal ring inside to make a circle in the middle.
* Brush with milk and sprinkle sesame seeds in top.
* leave to rise again then bake in a well heated oven for 15 minutes.

As for the buns just spread it add burgers, tomatoes, cheese and ketchup then close all and bake.

Shushbarak and Jam Biscuits (شيشبرك ومبروشه)

Hello everybody.

Lunch today was a quick easy thing to do ,specially that I already bought ready made Shushbarak yesterday and I already have fresh ewe yogurt from Irbid so I just cooked the yogurt and added pastries to it.

I also made some carrot soup and a pan of jam cookies or mabrousheh as we call it, since so many asked about it all the time I’ll add the recipe again here today.

Ingredients and method:

1 large egg.
1 tsp vanilla.
3/4 cup butter.
1/2 cup sugar.
2 cups flour.
1 tsp baking powder.
Pinch if salt.
2 cups oj jam of any kind you desire diluted in a bit if water.
Beat the egg.vanilla.sugar and butter well till mixture is creamy and fluffy.
Add the flour.salt.baking powder ,,, keep mixing till dough is stiff and you can hold it without sticking to your hands…form it into a ball.
Spread 3/4 of the dough into a baking tray..spread jam on top.
To the remaining dough add extra 3/4 or 1 cup flour and spin it in food processer till it forms fine crumbles…then sprinkle them over jam.
Bake in medium heat oven for half hour or until sides are brownish..then use the upper flame of oven to toast the top.
Leave to cool well, then cut to squares and serve.♡♥♡♥
