FISH!

Hello again.

Lunch today was a big fish in the oven stuffed with garlic, onions, tomatoes, parsley, lemon, salt,pepper, chili and cumin with a drizzle of olive oil on top.

Of course with its companions French fries, fried bread and tahini parsley salad.

Fruit Pizza.

Hello everybody.

Did this dessert two weeks ago but had to wait for May issue of Family Flavors so as to be able to post it.

Remember the berries I bought? well I used them to decorate this lovely sweet pizza ,very nice looking one.

Ingredients and method:

*   Pizza Crust :

* 1 egg.

* 1 tsp vanilla.

* 3/4 cup butter.

* 1 3/4 cup flour.

* 1 tsp baking powder.

* dash of salt.

* 1 tablespoon cold water.

* Mix all ingredients to form a soft dough then spread it in a pizza pan and bake in a medium heated oven till golden.

* Spread any kind of filling on top like custard,pudding,cream cheese frosting or whipping cream.

* decorate with any fruit you like in a nice shape and serve.

Humming Bird Cake.

Hello everybody.

Did this beautiful cake for my best friend’s son birthday, a traditional American recipe full of flavors and looked elegant as well.

Ingredients and method :
# 3 eggs.
# 1 1/2 cups suger.
# 3-4 ripe bananas.
# 1 can pineapple with syrup.
# 3/4 cup vegetable oil.
# 3/4 cup crushed walnuts, almonds or pecans.
# 1 tsp vanilla.
# 2 tsp baking powder.
# dash of salt.
# 1 tsp cinnamon.
# 3 cups flour.

Cream cheese frosting:
# 1 pack cream cheese.
# 1/4 cup icing sugar.
# 1/4 cup butter.
# some roasted crushed nuts.

# Beat eggs with vanilla, sugar and oil till creamy.
# mash and mix in blender bananas and pineapple can all together.
# add puree to cake mix.
# add rest of ingredients alternatively.
# bake in two small pans or one if you don’t want it layered.
# bake in a medium heated oven for 30-40 minutes or till dry from inside.
# beat frosting ingredients well and cool in fridge till stiff.

Decorate cake with filling inside out.

Chicken on a Can.

Hello everybody.

Found this can stand that I bought long time ago and thought I’d try it.

This recipe is originally done with a beer can,well I won’t use beer for sure so I used non-alcoholic one.

Just rub the chicken with all spices,garlic,chili , butter and lemon slices then pour 1/4 of the can in the pan and place the chicken over the can and bake in the oven for hour and a half.

Crispy and yummy.

Kofta with Tahini Sauce.

Hello everybody.

Today I splitted the cooked kofta balls into two pans to satisfy all family members.

One pan with onions, garlic, potatoes and tomato sauce for the boys and the other with some potatoes and tahini sauce on top. All then in the oven till a bit roasted.

Love kofta with tahini and this was the only solution to eat it cause mostly I’ll eat it alone, don’t mind that at all :mrgreen:

Grandma’s Pasta and Tuna Salad.

Hello everybody.

Mid week light meal, we usually have one either Tuesdays or Thursdays, no meat, chicken or heavy cooked stuff.

Each one of the boys wanted something and since they’re both easy and needs minimum effort I did the two.

Old fashioned local pasta with local white cheese and parsley or as we used to call it Teita’s pasta,simple delicious one I even bought the old kind (Ghazal number 1) a must for this dish.

Other one was tuna salad, made a rich dressing containing mustard, mayonnaise, relish, chili jam, lemon juice,oil and salt then added all salad ingredients and tossed everything together, fresh and nutritious.

Cranberry Orange Muffins.

Hello everybody.

Babysitting my adorable nephew today, thank God I have leftovers for lunch cause he’s such a polite cute bundle but I got busy with him,well it’s been such a longtime since I took care of a baby. God bless them all.

In my free time while he napped, I made these muffins, new recipe I found so as to use the last box of berries, very easy and tasty.

Ingredients and method :
# 2 eggs.
# 1/2 cup sugar.
# 1/2 cup brown sugar.
# 1/2 cup vegetable oil.
# zest of an orange or as I did today 1 tablespoon marmalade.
# 1/2 cup sour cream or yogurt.
#1 tsp vanilla.
# 1 tsp baking powder.
# 1 tsp cinnamon.
# 2 cups flour.
# 3/4 cup flour dusted cranberries.

For the topping :
# 1/2 cup sugar.
# 1/2 cup flour.
# 1/4 cup butter.
# 1/4 tsp cinnamon.

# beat eggs, sugar, oil and zest till creamy.
# add yogurt, cinnamon, vanilla.
# add flour and baking powder.
# dust cranberries with flour then fold into batter slowly.

# pour till half in muffin paper.
# make topping like crumbles with your hands then sprinkle on top.
# bake in a medium heated oven till golden ( 20-30 minutes) .

Eggplant Appetizer.

Hello everybody.

Got some fresh vine leaves yesterday so better to cook them immediately, hate freezing fresh stuff feels like a waste of something valuable.

So I stuffed some courgettes with them, best dish ever. Plus I made this appetizer that my Italian cousin posted yesterday.

You simply grill your sliced eggplants after salting them then add sliced tomatoes, minced garlic, chopped parsley, lemon, salt and oil on top before serving, I even added some olives turned out absolutely delicious.

Happy day with good food and best friend coming for a short visit.

Armenian Freekeh and Pineapple Salad.

Hello everybody.

Interesting and joyful atmosphere at Botma market this morning, been intending to go every Saturday but hadn’t got the time till now.

You can find a wide selection of seasonal veggies and herbs plus many jars of delicacies like jams and spreads,all looks fresh and healthy. Market is open each Saturday from 9-2 don’t miss it.

Well I certainly shopped some things including lettuce and baby spinach immediately made a big bowl of salad with fresh pineapples and walnuts.

Lunch was Armenian Freekeh with onions, mushrooms, cream and cheese with chicken breasts on top.

Raseberry Lemonade.

Hello everybody.

Gardening today,went to our usual place and bought lovely new plants and flowers.

Lunch was a quick Shakshouka a favorite anytime, I also made a small Greek salad and a pitcher of raseberry lemonade since I have some, thanks to my cousin Ghada who mentioned the idea.

A very refreshing cool drink specially after working out.

Ingredients and method :
* 1 cup sugar.
* 1 cup water.
* 3/4 cup raseberry.
* juice of 4 lemons.

* boil water and sugar till a bit syrupy.
* mash raseberries of blend then add to syrup through a mesh.
* add lemon juice.
* mix well then pour into ice and 4 cups of cold water.

That’s it!
