Egyptian Cookies Again.

Hello everybody.

Actually order is for tomorrow but I usually like to make cookies a day before cause they are more tender the next day. Kind of settle down and flavor is much better.

Here’s the ingredients again :

Ingredients and method :
# 2 cups fine semolina.
# 4 cups flour.
# 2 cups butter or ghee ( I used 1/2 ghee, 1 butter and 1/2 vegetable oil)
# 1 tablespoon anise powder.
# 1 teaspoon fennel powder.
# 1 tsp special cookie spice (كلفه كعك)

#1/2 tsp mihleb

#1/4 tsp mistaka.

#2 tablespoons sesame seeds.
#1/2 cup sugar.
# 1 tsp instant yeast dissolved in 1 tablespoon sugar and a cup of warm water.
# 2 tablespoons rose water.

# pitted dates mixed with cinnamon, cardamom, cloves and anise powders.

# Heat butter then mix with semolina, flour and all spices very well till crumbly.
# leave for 2-3 hours or better overnight till all butter is well absorbed.
# add frothy yeast and water and mix all well.
# add rose water and knead all together.

# start working right away by stuffing small portions of dough with dates and shape them in the molds.

Cookies and Crinkles Again.

Hello everybody.

Today’s order was all cookies and crinkles again, love baking cookies specially sometimes they just come out really perfect.

Made chocolate, lemon, ginger and red velvet crinkles, rock and peanut butter chocolate cookies.

Another small order was baked Zaynab fingers.

Another Date Rolls Baking Day.

Hello everybody.

Another day of baking, date rolls are a favorite to many. They’re actually really yummy and healthy.

I’ll post ingredients and method again :

Ingredients and method:
* 5 cups flour
* 4 cups whole wheat flour (طحين اسمر ).
* 1 cup vegetable oil.
* 1 cup olive oil.
* 1 cup margarine or ghee.
* seeded and ground dates (2-3 packs).
* 1/2 cup sugar.
* 1 tsp sodium bicarbonate.
* 2 big spoons ground anise (يانسون ).
* 1 big spoon ground fennel (شومر ).
* 1 big spoon cinnamon.
* 2-3 spoons sesame seeds and black seeds ( سسمسم وقزحه ).
* 1 small spoon mahaleb (محلب )
* mix all oils and spices with flour well till it forms crumbles and leave overnight so as flour absorbs all oils and essences.

* to the dates add olive oil, cinnamon, anise powder, nutmeg, cardamom . A little sprinkle just to add some flavor.

* add warm water to flour enough to make a dough 1-2 cups..it must be easy to handle not hard nor soft.
* cut dough and dates to four portions.
* roll one part of dough to a big  thin rectangle between nylons.
* roll dates all to same size rectangle between wax paper or nylon.
* place date over dough and cut unorganized edges.
* roll dough and dates together 3 or 4 rolls.
* cut to 1 inch slices then pat with your hand to flatten them a bit.
* with a sharp knife cut surface to small lines.
* bake in a medium heated oven till bottoms are golden and then toast surface a bit.
* store in a cookie jar or well sealed box.

 :المقادير:
* 5 كاسات طحين ابيض
4 كاسات طحين اسمر
* 1 كوب زيت نباتي
* 1 كوب زيت زيتون
* 1 كوب سمنه او زبده
* 2-3 باكيت تمر مطحون

* 1/2 كوب سكر

* .1 ملعقه صغيره بايكربونات
* يانسون 2 ملعقه كبيره يانسون مطحون
.1 ملعقه كبيره شومر مطحون
* .1 ملعقه كبيره قرفه
* 2-3  ملعقه كبيره سسمسم وقزحه
* 1محلب ملعقه صغيره
*     تخلط جميع المقادير مع بعض جيدا قبل بليله او على الاقل 4-5 ساعات ما عدا التمر طبعا ويفرك الطحين جيدا بالزيت والسمنه

*( يرش التمر ياليانسون والفرقه والهيل ويفرد بين نايلون ويرق ليصبح طبقه رقيقه جدا( استعيني بزيت الزيتون على النليلون حتى لا يلزق التمر

* يضاف ماء فاتر بالتريج الى العجينه حتى تصبح متماسكه وطريه

* ترق العجينه بنفس طريقه التمر بين النايلون

* (توضع طبفه التمر فوق العجينه برفق وتلف رول (لفتين  فقط

* تقطع الرول الى قطع صغيره وتصف في الصواني

* يزين الوجه بواسطه سكين

* تشوى في فرن متوسط الحراره حتى تحمر

* تحفظ في علب محكمه حتى لا تنشف

بسكوت اللوز الهش.

مساء الخير.

اليكم اعزائي وصفه بسكوت اللوز الهش.

المقادير :
بياض 3 بيضات
3/4 كوب سكر
1/3 كوب زيت نباتي
1/4 كوب طحين.
1 ملعقة صغيرة فانيلا
1/2 كوب مطحون او شرائح رفيعة.

اخفقي بياض البيض مع الفانيليا جيدا حتى يصبح ابيض وكثيف.
اضيفي السكر والزيت والطحين.
اضيفي اللوز وحركي بمعلقه خشبية برفق.
ادهني صينيه الخبيز بزيت جيدا ورشه طحين.
ضعي مقدار معلقة كبيره من العجينه على الصينيه وافرديها لتصبح دائره رقيقة بحجم حبه البسكوت.
حمي الفرن لدرجه حراره 180 واخبزي البسكوت لمده 10 دقائق او حتى تصبح الاطراف ذهبيه.
اتركيها لتبرد تماما.
يمكنك لف البسكوت ليصبح على شكل مقعر على كاسه وهي ساخنه لتعطي شكل جميل.

Almond Tuilles.

Hello everybody.

Today’s order was various, both salty and sweet stuff. One was za’tar puffs and cheese cookies the other was chocolate,ginger crinkles and sable.

Sometimes when the order is for a close friend I love to try something new for testing and feedback,today I did these super easy crispy thin almond cookies. So east to make though you must be careful baking them, next time i’ll swirl them when hot to give them a nicer shape.

Ingredients and method:

  • 3 large egg white.
  • 1 tsp vanilla.
  • 3/4 cup sugar.
  • 1/3 cup vegetable oil.
  • 1/4 cup flour.
  • 1/2 cup chopped or slivered almonds.

*Beat egg white till all white and stiff .

*Add vanilla.sugar ,oil and flour.

*Fold in almonds slowly, don’t over beat or mix.

* Grease a biking tray well with oil then some flour. ( very imp to grease well cause cookies tend to stick)

* add a tablespoon of batter then flatten it with back of spoon into circles.

* In a 180 degrees heated oven bake cookies for 10 minutes or till golden.

* leave to cool , you can swirl them while hot but you have to be very careful not to break them.

اصابع زينب او تويتات مشويه.

مساء الخير.
اليكم وصفه اصابع زينب المشويه.

2 كوب طحين ابيض.
2 كوب طحين اسمر.
1 كوب زيت زيتون ( او نص زيتون ونص نباتي)
ملعقة كبيرة يانسون.
ملعقة كبيرة شومر مطحون.
ملعقة صغيرة قرفه.
ملعقتين كبار سمسم
ملعقتين كبار قزحه
نصف كوب سكر
رشه ملح
ملعقه صغيرة خميره مذوبه في كوب ماء فاتر ومعلقه سكر.
ماء فاتر للعجن.

اخلطي جميع المقادير مع بعض ما عدا الخميره وافركي الطحين مع الزيت جيدا حتى يتجانس.
اضيفي الخميره وماء لتحصلي على عجينه طريه ومتماسكه.
شكلي العجينه دوائر صغيره ثم افرديها على المبرشه ولفيها لتحصلي على شكل مزخرف.
صفي الاصابع على صينيه واشويها في فرن درجه حراره 200 لمده 20-30 دقيقة او حتى يتحمر القاع.
حمري الوجه ليصبح ذهبي.
غطسيها في القطر راسا.

Egyptian Date Cookies ( كعك مصري او اساور)

Hello everybody.

A friend of mine ordered this particular kind if date cookies, called Egyptian ka’ek, we actually call it bracelet cookies cause it’s round.

Got the recipe from my best friend Ruba, cause I never did them before, recipe is very similar to one I once did called Nawa3em but with a slight difference is that you add rose water when you knead them.

Ingredients and method :
# 2 cups fine semolina.

Fresh Pesto with Shrimps.

Hello everybody.

Found an amazingly fresh bunch of basil at grocery store today, couldn’t resist taking most of it and instantly made pesto and cooked in it. So aromatic and nutty, I even added some walnuts with the pine nuts, delicious 😋

After cleaning and arranging my fridge, found an eggplant and a bunch of radishes that must be cooked or eaten before they’re ruined, so eggplant turned to dip and radish a salad with lemon juice and parsley.

Pesto was quickly done with shrimps garlic and pasta with Parmesan cheese on top.

Successful Lunch Gathering.

Hello everybody.

Had a big lunch gathering for my mother in-law’s friends,a group of lovely cheerful ladies.

Menu was as follows, curry veggies rice with chicken, kibbeh both spread and mini, fava beans fatteh, kibbeh with eggplants,Iraqi dolma done by an Iraqi lady, rocca apple cranberry salad and green salad.

Dessert was the almond citrus cake I did yesterday and Muhalabieh with caramel a highly desired dish for sure.

I’m not bragging or even hate to talk about myself but to be honest food was really delicious, all guests said so!
I’m 100% convinced that any dish cooked with love and willingness will taste great and this depends on your mood and to whom you’re doing it for sure.

 

 

 

 

 

 

 

 

 

Scottish Eggs.

Hello everybody.

Kids wanted me to do this recipe since a while,a high protein comfort food,boiled eggs wrapped with meat then fried.

Original recipe is done with sausage meat mixed with grated onions, garlic, breadcrumbs and parsley but today I made it with kofta, same basic principle.

Boil eggs, peel then wrap it well with the meat then dust with flour, in egg wash then finally in breadcrumbs. Cool in fridge to hold up then fry in oil.

Kids loved it, men kind of meal.
