Tzaziki in Kibbeh.

Hello everybody.

Today’s order was chicken pie, kibbeh in a pan amongst other things.

A new creative idea, made kibbeh cupcakes then filled them with tzaziki which is finely chopped cucumbers with labaneh and yogurt seasoned with special seasoning ( garlic powder, oregano and mint)  very elegant babies 😀😀😀

Beautiful Baby Natalie Party.

Hello everybody.

Was invited to a lovely gathering welcoming baby Natalie to the world.

Beautiful setting and theme, all lavender and purple colored. Food was various and delicious, of course caraway was present as always.

Fried Ice Cream With Maple Syrup.

Hello again.

End of the day treat to wrap up my hubby’s birthday celebrations is this yummy desert, no cake this time cause I guess we had enough cakes and cookies over the last month.

Fried ice cream is our favorite dessert that we end up each meal ,though full, at the most delicious restaurant in Limassol, Meze Tavern. We usually order one portion and end up fighting for the last bite. Though owner doesn’t give her recipe to anyone but I’ve been searching for something close to it for so long, all recipes I found usually coat ice cream balls with crushed cornflakes or coconut but it’s not the same as the one we eat, last night I came across one that uses pancake mix so I decided to try to make it for our special occasion.

For a first trial it was not bad at all, gone in seconds actually, may thicken the mix next time or freeze ice cream for a longer period.

It’s an easy recipe but must be done and eaten at once, shape ice cream into balls then coat it completely with crushed biscuits and freeze for 3-4 hours, make pancake batter ( I added some orange zest for flavor) ,heat oil very well, coat ice cream balls with batter and into hot oil till golden.

Serve with maple syrup on top.

As I said they were good but not exactly like Meze Tavern’s ,hope one day Madame Kicoulla will share her secret recipe with me 😍

 

 

 

 

 

Tomato Gouda Soup.

Hello everybody.

Cold rainy day,the kind that says a soup is extremely a must.

We had a late breakfast so a light lunch was efficient, though my hubby made Shakshouka but I only ate soup,heartwarming and tasty in this weather.

Found this recipe on Pinterest, simple tomato soup with cream and some basil but with a twist, you use a bun as a bowl, remove pulb then add a slice of Gouda cheese, roast a bit in the oven then add your soup.

Hello everybody.

Full eventful day, orders and lunch. Mom and my nephews came by as well, we all had a nice cup of tea with some hot from the oven suborek, filled with cheese. So yummy,we even felt we’re in a Turkish series.

Apple Strudel.

Hello everybody.

Today’s order was for dinner, kibbeh in a pan  mini ones,good thing is I made one for lunch.

Dessert was Apple Strudel, same recipe I did last year, always a success, did one for us as well.A small addition was some custard sauce with it but not the one with egg yolks and cream cause I didn’t have time so I just make simple custard with cream but a bit loose with vanilla and a bit of cinnamon.

Ingredients and method of Apple Strudel again:

For the dough:

* 2 cups flour.

* 1 egg.

* 2 big spoons butter.

*pinch of salt.

*100 ml (almost 3/4 cup) lukewarm water.

Filling:

* 1 kilo peeled and thinly sliced apples.

* 3/4 cup sugar.

* zest of a lemon.

* 2 tablespoons lemon juice.

* 3 tablespoons crushed walnuts or  almonds.

* 3/4 cup raisins soaked in some water.

* 2 tsp cinnamon.

* 2 tablespoons bread crumbs.

* extra butter to brush top of strudel.

* icing sugar for decorating.

* make the dough by mixing flour,salt and egg in the middle mix well then add butter and rub all together.

* start adding water till you get a round hard dough that you can handle.

* leave to rest for 30 minutes.

* spread some flour on a kitchen cloth and spread the dough to a big rectangle.

* make the filling by mixing all everything together.

* spread the breadcrumbs over dough then add the filling in the center.

* with the help of the cloth fold the sides together and ends also very well.

* transfer slowly to a big oven pan .

* brush with butter then make some lengthwise cuts with a sharp knife.

* bake in a medium heated oven for 50-60 minutes.

* dust with icing sugar upon serving.

 

Order included some baked Zaynab fingers and two suborek pans, one with cheese and the other with spinach and feta cheese.

Broockies.

Hello everybody.
Tried a new recipe today, loved its name “Broockies ” meaning it’s a mix of both brownies and chocolate chip cookies.

Recipe needed some adjustments specially the chocolates chip dough, it was so soft and flattened when baked, good thing I did one as test first.

End result was really good after adding more flour, I may decrease butter amount next time.

Ingredients and method :
Brownies dough :

  • 10 tablespoons butter.
  • 1/2 cup brown sugar.
  • 2/3 cup sugar.
  • 1 egg and one egg yolk.
  • 1 tsp vanilla.
  • 1 1/4 cups flour.
  • 1/2 cup cocoa.
  • 1 tsp baking powder.
  • beat butter  and sugar till creamy then add other ingredients till you get a stiff dough.

Chocolate chip cookie dough.

  • 10 tablespoons butter.
  • 1 cup sugar.
  • 1 large egg plus one yolk.
  • 1 tsp vanilla.
  • 2 1/2 cups flour.
  • 1 tsp baking powder.
  • 1 cup chocolate chips.
  • Beat sugar and butter till creamy then add whisked eggs and other dry ingredients.

Make a small ball of each dough then press them gently together to form a cookie shape then line on baking sheet or parchment paper.

Bake in  a medium heated oven for 8-10 minutes.

leave to cool then store in a well closed jar.

Swedish Meatballs And Jam Pie.

Hello everybody.

Cold rainy snowy day, started it  cooking Swedish meatballs “Ikea style ” both for an order and home for lunch, did some mashed potatoes on the side.

I also did jam pie, used marmalade this time, smell is devine.

Now that snow is accumulated and we’re stuck, time to make a hot drink right?
