Rice in Puff Pastry.

Hello everybody.
Home all day cleaning and putting away carpets and heavy clothes, an annual ritual!

Even the kitchen had it’s turn, arranging fridge and freezer , I don’t like keeping frozen food for long periods always try to use it specially if fresh veggies are in season, so today took out some green thyme and made za’tar sticks, some pieces of puff pastry stuffed them with spiced rice, peas,carrots and meat plus some poppy seeds and made orange cake with seeds in.

Too much work but all yummy and needed as snacks for my son studying for his finals.

Beetroot Apples Dip.

Hello everybody.

What a busy eventful day, nonstop activities since morning which started by a gathering at mom’s for my dear aunties , lovely ladies with so many old stories to tell. I made some spinach pastries and almond pudding,mom made za’tar cookies and orange cake.

As for lunch at home I made this lovely bright beetroot apple dip or salad that my sister told me about since beetroots are in season  these days,this can be a very nice healthy dish to make instead of processed ready dips.

Ingredients and method:

* 2 large beetroots boiled or baked.

* 2 apples.

* 2 tablespoons mayonnaise.

* 2 tablespoons labaneh.

* 2 tablespoons crushed walnuts.

* salt and pepper.

* grate beets and apples then squeeze them with your hands to remove all excess water.

* mix mayonnaise,labaneh,walnuts,salt and pepper.

* add beets and apples then mix well.

* put mix in a bowl then leave in fridge a bit .

* turn it upside down and serve with chips or toasted bread.

Then I went out with my lovely college friends to Yoshi for sushi, though I’m not a fan of it but food was great and atmosphere and service were excellent, company was the best part of the evening as always.

As soon as I arrived back home my aunt and her lovely daughters passed by and brought Falafel sandwiches, unfortunately I was full 🙁 though I love it, again it’s the company that matters. Love you 3amto <3.

Artichokes.

Hello everybody.

Didn’t know whether to cook or no today cause I still have courgettes from yesterday but not that much,it needs an appetizer or a small thing with it.

Had to manage something from what I have in fridge or freezer cause my son took my car,so after searching I took out a bag of frozen artichokes,cooked mince meat and some carrots and peas, they’ll do for a stew !

Out of curiosity I searched for benefits of artichokes and usage, turned out to be a very useful plant, actually great for liver and digestive system,read the link for more info if you like.

As always when staying home,I baked something,za’tar sticks but added cheese and coarse sea salt on top and made Rita’s salad ( this is its name from now on )

Ingredients and method of artichoke stew:

* 1 pack frozen artichokes.

* cooked mince meat.

* cubed carrots.

* peas.

* small onion.

* salt,pepper and lemon juice.

 

* saute chopped onions in some oil till tender then add carrots,peas,salt and pepper.

* simmer on low heat till tender.

* stuff meat in artichoke hearts and arrange them on top of veggies.

* add lemon juice and a bit of boiled water and leave to simmer for another 30 minutes.

* serve alone or with rice as you like.
