Eggs and Hotdogs.

Hello everybody.

Saw a nice video doing this eggs and hot-dogs in a cute way,though taste is as usual but it’s an appetizing meal.

You simply cut one edge of the hot-dog but not all the way then attach them with toothpicks. Fry in some oil then add eggs in the middle.

Potato Leek Soup.

Hello everybody.

Weather today requires a soup, cold and rainy though not heavy and continuous as expected.

Potato leek soup is very easy and simple, leek can be substituted with green onions if not available.

Ingredients and method :
*  2-3 big potatoes.
* 1 small chopped onion.
*2 finely chopped cloves garlic
* 1 chopped leek.
* salt, pepper.
* 1 tablespoon butter.
* 4 cups vegetable stock.
* half cup heavy cream.

* saute onions, garlic and leek in butter till tender.
* peel and chop potatoes to cubes then add them.
* add stock,salt and pepper.
* simmer for 30 minutes or till potatoes are tender.
* mash all together or mix in blender.
* add cream and leave to simmer for another 10 minutes.
* sprinkle some Parmesan cheese on top when served.

 

 

I upgraded this heartwarming dish with some fancy garnish, fried grated potatoes,pumpkin seeds and roasted almonds.

Pumpkin Soup and Shepherd Pie.

Hello everybody.

Two warm dishes today , perfect in this cold day.

Pumpkin soup and shepherd pie, both filled with lovely veggies and aroma.

Ingredients and method of the pie:

* cooked ground beef.

* chopped onions and garlic.

* some veggies,peas,carrots,corn and mushrooms.

* 3-4 boiled potatoes.

* soy sauce,ketchup and Worcestershire sauce ( i didn’t have it today so I used HP)

* bread crumbs.

* salt and pepper.

* Saute onions,garlic and meat in some oil or butter.

* add the veggies and sauces and simmer till done.

* mash the potatoes with some butter and milk,salt and pepper.

* pour the potatoes over the veggie meat mix.

* bake in a medium heated oven for 30-40 minutes.

* sprinkle some bread crumbs on top and toast.

* Serve hot with ketchup and salad.

Molasses Ginger Soft Crinkles.

Hello again.

Here’s the recipe of the other kind I made,molasses and ginger, taste is terrific by the way both sweet and sharp . I may add more ginger next time to sharpen the flavor.

 

Ingredients and method:

*3/4 cup butter.

*3/4 cup brown sugar.

*1 egg.

* 1/4 cup molasses.

  • 1 tsp ground ginger.
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • pinch of salt
  • pinch of nutmeg

* 2 tsp baking powder

*2 1/4 cups flour.

*granulated or raw sugar for coating.

 

  • beat butter,sugar well till creamy.
  • add egg and vanilla.
  • add all other ingredients consequently.
  • cool for 2-3 hours.
  • roll into balls then coat with sugar
  • flatten them a bit with your fingers
  • bake in a medium heated oven (180 c) for 10-13 minutes only.
  • cool and store in a cookie jar.

Salt Baked Potatoes with Garlic and Rosemary.

Hello everybody.

Roast beef is for lunch today, usually accompanied with baked potatoes and veggies,which were all done in a different way I saw last night on my favorite source of new recipes Pinterest.

First I’ll start with the beef,sealed in hot oil butter mixture at first in a deep pan then I added some onions and garlic and gradually started adding boiled water and left it to simmer for 3 hours. Removed the beef to rest,added some flour to the sauce to make a gravy, so tender and yummy.

As for the potatoes here are the ingredients and method :
* 2 cups salt.
* medium sized potatoes.
* one whole head of garlic.
* some rosemary leaves.
* 1 tablespoon butter.
* drizzle of olive oil.

* in a deep thick oven pan spread the salt evenly.
* place the potatoes, rosemary and garlic after cutting the hard top.
* cover tightly and bake for 40-50 minutes.
* remove garlic to cool.
* drizzle olive oil on top of potatoes and back in the oven for another 10 minutes.
* meanwhile remove soft garlic pulp and add butter to it, I added a bit of yogurt as well to make a bit sour.
* cut potatoes and add garlic spread in it.

Serve with any roast or chicken.

As for the mushrooms, cut them to big pieces then add butter, oil, garlic, lemon juice, capers, salt and pepper and bake them till tender. Add chopped parsley when done.

Morrocan Carrot Soup.

Hello everybody.

A soup is a must in this weather,was about to make lentils but then it’ll be heavy with yesterday’s cabbage leftovers.

So I decided to make carrot soup instead.Came across this recipe while looking for a new or different version from the one I usually make, really yummy and full of flavors.

Must say that garnish must be yogurt and fresh coriander but I used oregano instead cause I don’t have it.

Ingredients and method :
* 2 tablespoons butter.
* 1 small finely chopped onion.
* 2 cloves garlic.
* 2 cups chopped carrots (4-5 big ones)
* 1 tsp fresh grated ginger.
* 1 tsp all spice.
*1 tsp cumin.
* 4 cups vegetable or chicken broth.
*salt and pepper.
* 1 tablespoon lemon juice.
* 1 tsp honey.
* 1/2 cup yogurt.
* fresh chopped coriander.

* saute onions, garlic in hot butter till tender.
* add carrots, ginger and all spice.
* add stock and leave to simmer till carrots are tender.
* spin all together with hand mixer or blender till you get a smooth creamy texture.
* add lemon juice and honey.
* season with salt and pepper as preferred.
* leave to simmer for another 20 minutes.
* garnish with yoghurt and coriander upon serving.

Greek Semolina Cake.

Hello again.

A usual companion to cabbages and cold weather is this semolina cake or harisseh.

Frankly the usual harisseh that most people do never turn out successful,don’t ask me why 😀,not my specialty I guess. So to ensure that it’s good I make this Greek one, very similar but contains eggs so it’s more like a cake but same taste and texture.

Here are the ingredients and method :

*4 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup coconut (optional).
* 1/2 yoghurt.
* 3/4 cup butter.
* 2 1/2 cups coarse or fine semolina.
* 2 tsp baking powder.
* 1/4 tsp sodium bicarbonate.
For the sugar syrup :
* 3 cups sugar.
* 1 1/2 cups water.
* 1 small spoon lemon juice.

*Mix all ingredients alternatively. Grease a
medium size pan with butter or tahini (طحينه ).add the batter
*Sprinkle with almonds then bake in a medium heated oven till golden.
* As for the syrup mix sugar and water, heat till it boils, add lemon juice and leave to simmer till it thickens .approximately 20-30 min.leave to cool.
* Add cold syrup on cake when still hot so as to be well absorbed .

Stuffed Cabbages.

Hello everybody.
It’s cold and rainy today, cooking plan is just perfect for this weather which is stuffed cabbages.
Just remembered that I made a video last winter of how to stuff and cook them,will repost it below.

You should do it this week since it’ll be raining for few more days.

* minced meat.
* rice.
* ghee and vegetable oil.
* salt, pepper, all spices, dried mint.
* cabbage,  boiled and stems removed.
* garlic as much as you like.
* lemon juice.
Method:
*  Wash the rice then add the meat. I usually cook it before a bit.
* add spices, salt, mint.
* stuff the cabbages and line them with garlic in between.
* add lemon juice, a bit of oil and enough water to cover all cabbage.  I have this heavy pottery lid I use as weight or you can put a heavy plate.
* cook for 10 minutes over high heat then lower it and cook it for another hour or till rice inside is done.

Potato Pie.

Hello everybody.

Saw this recipe last week while searching for the potato pizza and pinned it to do later, looked good and today it proved it’s delicious.

You simply slice potatoes with skin on thinly, then you saute some onions till tender and caramelized. Arrange potatoes in a greased pan, I used olive oil, then add salt, pepper, onions and grated cheese. Add few fresh leaves then repeat the process.
Sprinkle cheese on top and cover, bake in a moderate heated oven for 35-40 minutes.
Leave to cool then cut to slices, very good with roasted chicken or beef.

Rice in Puff Pastry.

Hello everybody.
Home all day cleaning and putting away carpets and heavy clothes, an annual ritual!

Even the kitchen had it’s turn, arranging fridge and freezer , I don’t like keeping frozen food for long periods always try to use it specially if fresh veggies are in season, so today took out some green thyme and made za’tar sticks, some pieces of puff pastry stuffed them with spiced rice, peas,carrots and meat plus some poppy seeds and made orange cake with seeds in.

Too much work but all yummy and needed as snacks for my son studying for his finals.
