How’s your weekend so far? cold cloudy weather , it’s like winter all over again
Well guess a chicken curry is just perfect in this weather, hot and spicy and a favorite for my eldest son.
As for an option for my hubby who doesn’t like curry at all I made some fried mloukhieh , meaning cooked with some onions ,garlic and minced meat with olive oil, salt and pepper. No broth at all and eaten with bread , don’t know why they call it Bourani Mloukhieh.
Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.
Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms, then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.
This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.
A weekend full of happy events, family lunches and parties, ended with the beautiful wedding of my beloved cousin.
Beautiful party full of love and joy, wish the bride and groom a happy life ahead
Today’s morning was also extra special, breakfast with my besties, can’t get enough of these warm gatherings, always full of laughter and old memories, I always thank God for having the best friends in the world.
Orders for today was date rolls and lunch was mellow and spaghetti with veggies.
Last night my cousin who lives in Rome made this soup, recipe sounded easy and delicious, I even realized from the comments that many people here do it as well, called “Sahiha” meaning lentils stay as is, not mashed.
Ingredients and method :
# 1 cup brown lentils.
# 1 carrot, celery stick, garlic clove and chili pepper.
# 1 tablespoon tomato paste or big chopped tomato.
#olive oil, salt, pepper and Maggi cube or vegetable stock.
# boil lentils in 4 cups of water till done.
# saute garlic, celery stick, carrot and pepper in olive oil.
# when tender add lentils with water on them.
# leave to simmer till done then remove vegetables.
# add tomato paste, salt, pepper and Maggi cube.
# Serve with a slice of lemon.
Found an amazingly fresh bunch of basil at grocery store today, couldn’t resist taking most of it and instantly made pesto and cooked in it. So aromatic and nutty, I even added some walnuts with the pine nuts, delicious 😋
fresh pesto sauce.
shrimps pesto pasta with garlic and lemon juice.
After cleaning and arranging my fridge, found an eggplant and a bunch of radishes that must be cooked or eaten before they’re ruined, so eggplant turned to dip and radish a salad with lemon juice and parsley.
Pesto was quickly done with shrimps garlic and pasta with Parmesan cheese on top.
Lunch today was semi ready, brought ready made veal escalopes and potato croquettes from my favorite grocery store in Amman, Centro Stores. Salad was two coleslaw bowls one with raisins the other without for the boys.
By the way all butchery goods at Centro are delicious, most important thing is the friendly professional staff who cares about every detail.
Enjoy the sunny weekend everybody cause we’re expecting rainy stormy weather this week.
