Good evening everybody.

Happy new year to all people around the world celebrating, a whole awesome eventful year ended today with all it’s joy and sorrow, happiness and pain.Hoping next year will be of full good times, hard work and creative food.

Dinner today was steaks with veggies, quick easy meal specially that meat is fresh and tender, just bought it from my favorite store Centro.

Successful Lunch Gathering.

Hello everybody.

Had a big lunch gathering for my mother in-law’s friends,a group of lovely cheerful ladies.

Menu was as follows, curry veggies rice with chicken, kibbeh both spread and mini, fava beans fatteh, kibbeh with eggplants,Iraqi dolma done by an Iraqi lady, rocca apple cranberry salad and green salad.

Dessert was the almond citrus cake I did yesterday and Muhalabieh with caramel a highly desired dish for sure.

I’m not bragging or even hate to talk about myself but to be honest food was really delicious, all guests said so!
I’m 100% convinced that any dish cooked with love and willingness will taste great and this depends on your mood and to whom you’re doing it for sure.

 

 

 

 

 

 

 

 

 

Stuffed Turkey.

Hello everybody.

Today we had a big festive lunch, stuffed turkey with all accompanying dishes.

Recipe from my sister which turned out very good, turkey was very moist and well done, I soaked it  yesterday in brine containing salt,pepper corns, cinnamon stick, cardamom, rosemary and vinegar.

This morning I dried it very well then stuffed it with sauteed onions and bread ( whole loaf of toast without crust edges)  then I added lots of butter between skin and flesh with spices and salt.

Wrap the turkey very well with foil paper and bake for 4 hours, begin with very high heat for the first half hour then lower it to medium or a bit less for remaining time. Remove foil last half hour so that it’ll be roasted and golden.

Along with it, I made potato gratin, rice with spices and meat on top, veggies, corn salad, butter sautéed red cabbage with cloves and rocca apple cranberry salad.

Chicken Pie.

Hello everybody.

Have an order for a lovely friend, she ordered steak roll, chicken pie and a carrot cake.

A chance to make two pies cause kids love it and it’s been a while since I did it. Heart warming dish in this crispy cold weather.

Pumpkin Soup and Shepherd Pie.

Hello everybody.

Two warm dishes today , perfect in this cold day.

Pumpkin soup and shepherd pie, both filled with lovely veggies and aroma.

Ingredients and method of the pie:

* cooked ground beef.

* chopped onions and garlic.

* some veggies,peas,carrots,corn and mushrooms.

* 3-4 boiled potatoes.

* soy sauce,ketchup and Worcestershire sauce ( i didn’t have it today so I used HP)

* bread crumbs.

* salt and pepper.

* Saute onions,garlic and meat in some oil or butter.

* add the veggies and sauces and simmer till done.

* mash the potatoes with some butter and milk,salt and pepper.

* pour the potatoes over the veggie meat mix.

* bake in a medium heated oven for 30-40 minutes.

* sprinkle some bread crumbs on top and toast.

* Serve hot with ketchup and salad.

Baked Mazorella Sticks.

Hello everybody.

Plan for today was kofta topped with tomatoes, onions and potatoes with Iranian rice on the side.

That was the main dish, then I decided to try this appetizer when my son sent me the video while in lectures, thought it’ll be a nice surprise when he comes home.

End result is good but definitely fried ones are better but they’ll do as healthier alternative.

You simply coat the mozzarella sticks in flour then dip them in eggs then in breadcrumbs mixed with oregano and spices. Then you repeat process again with eggs and crumbs.

Leave in fridge or freezer then coat with melted butter and bake for 15 minutes.

Meat in Pitta Bread ( عرايس).

Hello everybody.
Busy Saturday, too much errands today.
Before leaving the house I took out some minced meat to make these yummy pitta bread meat pastries or as we call them Arayes,I also made some vegetable noodles soup with a small plate of mhammara and mashed black olives.

All delicious 😋

Ingredients and method of meat pitta loaf:
* minced veal or beef.
* 1 small finely chopped or grated onion.
* 1-2 grated garlic (optional)
* 1 large ripe grated tomato.
* 2-3 tablespoons soaked burghul.
* finely chopped hot pepper.
* salt, pepper and tabasco.
* small pitta breads or big cut to halves.

* mix all ingredients well together.
* fill each pitta with a spoonful of the mixture.
* brush them with olive oil and bake in a medium heated oven till golden and crispy.
* serve with yoghurt and hummus or salad.

Chicken With Eggplants.

Adha Mubarak everyone.

I’m pretty sure most people are fasting today so it’s a late lunch or Iftar.

We’re all gathered so it’s a kind of big dinner.

Menu was a new chicken recipe I took from our dear family friend Osama,  really easy and yummy,plus pesto pasta, potatoes with cream,red or rice with tomato paste.

Ingredients and method of chicken :
# whole chicken with skin on.
# eggplants.
# carrots.
#red peppers.
#1 clove garlic.
# juice of a lemon.
# salt, pepper, cumin, all spice, tandoori spices.
# olive oil.

#Cut all veggies to big shunks.
# Season chicken and veggies with all spices,lemon and olive oil.
# In a deep oven pan arrange chicken and veggies around it.
# heat the oven from upper section then roast chicken and veggies till golden or brownish.(الشوايه من فوق)
# cover all with foil paper then leave in oven for one hour or more till done and sauce is thick.

Serve with any kind of rice you prefer.

Lentil Soup.

Hello everybody.

Lentil soup with veggies or without is always a good heartwarming option specially in cold rainy days.

Made some today  with some carrots and pumpkin, I sometimes make it with potatoes or courgettes or basic with only onions and broth, it’s all up to your taste.

Here’s the basic lentil soup recipe.

You need:
*1 cup lentils.
*1 small finely chopped onion.
*1 sliced carrot.
*1 sliced courgette (optional.)
* 1 cube chicken stock.
*1 spoon salt.
*1 spoon powdered cumin.
*6 cups hot water.
Saute the onions, carrots, courgettes in a bit if olive oil till tender,wash then add lentils.

Stir well then add salt and chicken stock,add water and leave to boil then simmer for 30 minutes,add cumin.

you can mash lentils and veggies or use the blender to make a smooth soup as you prefer.

serve with fried or baked bread cubes and lemon juice.
