Hello everybody.

I now strongly believe that some recipes do actually call me to try them, I know this might be weird but true cause I look through many many recipes on daily basis but not all interest me to try them.

Well couple of days ago I saw this light healthy recipe in an account I follow on  named Bandora (means tomatoes) , vegan type of kibbeh great for vegetarians or lint.

Fifty percent of ingredients is burgul, other half is sautéed onions and tomatoes, raw green onions, carrots,zucchini, coriander, parsely, mint, chili paste,salt, pepper,summaq and olive oil. All together in the food processor.

Ramadan Dishes.

Hello everybody.

Sorry for the laziness but Ramadan is really tiring specially after Iftar, one gets lazy and tired.

Strategy this month is to make little amounts of every dish so as not to have leftovers next day ,the past couple of days I made many dishes.

Roasted Meat Cubes.

Hello everybody.

Today I decided to try an interesting  recipe I saw on Tastemade, the new unusual ingredient is coffee ! guess it did give a special flavor cause end result was really delicious.

Ingredients and method:

  • 1 kg meat cubes ( veal or lamb)
  • 1 tsp of salt,pepper,chili.
  • 1 tablespoon coffee powder .
  • * 1 tablespoon brown sugar.

  • 1 small chopped onion.
  • 2-3 chopped garlic.
  • 2 tablespoons olive oil.
  • 2 tablespoons chopped parsley.
  • 1 cup broth.
  • marinate meat in all ingredients except broth overnight or for several hours.
  • add broth then cover pan very well.
  • roast in a medium heated oven for 2-3 hours.
  • Note : check the pan after 2 hours it might need some water if meat is not done and sauce is dry.
  • You can make roasted potatoes with herbs and spices or sauteed veggies and salad.

 

very easy yummy new dish ,loved it and I’m sure will make it in Ramadan.

Chicken Curry and Mloukhieh.

How’s your weekend so far? cold cloudy weather , it’s like winter all over again 🙁

Well guess a chicken curry is just perfect in this weather, hot and spicy and a favorite for my eldest son.

As for an option for my hubby who doesn’t like curry at all I made some fried mloukhieh , meaning cooked with some onions ,garlic and minced meat with olive oil, salt and pepper. No broth at all and eaten with bread , don’t know why they call it Bourani Mloukhieh.

Weekend Events

Hello everybody.

Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.

Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms,then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.

This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.

Today’s morning was also extra special, breakfast with my besties, can’t get enough of these warm gatherings,always full of laughter and old memories, I always thank God for having the best friends in the world.

Veggie Stuffed Steaks.

Happy International Woman’s Day lovely ladies around the world.

I’m sure all women wherever they are and whatever they do deserve to honored and thanked everyday cause each one is important and plays a significant role no matter how small.

On this occasion I cooked this elegant lunch today, steaks stuffed with thinly stripes of veggies ( carrots, onions, peppers and green onions) with sauce and mashed potatoes.

* season steaks with salt, pepper and all spice then add the vegetables, roll and close them with toothpicks.

* add a bit of soy sauce on top of each roll
* heat some oil and butter well, add rolls till golden on all sides, lower heat and leave to cook slowly for 15-20 minutes.

* remove from pan and leave to rest
* in the same oil add remaining veggies, saute till golden then add one tablespoon of flour and 1 1/2 cups water.

*stir very well till creamy then mix all in blender to get a thick creamy sauce.

Best Birthday Party.

Hello everybody.

Yesterday we celebrated my nephew’s first birthday, our bundle of joy is one now.

Theme of the party was teddy bears, cake, cupcakes and all ornaments were brown and yellow. All done by my talented sister in-law, very elegant and cheerful.

Colored Cauliflower.

Hello everybody.

Got these two lovely colored cauliflowers yesterday from our friend.When I asked my Facebook group what to do with them I got many suggestions, main one was to pickle them and another was roasting with garlic, olive oil and Parmesan or as gratin with potatoes.

So now I pickled half and prepared a pan with potatoes and cream for baking. All looks appealing and colorful.

Homemade Ravioli.

Hello everybody.

Very busy eventful week,orders dinners and birthdays.

Last night I had guests at dinner, tried to make it a restaurant style one , served salad which was Greek with capers and feta cheese then pasta, penne and ravioli, then main course, grilled veal with mushroom sauce, baked potatoes and veggies and one portion of grilled salmon with garlic dill and olive oil.Desert was teramisu.

here’s the ingredients and method of ravioli:

* 2 cups flour.

* 1/2 tsp salt.

* 3 eggs.

* on a clean surface or in a bowl mix flour and salt then make a well in the middle and crack eggs in it.

* start whisking eggs into flour with a fork gradually.

* continue working with your hands or in a food processor till you get a firm dough.

* cover with cling film and leave to rest for 30-50 minutes.

* divide to 4 pieces then roll to a rectangular thin layer.

* make stuffing of your choice, cheese,spinach with cheese,meat .

*add one teaspoonful of stuffing in a line , cover with another rolled dough, add egg wash on sides  then cut into squares using a cutter or roller knife.

* keep dusting with flour so as pieces won’t stick to pan.

* cook in salted boiling water for 4-5 minutes only.

* cook in cream with basil and garlic or tomato pasta sauce as you wish.

I can humbly say it was an excellent meal and everybody had a great time.
