Protein on schedule today is tuna, to add up a plain dull sandwich I added green onions,relish ,a slice of tomato and cheese. result is toasted tuna melt sandwich,healthy and yummy.
Mid week light meal, we usually have one either Tuesdays or Thursdays, no meat, chicken or heavy cooked stuff.
Each one of the boys wanted something and since they’re both easy and needs minimum effort I did the two.
Old fashioned local pasta with local white cheese and parsley or as we used to call it Teita’s pasta,simple delicious one I even bought the old kind (Ghazal number 1) a must for this dish.
Other one was tuna salad, made a rich dressing containing mustard, mayonnaise, relish, chili jam, lemon juice,oil and salt then added all salad ingredients and tossed everything together, fresh and nutritious.
Every time I decide to stay home and relax in end up working too much or doing multiple things at the same time.
First thing when I entered the kitchen this morning I realized I have one very ripe avocado and one lonely eggplant so made a dip (mashed with some lemon juice,tahini,yogurt and salt) and baba ghanouj ( chopped grilled eggplants with diced tomatoes,peppers and some mints then topped with pomegranate sauce)
Then the daily question of what to cook started nagging in my mind, then decided to do a new sandwich style my cousin posted last night with shredded chicken but I made it with tuna, turned out really good, kids loved it.
Secret ingredient is the crunchy sandwich bread or crust done by cutting edges of toast then soaking each couple together in whisked eggs then coating all with breadcrumbs. I let them cool in the fridge so as to hold better then deep fried till crunchy, when cooled open and fill with any stuffing you like, today is added tuna with corn,capers, relish, mustard, mayonnaise and green onions,served with fries and big mixed salad.
Another task for today was making fresh pesto before basil turns black and a fresh fruit cocktail from new honey from Ghor, oranges, pineapple and bananas, really refreshing after all this.
Needed a light healthy lunch bit have no mood to cook so I decided to do this lovely colored salad, It’s a French dish made of veggies,tuna and boiled eggs.
Ingredients and method:
* 2 large boiled and sliced tomatoes.
* some boiled string beans ( didn’t have ones today)
* boiled eggs.
* black olives.
* you can add parsley or fresh basil all optional.
* 1 clove garlic shopped.
* 1 small chopped onion.
* olive oil.
* Arrange all ingredients either mixed or next to each other.
* mix all dressing ingredients then add over salad before serving.
First thing in the morning I did 2 portions of my favorite chocolate cake recipe, half covered with ganache done from Milka Hazelnut chocolate and another with German Chocolate Cake frosting to my sister in-law cause I think chocolate is a big cheering and mood enhancing kind of food ,new moms really need that kind of thing for sure.
Ingredients of frosting:
* 1 1/2 cups of coconut.
* 2 big spoons butter.
* 2/3 cup Carnation condensed milk ( I used !/2 cup milk and 2 big spoons cream ,good enough also).
* 1/2 cup sugar.
* 1 egg.
* 1 tsp Vanilla.
* 1/2 cup crushed walnuts.
* Mix all ingredients except walnuts very well .
* boil over medium heat till mixture is thick .
* add walnuts and fold in.
* Use as filling and cover over chocolate cake.
* German chocolate cake contains 1 big spoon instant coffee with the basic cake ingredients.

Very hot and dusty weather today,annoying for people with allergies and asthma,hope it’ll rain as the forecast says to reduce heat and dust.
Nobody in the mood to eat something hot so I made this simple salad, still have some steak from yesterday if anybody feels like it. Plus I had another lesson and order of date rolls this morning so no time for cooking
Ingredients and method:
* any kind of small pasta, boiled till done.
* 2 cans tuna.
* sweet peppers.
* green onion.
* cherry or big tomatoes.
* salt ,pepper and lemon juice.
* cook pasta and drain water then add tuna,chopped onions,peppers,mayonnaise,lemon juice,salt and pepper.
* mix all together very well before serving.
That’s it ,simple and easy .
