Teramisu in Easter Chocolate Eggs.

Hello everybody.

Have this teramisu order tomorrow so as usual I always do cold dessert a day before.

Today’s twist in teramisu was that I used chocolate Easter eggs as cups, removed top with a sharp hot knife, filled them with lady finger biscuits dipped in coffee and cream.

Final presentation was really elegant and nice, hope taste will be as well.

Homemade Ravioli.

Hello everybody.

Very busy eventful week,orders dinners and birthdays.

Last night I had guests at dinner, tried to make it a restaurant style one , served salad which was Greek with capers and feta cheese then pasta, penne and ravioli, then main course, grilled veal with mushroom sauce, baked potatoes and veggies and one portion of grilled salmon with garlic dill and olive oil.Desert was teramisu.

here’s the ingredients and method of ravioli:

* 2 cups flour.

* 1/2 tsp salt.

* 3 eggs.

* on a clean surface or in a bowl mix flour and salt then make a well in the middle and crack eggs in it.

* start whisking eggs into flour with a fork gradually.

* continue working with your hands or in a food processor till you get a firm dough.

* cover with cling film and leave to rest for 30-50 minutes.

* divide to 4 pieces then roll to a rectangular thin layer.

* make stuffing of your choice, cheese,spinach with cheese,meat .

*add one teaspoonful of stuffing in a line , cover with another rolled dough, add egg wash on sides  then cut into squares using a cutter or roller knife.

* keep dusting with flour so as pieces won’t stick to pan.

* cook in salted boiling water for 4-5 minutes only.

* cook in cream with basil and garlic or tomato pasta sauce as you wish.

I can humbly say it was an excellent meal and everybody had a great time.

Today’s morning orders were za’tar puffs, falafel rolls and two Daisies chocolate cakes.

Teramisu.

Hello everybody.
Have a gathering this evening for my sister in-law’s family so I prepared several things one of them is teramisu since I have some mascarpon cheese fresh from Italy that I’d rather use before it’s spoiled.

Cause I don’t prefer using raw eggs though the original recipe requires it, I substituted it with a pack of cream caramel powder, gave it the same color and texture and result was super.

You can find many recipes for it,here’s one option that is very tasty

* 2 packs whipping cream.

*2 packs kiri or cream cheese.

* 1 can condensed milk (or cream and 1/4 cup sugar)

* lady fingers biscuits.

* Nescafe ( 1 big spoon dissolved in 3/4 cup warm water)

* mix cream,condensed milk and cheese together very well.

* arrange biscuits in a deep serving dish then soak them in coffee mixture. * add half of cream mixture then repeat process. * refrigerate for 3-4 hours.

* sprinkle cocoa powder on top.

Or the one I made today:

* 200 gm Mascarpon cheese.

* 6 pieces Kiri.

* 1 sachet whipping cream ( Dream Whip).

* 1 pack of cream caramel powder.

* 1 1/2 pack lady fingers biscuits.

* strong espresso or Nescafe.

* beat cheeses and cream very well till smooth then layer biscuits topped with coffee then cream in a pyrex or any mold you like.

* cool in fridge for 3-4 hours or overnight.

I also did Muhalabieh with caramel  and sliced some fruits.

Up to Hometown Huwwara :)

Hello everybody.

Had a marvelous day, me and mom headed up North this morning and visited many relatives and as usual ate lots of food 😉

First stop was at my new fb friend and cousin for breakfast and a cup of coffee,all delicious and we had such a great time catching up and knowing each other face to face,a real pleasure. Visit ended with a superb piece of Teramisu since my cousin lives in Rome so she’s an expert,really yummy.

Then next visit was to my lovely colleagues and best cousins for lunch,we had rice with fava beans with salad and Irbid yogurt of course. Ha great time as usual 🙂

Trip ended by paying condolences for a relative then a must buying labaneh and yogurt on our way back from Husson.

Baked Broad Beans.

Hello everybody.

20140617_164737   Noon treat, tramisu from last night 🙂

Today I took a break after two days of running around,had dessert with coffee at noon,tasted even better today .

As for lunch I made Fettuccine and a small dish of baked beans,easy and cool in this hot weather.

Ingredients and method:

* 1 cup dry broad beans soaked in water overnight.

* one small finely chopped onion.

* 2 cloves chopped garlic.

* 2-3 coarsely chopped tomatoes.

* some olive oil.

* boil beans in water till tender then wash and dry.

* saute onions and garlic in hot oil till golden.

* add tomatoes and simmer for 15 minutes,you may add some water if sauce is dry.

* add salt,pepper and chili if you like.

* in a deep oven pan,put the beans and pour sauce over them,cover then bake all for 30-40 minutes.

Very nice dish needs zero effort 🙂

Teramisu and Labaneh Mold.

Hello everybody.

Two events today,a small gathering for my lovely Auntie and her daughter coming from Irbid and a bigger gathering for my cousins this afternoon. Don’t ask me how I managed but I did don’t know how! time management is the key word,that’s for sure.

I made a Teramisu but a bit different from the real Italian one,no mascarpone cheese cause it’s not always easy to find it , but this recipe that I have from my dear friend Rula is very good, I even found out I don’t have sweetened condensed milk for it but I added cream and some sugar so taste was almost the same.

I also made labaneh with mint and oregano layered in toast bread and decorated with tomatoes,cucumbers and olives,you can decorate it anyway you like.

Ah I forgot to mention,I made spinach tabouleh and cheese rolls as well 🙂
