Beetroot Hummus.

Hello everybody.

Boiled some beetroots yesterday , it’s the season you know, so today I searched for something new to make with them other than salads .Since I have a box of ready made hummus this mix seemed a good option.

Mix is so easy ,all together in the food processor :

*boiled beetroots.( I used 2 large ones)

* half cup of hummus or 1 cup boiled chickpeas.

*1 tablespoon tahini sauce.

*1 tablespoon lemon juice.

*1 tsp of each, salt, cumin and chili powder.

*1 clove garlic.

That’s it! see super easy especially if you have ready hummus. By the way one can find many kinds and flavors of them these days, all  good .

A really healthy cheerful dish that works great as dip with chips or veggies and of course a great option for kids as a trick to eat healthy stuff.

Cauliflower Stew and Iranian Rice.

Hello everybody.

Early this morning I was hosted at  Ro’ya TV in an interview to talk about my contributions in Family Flavors magazine, I can humbly say it was very nice and informative, looking forward to more fruitful work and achievements.

Well this didn’t mean no Saturday chores and errands ending up with cooking cauliflower stew,Iranian rice and a fresh salad containing rocca,pomegranates and walnuts.

 

Ingredients and method:

* cooked minced meat or cubed veal or lamp as desired.

* boiled and fried cauliflower

* 2-3 cloves garlic.

* one small onion finely chopped.

* lemon juice.

* salt,pepper,all spice, cumin and dry coriander (or fresh)

* saute meat till dry then add garlic and onions.

* add cauliflower and seasoning,leave to simmer, you may add a bit of water if it’s too dry.

* serve with tahini sauce and summaq on top.

Note: to minimize frying you can boil cauliflowers a bit then sautee them with a bit of oil that’ll be enough)

Ramadan Preparations.

Hello everybody.

Busy morning preparing for Ramadan cause I get too tired first day so thought I’ll do some things to be at ease.

Did some samboosek, cheese rolls, roasted bread and a big pot of syrup for the sweets.

Lunch was various fries, potatoes, eggplants and cauliflowers with pickles and tahini sauce.

Salad was Rita’s recipe, wide green beans with garlic and cherry tomatoes.

Energy Bites!

Hello everybody.

Did a massive fridge and freezer cleaning today and took out many things stored since a long time so as to do something useful or throw them away.

Result was a mix dried fruits,nuts, crushed biscuits,blueberries, oats all bound together with honey and molasses with a bit of cinnamon, cardamom and ginger. They’ll make a super snack during Ramadan specially at suhour time cause they’re full of nutrients and fiber which will help during fasting next day.

Another outcome was a plate of chickpeas with tahini sauce ( مسبحه) decorated with parsley and nuts.

Lunch was Shakshouka, no cooking till beginning of Ramadan, that’s my decision so far.

Hello again.

Lunch today was a big fish in the oven stuffed with garlic, onions, tomatoes, parsley, lemon, salt,pepper, chili and cumin with a drizzle of olive oil on top.

Of course with its companions French fries, fried bread and tahini parsley salad.

Kofta with Tahini Sauce.

Hello everybody.

Today I splitted the cooked kofta balls into two pans to satisfy all family members.

One pan with onions, garlic, potatoes and tomato sauce for the boys and the other with some potatoes and tahini sauce on top. All then in the oven till a bit roasted.

Love kofta with tahini and this was the only solution to eat it cause mostly I’ll eat it alone, don’t mind that at all :mrgreen:

Lentil Soup Fatteh.

Hello everybody.

Seems like winter is back again, weird weather this morning, rainy with heavy fog.

Well I’m sure a big percentage of Jordanians cooked lentil soup today, it’s a rain tradition i guess.

Today I’ll do it with a twist, and member in banancooking.com made this dish and while ago and it looked interesting.

You cook soup as usual but I made it a bit thicker, then you assemble it with all fatteh ingredients. Roasted bread, soup then tahini yogurt sauce and garnish it with cooked minced meat, almonds and parsley.

A big big success, very fulfilling but not heavy, mother in-law and kids loved it,waiting for hubby’s approval now.

How to Make Hummus?

Hello everybody.

Being locked in this snow storm made many people creative or let me say willing to try  stuff that are usually bought ready like hummus and falafel.

Hummus is high in iron and Vitamin C plus folate and  Vit B6 and a good source of dietry fibers,it’s very useful in vegetarian diets to compensate protein.

It’s not that difficult to make them from sctratch,I know many folks specially living abroad who always do, but in countries like us,the easiest cheapest meal is always a hummus plate with falafel or hummus fatteh, no need for all the fuss in the kitchen.

My cousin living in Greece made a a delicious hummus last week so I thought to share the recipe with you.

Ingredients and method:

* 2 cups of soaked ( a night before) boiled till done chickpeas.

* 1 big spoonful tahini saice.

* 2 big spoons full cream yogurt.

* 1-2 cloves garlic.

* lemon juice,salt .

* some olive oil.

* Mix all ingredients together in food processor till smooth and creamy.

*add a bit of chickpeas boiling water to make thickness as you desire.

* decorate with chickpeas,chili powder or parsley.

To make Humus Fatteh which is a Levant dish done mainly in Syria,Lebanon,Palestine and Jordan.you’ll need:

*  pitta  bread cubes or if you like use french bread (خبز حمام)

* make the same hummus mix but add more water and yogurt to make a loose sauce.

* before serving soak bread with chickpeas and water.

* add the hummus sauce.

* decorate with toasted almonds,pine nuts,chili powder and parsley ( didn’t have parsley today )

* serve hot for breakfast or appetizer .

Nachos in an Eastern Look (فته مكسيكيه).

Hello everybody.

We all ate too much during this week ,lunches and dinners, so today we’re eating light to at least lessen the guilty feelings.

I made potato salad with dill and spring onions,grilled veggies tossed with pomegranate syrup and olive oil and this Mexican dish in an Arabic twist.

Learned this dish from my cousin, you simply cook some onions,tomatoes and black beans to form a sauce then spread it over the Nachos then add tahini sauce,chopped tomatoes,beans and some parsley on top. Really easy and light cause you don’t add cheese or butter,you can use light nachos for a healthier version.
