Algerian Almond Cookies ( حلوى الدمعه)

Hello everybody.

Saw this elegant delicacies recipe on Facebook that triggered me to try them immediately ,specially that I have all ingredients, after i published the photos on my page many members told me that these are Algerian cookies named “tear drops” maybe cause of its shape.

They’re simply a special dough filled with almonds, shaped like a tear drop using a long fork then shaped like a tear drop, baked then drizzled with syrup while still hot.

First three or four pieces were not good looking but then i figured the correct way , not difficult at all.

Ingredients and method:

for the dough:

  • 150 gm butter.
  • 1 tablespoon semolina.
  • 1 tablespoon yogurt
  • 1 tablespoon coconut.
  • 2 tablespoons icing sugar.
  • 1 tablespoon baking powder.
  • 1 tsp vanilla .
  • 2 eggs
  • 2- 21/2 cups flour.
  • 1 cup crushed almonds with 1 tablespoon sugar.
  • sugar syrup.

  • Beat eggs with vanilla .
  • add butter then all dry ingredients .
  • add flour gradually and knead well till you get a soft dough.

  • shape dough into small size balls.
  • spread dough over a wide fork then fill with almonds and close.

  • remove dough and twist to close ends.
  • you can put an almond in the middle.

  • bake in a medium heated oven for 20-30 minutes or till golden.
  • while still hot drizzle syrup on them.

You can add crushed pistachios on ends if you like.

الحشوه لوز مطحون مع سكر ناعم.

Greek Semolina Cake.

Hello again.

A usual companion to cabbages and cold weather is this semolina cake or harisseh.

Frankly the usual harisseh that most people do never turn out successful,don’t ask me why 😀,not my specialty I guess. So to ensure that it’s good I make this Greek one, very similar but contains eggs so it’s more like a cake but same taste and texture.

Here are the ingredients and method :

*4 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup coconut (optional).
* 1/2 yoghurt.
* 3/4 cup butter.
* 2 1/2 cups coarse or fine semolina.
* 2 tsp baking powder.
* 1/4 tsp sodium bicarbonate.
For the sugar syrup :
* 3 cups sugar.
* 1 1/2 cups water.
* 1 small spoon lemon juice.

*Mix all ingredients alternatively. Grease a
medium size pan with butter or tahini (طحينه ).add the batter
*Sprinkle with almonds then bake in a medium heated oven till golden.
* As for the syrup mix sugar and water, heat till it boils, add lemon juice and leave to simmer till it thickens .approximately 20-30 min.leave to cool.
* Add cold syrup on cake when still hot so as to be well absorbed .

Knafeh Cheesecake.

Hello everybody.

Invited to my sister in-law’s for Iftar today, promised her to make something sweet so I kept searching for something new and suitable for Ramadan as well.

Then it hit me,remembered this awesome dessert we always eat at Haneen Cafe which is knafeh cheesecake, stylish eastern western kind of dessert and luckily it turned out to be easy and light.

Looks good and yummy but we’ll have to wait till after we eat to decide.

Ingredients and method :
For the crust :
# 1 pack digestive biscuits.
# 1/2 cup butter.
# 1 tsp cinnamon (optional)

For the filling :
# 2 packs yogurt ( 1 big cup)
# 6 pieces Kiri or pack cream cheese.
# 1 cup powdered milk.
# 1/2 cup sugar.

#3 tablespoons labaneh

#2 eggs

#3 tablespoons flour
# 1 tsp vanilla.

Topping :
# 1 1/2 cups knafeh dough( عجينه كنافه)
# 1/2 cup melted butter.
# orange food coloring.
# some pistachios.
# syrup when served.

# mix crust ingredients well, crushed biscuits, butter and cinnamon
# press in a spring pan then freeze for 30 minutes
# mix filling ingredients well alternatively.

#pour over crust then bake in a medium heated oven

#wrap baking tin with foil and bake in

a water bath

# meanwhile mix knafeh dough, butter and orange color well with your hands.
# spread over filling and roast again till crispy a bit (5-10 minutes)

# keep in fridge 4-5 hours.
# garnish with pistachios and syrup when you serve.

Ramadan Preparations.

Hello everybody.

Busy morning preparing for Ramadan cause I get too tired first day so thought I’ll do some things to be at ease.

Did some samboosek, cheese rolls, roasted bread and a big pot of syrup for the sweets.

Lunch was various fries, potatoes, eggplants and cauliflowers with pickles and tahini sauce.

Salad was Rita’s recipe, wide green beans with garlic and cherry tomatoes.

Honey Cakes.

Happy Easter to all friends celebrating today,though usually it’s supposed to be a Spring warm day this time of year specially on Easter Sunday but today happened to be rainy and cold, but I’m sure everybody celebrating felt the warmth and spirit of this Holy day.

Honey cakes are traditional Cypriot and Greek dessert usually done Easter time or New Years, so delicious and aromatic plus very easy to do.

 

Ingredients and method: ( I did half quantity only)

* 1 cup butter.

* 1 cup light olive oil.

* 1 kilo flour.

* 1 cup sugar.

* 1 tsp cinnamon.

* 1/2 tsp cloves.

* grated peel of a lemon or orange.

* 2 tsp baking powder.

* 1 cup yogurt.

* 1 cup crushed walnuts.

For the syrup:

* 2 cups sugar.

* 3 cups water.

* 1 cup honey.

* juice of one lemon.

* walnuts and cinnamon to sprinkle.

* Put the butter and flour in a big bowl and beat well.

* add oil ,sugar, cinnamon,cloves and peel.

* add soda and yogurt and knead well.

* add walnuts .

* make small balls then roll them over the grater to get a nice shape.

* bake in a medium heated oven till golden from bottom and surface.

* meanwhile make the syrup by boiling sugar and water for 10 minutes then adding the honey and lemon and boil further more till it’s thick.

* when cakes are done and cooled dip them in syrup then sprinkle with cinnamon and crushed walnuts

 

 

Self-Saucing Chocolate Pudding.

Hello everybody.

As you may also noticed we’re Mansaf-ing today,and farewell treat to dear Haidar before heading back to Subway and frozen meals.As usual it was superb and we’ll done,my mother in-law’s specialty hope God give her good health and energy to keep on doing it :mrgreen:.
My part was the dessert, I arranged a small tray of sweets including fresh cream, honey, molasses and homemade halaweh with toasted bread sticks and made this new dish that was posted in my page from yummy yummy website which is self-saucing chocolate pudding.

Very easy to make plus it saves you time and effort to make a sauce or ganache for the cake .

Ingredients and method :
* 3 eggs .
* 1/2 cup butter .
* 1/4 cup coccoa .
* 3/4 cup sugar .
* 3/4 cup warm milk .
* 1 tablespoon Nescafe .
* 1 tsp baking powder .
*1 tsp vanilla.
* 1 cup chocolate chips or any kind of milk chocolate .
* 2 cups flour .

For the syrup :
* 2 1/2 boiling water .
* 1/2 cup sugar .
* 2 big spoonful of coccoa .

* whisk eggs,vanilla ,sugar,butter with milk and nescafe till frothy .
* add dry ingredients ( flour,coccoa and baking powder )
* fold in chocolate chips .

* mix syrup ingredients well.
* pour chocolate batter into a greased deep pan.
* pour hot syrup on top .
* bake in a medium heated oven for 40 minutes .
* you’ll have two separated layers of cake and pudding or thick syrup under it.
* serve alone or with vanilla ice cream .

Halva (حلاوه السميد).

Hello everybody, hope you’re enjoying the holiday so far.

Today we’re Mansaf-ing also,a record this month too much mansafs in such a short time,all by coincidence by the way.

A kind of dessert that’s both light and goes well with mansaf is this Greek recipe, they call it halva or semolina dessert.

Ingredients and method:

* 2 cups semolina ( you can use 1 coarse and 1 fine semolina or 2 fine )

* 3/4 cup vegetable oil.

* 3 cups sugar.

* 4 cups water.

* 1 tsp cinnamon.

* some almonds or walnuts for decoration.

 

* in one pan add semolina,oil  and cinnamon stir well  over low heat till all golden or brownish.

* in another pan boil sugar and water for 10 minutes.

* add syrup over semolina slowly and mix very well and leave to boil all together till it thickens.

* pour mixture in a mold or any shaped pan you have,you can add nuts in the bottom or later as you wish.

* leave in fridge to cool then turn it over and sprinkle with cinnamon before serving.

Strawberry Syrup.

Morning everybody.

Beautiful Spring day,spend the morning working in the garden, when done, cooking started. First I had some extra strawberries, I sliced them and added sugar on them till I finish cooking.
This syrup is very easy to make,  you can keep it in the fridge to use on cakes or ice cream, better than artificial ones in the market.

Ingredients and method:
* 1 cup sliced strawberries.
* 1 cup sugar.
* 1 tsp lemon juice.
* add sugar on strawberries and leave till all syrup is out.
* simmer on low heat till strawberries are tender.
* mix with hand blender then add lemon juice .
* simmer on very low hest for 5-10 minutes.
* serve with basic cake or ice cream.

Walnut Cake.

Hello everybody.

My husband’s dear aunt came for coffee  yesterday afternoon, thought about this cake to be a good choice with coffee or tea, I haven’t done it  for so long.
I also have this recipe from my Greek cook book.

Ingredients:
* 3/4 cup sugar.
* 1 cup butter.
* 1/2 cup butter ( I used vegetable oil thus time, turned out just fine).
* 2 cups crushed walnuts.
* 1 1/2 cups crushed rusk.
* 1 1/2 cups flour.
* 5  eggs.
* 1 tsp baking soda.
* 1 tsp cinnamon
* 1/4 tsp cloves.
* 1/4 tsp cloves.
* 3 tsp baking powder.
For the syrup:
* 2 cups sugar.
*1 cup water.
* 1 tsp lemon juice.
Method:
* Beat the eggs sugar butter or oil .
* Add walnuts, rusks, spices.
* Add flour, baking powder and baking soda.
* Spread in a greased pan and bake for 45-50 minutes.
* Prepare the syrup by boiling mixture then leave to simmer for 20-30 minutes.
* Pour the syrup over hot cake and serve.
