Spring Rolls With Sweet and Sour Sauce.

Hello again.

Have some extra cabbage leaves so today I bought a pack of spring roll sheets or thin dough so as to stuff them.

Result was perfect, boys loved them, crispy and so fresh.I also made sweet and sour sauce to go along with them.

Ingredients of stuffing and sauce:

* 3 carrots.
* one spring onion.
* shredded cabbage leaves (2-3 cups)
* sesame or vegetable oil.
* 2 tablespoons soy sauce.
* 1 tsp fresh grated ginger.
* spring rolls sheets.
* 1 tablespoon cornstarch dissolved in water to close the rolls.

* saute onions, thinly shredded carrots and cabbages till tender.
* add ginger and soy sauce, leave to simmer till all liquid dries.
* when totally cooled stuff in roll and close with a bit of cornstarch mixture.
* deep fry till crispy and golden.

Serve with sweet and sour sauce which is a mixture of:
* 3 tablespoons soy sauce.
* 3 tablespoons ketchup.
* 1 tablespoon sugar.
* 1 tablespoon vinegar.
* 1 tablespoon cornstarch.
Mix all ingredients together then heat till thick and creamy.

Veal Broccoli Stir Fry.

Hello everybody.

Nice relaxing Friday with only me and my eldest son home for lunch so lunch was a small portion for two and it was superb.

Decided to make this easy quick recipe I saw on Pinterest couple of days ago,with a small addition from me,roasted sesame seeds, really yummy.

  • Ingredients and method :
    # 4 pieces of veal steaks cut to squares.
    #1 tablespoon flour.
    # 1 green onion.
    # broccoli florettes.
    # sweet and sour sauce:
    * 2 tablespoons soy sauce.
    * 1 tablespoon honey.
    * 1 tablespoon vinegar
    * 1 tablespoon corn starch.
    * 1 tsp chili powder.
    * 1 tsp fresh ginger.
    * 3/4 cup water.

#some sesame seeds.

# coat veal with flour very well then stir fry in some hot sesame or vegetable oil.
# when golden and crisp  add chopped onion and broccoli and stir well till all crispy.
# add the sauce which is a mix of all ingredients.
#leave to simmer for 5 min then sprinkle sesame seeds on top.

Serve with steamed rice or noodles.

Beef Sweet and Sour.

Hello everybody.

Typical lazy Friday,started by waking up really late for a change, usual coffee at Rula’s noon time then asking what to eat for lunch, decided to make this dish cause It’s been long time since we ate it plus me and my friends went out to dinner the other night at Ren Chai and ordered the same dish but It wasn’t that good or I didn’t enjoy it well !

Searched for an easy recipe to do,found this at Allrecipes.com,great web by the way!

Ingredients and method:

* meat balls (sauteed ahead till golden)

* sweet peppers chopped to large pieces.

* 1 onion chopped to large pieces also.

* 3-4 pieces pineapples.

* 1 tablespoon brown sugar.

*1 tablespoon starch.

* 2 big spoons ketchup.

* 2 big spoons soy sauce.

* 1 tablespoon vinegar.

* 1 small cup water.

 

* saute peppers and onions in a bit of vegetable oil till tender.

* add the meat balls .

* mix ketchup,soy sauce,sugar,starch,vinegar and water well together.

* add mixture to pan and stir,then add pineapples.

* simmer for 15-20 minutes.

* serve with boiled rice.

 

Really tasty and well flavored I even didn’t add salt or pepper !
