Tomatoes are in season now and I do have plenty cause my hubby planted some in the farm and it all ripened in this heat, so better do something with it.
Searched for ways to make dried tomatoes, results were either in the oven for 5-7 hours which is something I’ll never do in this heat or sun-dried for 3 days and since weather is dry and hot these days so this was my option.
You simply cut ripe hard tomatoes to halves or quarters, remove seeds and watery bulb, sprinkle freely with salt and/or pepper, oregano and basil.
Spread all on a flat sieve or wooden tray, I flattened them on a metal mesh ( the one we use for BBQ) and leave them in the sun for three days or till completely dry .
Cover with cheese cloth or anything light to keep insects and dust away.
Long hot hectic day, among-st all day work Roya TV called to ask me to go cook tomorrow another time, doubled my chores for today but never-mind I’m so happy and excited, this means yesterday’s episode was a success.
Lunch today was many leftovers with a big green salad with sun-dried tomatoes, grilled white cheese and some pine nuts, dressing was simple vinaigrette with a bit of pomegranate sauce.
I also made another special requested Humming Bird cake for my lovely cousin’s birthday. Many happy returns dear.
Mom and my lovely niece visited me this morning, great timing cause I was about to begin making some pastries so a helping hand was a blessing.
I made three kinds of fillings, cheese, green fresh thyme with onions, tomatoes, sun dried tomatoes and olive oil plus some stripped green onions that I always make like swirls . really yummy and great with labaneh dip .
While we were working my niece made a small strawberry cake and decorated it, it came out a beautiful all over pinkish lively cake, her favorite color of course.
Well, hope all is ready for the snow coming tomorrow,I went grocery shopping today and people were crazy buying piles of stuff, hope we won’t be stuck for a long time like last year, fingers crossed !!!!!
Remember the strawberry pineapple cake from last week? Well I did another one today for my friends’ birthdays,we went out for breakfast to Cafe Hanin again and I took it with me. Happy Birthday everybody .
Lunch was spaghetti with chicken, broccoli, sun dried tomatoes, pesto sauce and cream topped with Parmesan cheese, really yummy .
I also made this delicious salad I saw on Pinterest , it contains beetroot, roca leaves, feta cheese, flax seeds, mushrooms and peppers, dressing is simple vinaigrette, so refreshing.
Beetroot is a very healthy nutritious veggie,I always boil some and use in salads or simply sliced with a drizzle of lemon and olive oil when in season, excellent source of vitamins, fibers and anti oxidants plus having many medical uses such as lowering blood pressure and many many more.
End of a long holiday, rearranging Eid sweets and Arabic coffee stuff, back to cooking and kitchen work.
lunch was fava beans with rice, didn’t make much cause only me and my youngest son like it,so I made some pastries the old fashion way, dough is simple flour (whole grain and white),yeast, oil, salt then added some sesame seeds and black seeds (قزحه).
Filling was green thyme leaves, finely chopped onion rubbed with salt and pepper, finely chopped fresh tomatoes and sun dried tomatoes, salt, pepper and chili powder and a good amount of olive oil.
Make the dough into balls then spread them, fill and close as triangles,I filled the extra dough with cheese and turkey.
