Crispy Caramel Bites.

Hello everybody.
Another dessert done yesterday was this super easy recipe I’ve learned from a friend couple of years ago.

You know the typical ready samboosek dough?  Well you only have to cut it lengthwise fold it like a butterfly then stick it with some water. Deep fry then sprinkle with cinnamon and icing sugar.

Served with caramel sauce which is caramelized sugar with some water and heavy cream all whisked well together.

Very easy and delicious dish.

Traditional Iraqi Maher Party.(عقد قران عراقي).

Hello everybody.

Last night I witnessed for the first time an Iraqi engagement or let’s say wedding vows commitment ceremony, though we’ve been to many Iraqi parties before but  this one was for for a close member of my family,my sweet sister in -law’s daughter.

Ceremonies took place as soon as the Sheikh or Judge entered, first of all bride sat infront of a big table filled with silver and white ornaments and bowls,each one symbolizing something which includes:

* Silver mirror.

* 7 bowls filled with white sweets,sugar,candy,cookies…etc.( for good luck and white happy sweet life ahead)

* 7 bowls filled with certain spices ( so that couples life be filled with spiced moments).

* lock and key.

* bottle of mercury.

* big white candle.

* white boxes contains all brides dowry (new clothes,perfumes..etc that the groom’d family bought her)

* silver bowl with water and bay leaves in.

* cardamon and honey.

* 2 big sugar cones.

 

They started by bride placing her feet in the bay leaf water, placing cardamon between her fingers and reading a certain verse from the Holy Quran meanwhile four girls (whom must be in the age of marriage) holds a white sheet over her head,another girls stands to unlock the key,one to shake the mercury, and this one I loved most a happily married lady with children rubs sugar over the bride’s head,how’s that ??

Finally when Sheikh finishes writing the wedding contract he comes in and ask her if she agrees and they all sign and of course all family and friends come in to congratulate the couple and their family ,followed by Iraqi dancing and a delicious dinner .

Lovely bride made an amazing candy bar filled with yummy candy and cookies and each guest filled a small bag before she left, very nice give away thought !

Om Ali ( ام علي).

Hello everybody.

no cooking today cause we went shopping at City Mall and had lunch there,in the way back I bought ingredients of Om Ali dessert cause my husband been craving it since two weeks and I hadn’t got the time to do it at all,it’ll be a nice treat after his hunting trip when he comes home.

This dessert is of Egyptian origin,as they say the mother of Egyptian desserts, it’s said that it’s named after the sultan’s wife Om Ali who distributed this sweet after the death of the Sultan’s second wife. It’s basically done from puff pastry with nuts and cream.

Ingredients and method:

* 1 pack puff pastry.

* 3 cups pf milk.

* 2 packs cream or fresh double cream.

*  1 cup sugar.

* some walnuts,almonds,pistachio,raisins and coconut.

 

* toast the nuts in the oven for 10 minutes then crush them.

* bake the puff pastry till golden.

* heat the milk,cream and sugar till they boil.

* shred the pastry in a deep oven pan then add nuts,coconut and raisins .

* add half the amount of milk then add another layer of pastry and nuts.

* add remaining milk and sprinkle with some cinnamon.

* bake in the oven for 15-20 minutes .

This dish is served hot,you can make it in a pottery pan so as to stay warm for a long time.

Lazy Cake <3

Hello again.

Last Wednesday we were invited at my uncle’s house on the occasion of his son’s graduation from university. As usual my auntie made lots of yummy food,table was various and full of many kinds of both finger food and desserts.

I made for her the old fashioned lazy cake,this might be the oldest and first dessert a girl might start doing in her teens,cause it’s easy and quick to do,that’s why I think it’s called lazy cause any lazy person can do it without much effort 🙂

This old recipe of mine contains eggs,but cooked not raw, you can find many modified or other ones without it,but this one is a sure success every time and unbelievably tasty.

Ingredients and method:

* 3-4 packs plain biscuits.

* 3/4 cup butter.

* 3/4 cup cocoa powder.

* 1 cup sugar.

* 3 eggs.

* vanilla.

* crush biscuits to medium size pieces.

* mix butter,sugar,cocoa,vanilla and eggs very well and heat till all combined to a smooth thick mixture.

* add over biscuits then pour into a mold of your choice.

* decorate with melted chocolate or cocoa powder.

Cinnabon Pancakes

Morning everybody.

Long weekend this week,public holiday this Sunday,Jordan celebrating Independence Day .I’m sure many working moms  are happy now,wish you all a relaxing enjoyable time.

As a change this morning cause all of us have plans at lunch time,I made a rich fulfilling breakfast. saw this recipe on Pinterest ,it’s a combination of pancakes and cinnabons,really tasty but a bit too sweet,first two pieces were really sweet so next batch I lessened amount of cinnabon mix on pancake so  itwas better.

I ended my breakfast with a piece of white cheese to reduce sweetness in my mouth !! other than that it’s really good.

Ingredients and method:

* For pancakes ( you can use ready mix and add on it the cinnabon mix also)

* 1 egg.

* 1 cup flour.

* 1 cup milk.

* 1 tablespoon vegetable oil.

* 1/2 tsp baking powder.

* pinch of salt.

* Cinnabon mixture:

* 2 tablespoons butter.

* 3 tablespoons brown sugar.

* 1 tsp cinnamon.

* For the glaze:

* cream cheese ( I didn’t have it today so you can do without it)

* 1/4 cup icing sugar.

* 2-3 tablespoons milk .

 

* Mix pancake ingredients very well.

*Mix cinnabon ingredients after melting the butter.

* mix glaze ingredients well also.

* pour pancake mix in a  heated non stick pan or skillet ( enough to cover it)

*add a small spoonful of cinnabon mix on top as a swirl.

* lower heat till pancake is dry.

* top with glaze and walnuts.

Cardamom Cookies.

Hello everybody.
  I was invited to an event for Panasonic Beauty today followed by a delicious lunch. Plus I do have lots of food in the fridge so no cooking today.
   Nevertheless,couldn’t leave blog empty, so cookies are the choice, nobody will complain to find them in the jar tomorrow morning.
  Found this recipe in one of my cook books. Good one and easy plus I do have some fresh cardamom seeds, very aromatic and spicy, so thought to try these cookies.

Ingredients and method:
*2 cups flour.
* 4 teaspoons cardamom powder.
* 1/4 tsp salt.
* 1/2 cup grounded almonds.
* 1/2 cup sugar.
* 3/4 cup melted butter.
For the coating:
* 1 cup confectionary sugar (سكر ناعم ).
* 2 teaspoons powdered cardamom.
* almonds.

* mix flour, cardamom powder, sugar, grounded almonds and salt together. * add butter and mix with your hands till you have a frim dough. You can add a bit of cold water for easy handing.
* form dough into small balls.
* coat with powdered sugar-cardamom mixture. * press balls with a small cup to flatten a bit.
* decorate with almonds.
* bake in a medium heated oven for 10-13 minutes. Till bottom slightly golden then toast surface for 5 minutes.
* store in a well closed jar.

Perfect with black coffee, please try them, they’re really good ♡♥.
