Turkish Beans Salad.

Hello everybody.

Busy Saturday as usual but warm Summer breeze lightens up the day for me.

Lunch today was fresh green fava beans with olive oil,garlic and coriander along with rich ewe yogurt all bought from Jerash yesterday.

I also made this new salad recipe I saw in the newspaper, full of nutritious beans like corn, hummus and black beans tossed with lettuce,parsley and green onions. Dressing is simple vinegrett but I added some pomegranate sauce.

I also dipped some hard labaneh balls in olive oil, fresh thyme and rosemary leaves,again fresh from Jerash.

Family Flavors April Issue.

Hello everybody.

After a small delay this month, April Issue of Family Flavors magazine is issued and in stores.

I posted many delicious Mediterranean dishes like fava beans dip and pear pie with a very interesting calender, plus the usual Healthy and Happy part.

Jamie Oliver’s 15 Minutes Tomato Soup.

Hello everybody.

Well it’s Winter all over again with low temperatures and heavy rain as if we’re in mid January. A soup will be perfect specially a chili hot one.

Saw this recipe on TV last week  Jamie Oliver’s 15 minutes meal,I just love this chef, he cooks with a style and makes everything looks easy and yummy like this soup.

Ingredients and method:

For the soup:

* 1 green onion chopped.

* some chopped chives (optional)

* 1 red chili pepper.

* some preserved roasted red peppers ( didn’t have today )

* some chopped fresh coriander.

* 1 can diced tomatoes.

* 3 cups water.

* salt,pepper.

* Saute onions,peppers,chives and coriander with some olive oil.

* add tomatoes and water then season with salt and pepper.

* leave to simmer till done then blend with hand mixer.

* Toppings and additives:

* Roasted tortillas with melted cheddar cheese.

* chili peppers,coriander, feta cheese and black olives.

* yogurt mixed with fresh mint leaves ( original one contained crushed jalapenos also)

Upon serving put tortillas in bottom of bowl,add whatever you like from toppings, add soup then drizzle yogurt mint sauce on top.

Beautiful Gathering

Hello everybody.
Such a lovely day, great for sitting outdoors and enjoying the breeze and warm weather with my lovely group of friends.
A visit postponed many times to eat Caraway since my nephew was born, got the caraway powder straight from Nablus this time from my friend,fresh and tasty though unfortunately she couldn’t come today, thank you dear Nadia.
I also made some fresh ka3ek with sesame seeds, cheese platters and spinach tabouleh, all yummy with great company of course.

Another Shakshouka.

Hello everybody.

Beautiful weather a real Spring day,going to a gathering this afternoon so my share is Za’tar Puffs amazing how dough rises quickly in warm weather, all process of kneading, cutting and baking took less than an hour.

Lunch was kids’ favorite Shakshuka, great option, easy and everyone love it.

Chocolate Nuts cake and Pavlova.

Hello everybody .

No cooking today cause each one is invited somewhere and hubby went hunting.

I did two desserts though,a chocolate nuts cream cake for my friend’s sister birthday and a fruit Pavlova to take with me to my uncle’s house for dinner.

All looked yummy, hope taste is as good !

Asparagus Pie.

Hello everybody.

End of a very busy week at last, hope weekend will be relatively relaxing, though till now too much is scheduled already.
Well lunch today was an open buffet as I call it,all leftovers in the fridge but I did a small side dish cause I have these freshly picked asparagus so it’s a shame not to do something with them, so I picked this recipe from Pinterest ,easy and quick and luckily I have all ingredients.

Ingredients and method :
* 1 pack puff pastry.
* 2 tablespoons labaneh or sour cream.
* 1 tsp mustard.
* 1 egg.
* 1 cup grated cheese ( any kind that melts).
* asparagus.
* Salt, pepper and a bit of nutmeg.

* when pastry is tender roll it to a rectangle shape then put it in a rectangular oven pan.leave sides up a little.
* bake in a medium heated oven for 20 minutes or till it’s golden from bottom.
* mix half of the cheese, egg, labaneh and mustard well then add salt, pepper and nutmeg.
* spread mixture over half baked pastry then line up the asparagus after cutting the hard stems.
* sprinkle rest of cheese on top then bake again for 15 minutes then roast top till golden.
Serve hot as a side dish with any roasted beef or chicken.

Fava Beans In Cooked Yogurt.-(فول باللبن)

Hello everybody.

Seems winter is coming back!!!

Woke up this morning to thunder and rain,though weather is very hot, typical Amman Spring .

Today’s dish is Syrian,we used to order it from the famous Syrian restaurant Jabri when having guests for dinner or or lunch,a  specialty of his  then I saw a Syrian chef doing it on T.V turned out to be an easy thing to do after all, and started doing it at home ever since.

Ingredients and method:

* 5-6 pieces of beef or lamp steaks .

* 1 big thinly sliced onion.

* 1 kg green fava beans.

* 1 kg Ewe yogurt (لبن نعاج).

* 3 big spoons cornflower.

* salt ,pepper,all spice.

* some cream or milk (optional).

 

* boil beans in salted water till tender.

* mix yogurt with cornstarch and 4 cups water with hand mixer very well,add salt and pepper then leave to boil and thicken,stir constantly.

* season beef then saute till brownish on both sides.

* add onions, cover and leave to simmer on low heat.

* remove water from beans and add them over meat .

* when yogurt is thick pour over meat and beans,add more spices if you like then leave to simmer all together on very low heat or in the oven for 1 hour.

* you can add cream or milk at the end.

* serve with white rice or alone.

Though kids don’t like it too much but I do think this is a very tasty dish, one of my favorites 😉

Aqaba Trip Goodies :)

Hello everybody

My son and his friends are going to Aqaba tomorrow morning, thought i’ll make them some goodies to eat during their stay cause they’re staying in an apartment not a hotel.

Best thing to do for easy handling is some some hot dogs,cheese and za’tar pastries,perfect for breakfast or snacks. i also made some cinnamon rolls,a new recipe I got from www.foodlve.com.

 *Pastries

ingredients and method:

* 4 cups flour.

* 1/2 cup vegetable oil.

* 1 cup warm milk.

* 1 tsp salt.

* 1 big spoon instant yeast.

* 1 tablespoon sugar.

* some water if needed for kneading.

 

* Mix all dry ingredients then add milk and oil,knead well for 5 minutes then leave to rest and rise in a warm place.

* prepare stuffing: hot dogs with ketchup and mustard,cheese,and za’tar with oil.

* I made hot dogs like rolls,cheese as balls and za’tar as parcels,of course you can chose any shape you like.

* bake in a well heated oven till golden.

Hope they’ll like them,look and taste are perfect.

Fresh Sauteed Asparagus.

Hello everybody.
Hope you’re all enjoying your weekend.

We went for a drive noon then ended up stopping by our dear friend Salam’s farm for coffee.

This farm or actually house is located in the beautiful picturesque village Rmeimeen, you can’t imagine how quiet and relaxing this place is, specially now, green hills and valleys, just perfect.
Our friend cultivates many vegetables and fruits, we always go home loaded with whatever is in season.Today he gave me a big bunch of fresh asparagus.

  Back home to make lunch, took out burgers,made some caramelized onions with mushroom sauce as a twist, lovely with pickles on top.
Also made simple salad but added croutons, summaq and some hard labaneh balls dipped in sesame seeds, ate that at a restaurant the other day, they even gave it a fancy name “Jarash Salad”.
  As for the asparagus I simply sauteed them in butter, olive oil and garlic then sprinkled lemon juice on top when tender. DELICIOUS !

Great lunch, we were even lucky weather is warm and ate outdoors♡♥
