Naked Red Velvet Cake.

Hello everybody.

Went out this morning to celebrate a precious friend’s birthday, lovely people deserves beautiful things that’s why I made a colorful red velvet caked topped with strawberries and red currents.

Recipe is the same one I usually do but this time in three layers and naked style frosting, meaning only a bit of icing around the cake. It was really amazing, light and fluffy.

Here are ingredients and method of the cake:

* 2 large eggs.

* 1 1/4 cups sugar.

* 1/2 cup oil.

*1/2 cup butter.

* 2/3  cup yogurt.

* 1/3 cup milk.

* 1 tablespoon cocoa powder.

* 1 tablespoon vinegar.

* 1 teaspoon baking soda.

* 1 teaspoon baking powder.

* 1 tsp vanilla.

* 2 teaspoons red food coloring.

* 2 1/2 cups flour.

Icing:

* 2 packs cream cheese.

* 1/2 cup whipping fresh cream.

* 2 cups powdered sugar .

or :

*1 pack cream cheese.

* 2 packs dream whip.

* 1/2 cup powdered sugar.

* some red colored food glitter for decoration.

* beat eggs,vanilla,sugar  till frothy and creamy.

* add rest of ingredients consequently.

* bake cake in two round baking pans (same size)

* Beat frosting ingredients well together and leave to cool in fridge.

* when cake is done and cooled assemble the two layers with frosting in between and all over.

* leave in fridge to settle for couple of hours.

* decorate top with sprinkles in any shape you like.

Valentine’s Day Ideas.

Hello everybody.

No cooking today so I decided to do some cute dishes for Valentine’s Day which is coming up in the next few days or you can even make them in anniversaries or birthdays.

I made these cute little pies with beets and remaining pieces turned to a small salad then made Red Velvet cupcakes and used smashed beets instead of food coloring but seems I over baked beets cause color turned so dark not red, results looked like a chocolate cupcake rather than a red velvet, taste was pretty good .

 

Ingredients and method of beet pies:

* puff pastry squares.

* some olive oil,salt and pepper.

* boiled or baked beetroot.

* feta cheese or blue cheese as you prefer.

* walnuts.

* balsamic vinegar.

 

* make heart shapes ( small or big) with cookie cutters.

* spread puff pastry squares on  wax paper then prick them with a fork so as they won’t puff a lot.

* brush with olive oil,salt and pepper.

* line up the beets then bake in a medium heated oven for 30 minutes or till puffs are golden.

* sprinkle feta cheese or blue cheese, walnuts then drizzle with condensed balsamic vinegar.

 

As for the red velvet I took the recipe from a nice food blog called little sunny kitchen , very easy recipe that uses beets instead of food coloring.

Hubby’s Birthday Celebrations.

Hello everybody.

Big Intercontinental breakfast this morning or actually noon celebrating my beloved hubby’s birthday,his favorite dishes eggs in different kinds and cheeses, it was really a nice gathering since we seldom meet for breakfast, a benefit from this storm at least 🙂

We skipped lunch cause all was full and now we’ll have the cake he asked for Red Velvet and of course a must every year Cream Caramel also a big big favorite.

Hope you’re all having a good time in this cold weather, I know it’s boring and makes one eat a lot but what else to do ?

Red Velvet Cake <3

Hello everybody.

As I mentioned yesterday we have a big gathering today,actually our lovely guests just left. Both company and food were awesome,we really had a good time.

I made lots of stuff ,spinach tabouleh,cooked brown lentils ( حراق اصبعه),thyme buns,cheese platter and my sister in-law made chicken pie plus we ordered kibbeh and halouva .

Sweets were Red Velvet Cake, rice pudding and fruits.

Here are ingredients and method of the cake:

Appetizer Platter.

Hello everybody.

After yesterday’s big breakfast I went shopping to prepare for dinner,our dear friends Salam and Flora came to dinner last night with sweet adorable baby Mariam,lovely evening and food.

I made a big appetizers platter similar to the one we ate last week at Bonita Restaurant,well it was close enough but not as perfect. It contained avocados with tomatoes,smoked salmon with cream cheese dill filling on a bed of rocca, frilled chicken with pesto sauce on top and grilled eggplants ant tomatoes with cheese in between or as they name it eggplant tower.

Salad was Rocca with pomegranate seeds,walnuts and cheese, main dish was grilled steaks with lemon thyme butter on top and baked potatoes and veggies on the side.

Dessert was an extremely rich delicious Velvet Cake done by my lovely guest ( homemade from scratch), you’re right Flora tasted even better today, thank you my dear <3

Happy Valentine ( Fruit Mousse).

Hello everybody.

Lovely morning, beautiful weather, great day for outings. Well our celebration was a colorful Valentine breakfast in the garden..who says one has to go out or celebrate with a fuss. Simple things can be more meaningful and loving. Don’t you agree♡♥.

Though I did more things.cause we have new love birds in the family, I baked a ready mix Red Velvet cake and decorated it for them. Looks good, hope it tastes as it looks. Enjoy Razan and Belal♡♥♡♥

As I mentioned yesterday,  we’re invited to lunch at my sister in-law ‘s house cause her sweet daughter Dina is home for vacation.
Dessert is on me,from the spirit of Valentine and cause it’s strawberry season. I made a fruit mouse with lady fingers biscuits. I have this recipe  long time ago from my dear friend Ruba.

Ingredients:
* 2 packs lady fingers.
* 1 pack double cream.
* 1 pack kiri or Philadelphia cheese.
* 1 pack cream caramel powder.
* 100 ml fresh creme.
* 150 ml milk.
* 1 can pineapple.
* fresh strawberries.
* any other fruits you have.

Method:

* Mix the cream, fresh cream, cream caramel powder,milk very well till thick.leave in fridge for 4-5 hours.
* line the lady fingers in a spring pan.then sprinkle with pineapple syrup.
* spread cream mixture over biscuits then add chopped fruits.
* add another layer of biscuits then cream and decorate top with fruits of your choice.
* sprinkle toasted coconuts if you like.
