Farewell Dinner Party .

Morning everybody.

Just realized that I  haven’t posted since Feb 10’th , never happened before by the way, reason is that I’ve been very busy lately preparing for catering a big dinner for my sister in-law’s daughter farewell dinner. Thank God it was a big success, food was delicious and everybody was happy . Congratulations lovely bride to be.

Cinnabon Rolls.

Hello everybody.
Sorry for the delay but it was such a busy day,we even had lunch which was Moussaka very late.

Today’s order was for my cousin and neighbor,quesadillas and cinnabon rolls. Doing them for the first time and recipe from the net with some alterations specially in the glaze ingredients cause it contained too much sugar.

Extra dough turned into orange buttons, simple knots with marmalade on top, these were amazing.

Ingredients and method :

# 1 1/2 cups warm milk.
# 1 tsp instant yeast.
# 1 egg.
# 1/4 cup sugar.
# 1/4 cup butter.
# 3-4 cups flour.

Filling :
# 4 tablespoons butter.
# 1/4 cup brown sugar.
# 1/4 cup sugar.
# 1 tablespoon cinnamon.
# 1/4 cup walnuts.

Glaze :
# 4 pieces Kiri cheese.
# 1/4 cup icing sugar(سكر ناعم)
# 1 pack cream ( علبه قشطه)

* use half of the milk quantity, dissolve in it yeast and sugar.
* beat egg, butter and rest of milk.
* add yeast milk sugar mixture after it froths and beat all together.
* gradually add flour and a pinch of salt till you get a soft dough.
* leave it covered in a warm place to rise.
* prepare the filling, mix all ingredients together.

* when dough rises roll it to a big rectangular shape spreading flour under and over it to prevent sticking.
*spread filling then roll it.
* cut to 2 inches pieces, turn around and flatten them a bit.
* arrange rolls in a greased pan then bake in a medium heated oven for 20-30 minutes or till golden from sides.
* mix glaze ingredients and beat well till creamy then add on top of rolls while still hot.

Lunch Order For Jeeran Amman Company.

Hello everybody.

Sorry for the delay but it was a long eventful day with an early start cause I had a lunch order for a group of employees at Jeeran company.

They ordered steaks with mushrooms and gravy, mashed potatoes, chicken with broccoli and cream along with pesto pasta, quesadillas and French Pizza.

Dessert was a treat from me,muhalabieh with caramel.

Chicken and Greek Quesadillas.

Hello everybody.
Though shopped groceries and went to vegetables’ shop but still had no clue what to cook till just before lunch.

Winner was chicken quesadillas and when I had two more extra pitta breads I made them Greek style,very tasty.

On the side I made a fava bean smashed dish,with tomatoes onions peppers and cumin also yummy.

Greek Style Quesadillas.

Hello everybody.

Very hot and busy morning , don’t know why streets and shops are full, finished grocery shopping as fast as I can to go back home 🙁

Lunch today was noodles with vegetables and chicken,with soy sauce,ketchup and ginger. It’s a favorite of ours all the time .

I also made a quick side dish, light vegetarian quesadillas,found this recipe on Pinterest. You can add chicken to it if you like, your choice. Tasted really really good,will certainly do them again !

Ingredients and method:

* large tortilla bread.

* feta cheese.

* mozzarella cheese.

* fresh parsley and mint , chopped.

* black olives.

* chopped sweet peppers.

* pesto sauce or fresh basil leaves.

* cherry tomatoes.

* oregano,salt and pepper.

* optional additives : onions or shredded chicken.

* add feta and mozzarella on half of the bread then add toppings as you like.

* grill or toast in the oven after brushing pan with a bit of oil.

Anarokrema.

Hello everybody.

How are you all? hope you’re not tired from fasting long hours!!

Today’s ftoor is kofta with sliced tomatoes and green peppers,chicken quesadillas,broad beans salad and Greek salad the way we ate it in a cozy restaurant in Limassol Marina called Derliciuos ,it’s basic Greek salad but with cute presentation.

As for dessert I made this also Greek dish called anarokrema, which is roasted phyllo or puff pastry  and cream with honey and nuts on top.

Ingredients and method:

* puff or baclava pastry roasted till golden.

* Anari cheese or any sweet white cheese with some sugar and rose water added to it ( like the one you use for qatayef)

* cream.

* walnuts and cinnamon.

* sugar syrup pr honey.

* After toasting the pastry layer it in a deep dish.

* mix cheese with cream,sugar and rose water and add on top.

* add walnuts and cinnamon.

* crush remaining pastry and add on top.

* keep in fridge to cool then add honey or syrup upon serving.

Quinoa Seeds.

Hello everybody. Today as a change of usual breakfast or lunch outings,which is  almost the most frequent entertainment for Ammany housewives, we were invited to an event done by “Gift Center” for the famous Eves Saint Laurent brand,a nice lecture introducing new products and a brief make up lesson,very nice and informative, we even went home with special gifts,thank you dear Nadia for the invitation,we really had a good time <3

Went back home to make lunch as quick as possible cause I took my time after the event finished testing makeup and perfumes so I was late ,I guess women forget themselves in such places don’t you agree?

Anyway I prepared ingredients to make chicken quesadilas before I left and made a new super easy quick recipe done with the loaf you buy from bakery (we call it Ramadan loaf ) then you add on it multiple kinds of cheeses ( kashkaval,halloum and white cheese) plus two spoons of labaneh,then toast it in the oven till golden. Thank you dear Maysoon for the savior dish.

Now for the quinoa part,these seeds are becoming famous cause of proven great benefits and healthy nutrients it contains,it’s now wildly used in salads and many other recipes.

Quinoa is considered a super food,it looks a lot like burghul we all know,but it must be cooked in a good amount of water then drained and used either in cold or warm dishes,it’s known to be rich in proteins,iron and fibers. I wanted to try it since my Facebook friend Mary sent me her beautiful cook book.

Here in Jordan you can find it in big stores only not in small supermarkets,last night I bought a small bag to try it ,well it tastes good,very much like burghul as I mentioned. I made a regular salad with grilled halloum,sun dried tomatoes and roasted almonds on top and added cooked quinoa seeds with it,really good, a chance for the kids to eat something nutritious.

Turned out a nice late lunch,all gone except for the loaf,kept it for dinner with a cup of tea 🙂

Quesadillas and Artichoke Salad.

Hello everybody.

I’m so sorry for the delay,I’m having trouble uploading,will rewrite the post again.

Today’s lunch is Mexican, chicken quesadillas are famous appetizers or even main dish,ate them a while ago at my uncle’s house,and been waiting for a chance to do them since then,

After a quick search and finding many different recipes,I made this one,they’re all basically the same, but I liked this cause they even have ingredients of the seasoning,better to use instead of ready ones. You can even keep them in a closed jar for later on.

Ingredients and method:

* 2 large finely chopped chicken breasts.

*1 finely chopped onion.

* 2 finely chopped garlic.

* finely chopped sweet colored peppers.

* grated sharp cheddar cheese.

* tortilla bread.

* seasoning : 3 tsp cornstarch,1 tsp salt,1 tsp sugar,1/2 tsp pepper,1 tsp paprika,1 tsp chili,1/2 tsp chili flakes,1 tsp garlic powder,1 tsp onion powder,1 envelope maggi powder ( optional)

mix well and keep in a well closed jar.

* heat some oil then add chicken,stir till dry.

* add 2 tsp of seasoning and mix well.

* add onions,garlic,peppers and simmer till done.

* grease oven pan.

* fill each tortilla in half,top with cheese then fold and sprinkle top and edges with a bit of water to seal.

* bake in a medium heated oven till golden and crisp on both sides.

* serve with sour cream or guacamole.

As for the salad:

*chop lettuce,cucumbers,mushrooms,cherry tomatoes,baby corns and slightly boiled artichokes.

* make dressing by mixing: mustard,honey,balsamic vinegar,pomegranate sauce,lemon juice,salt and olive oil and drizzle it on top.

Note: you can marinate artichokes in dressing for tastier flavor if you have time.
