Pineapple Pudding Dessert.

Hello everybody.

A dear friend of mine ordered chicken pie and any kind of dessert that contains pineapples, so after a quick search I came up with this version which is a mix of different recipes with some personal touches.

Ingredients are very similar to the apple pudding eclaires I usually do but with different filling.

Ingredients and method :

* 1 pack of plain biscuits باكيت بسكوت ساده.

* 1 tablespoon butter rubbed with crushed biscuits for the base. ملعقه كبيره زبده بنخلطها مع البسكوت المطحون للقاعدة.

*1 can pinnapple. علبه اناناس.

*filling :

* 1 cup vanilla pudding. كاسه مهلبيه فانيلا دانيت

* 6 kiri pieces. 6 حبات كيري

* one pack cream علبه قشطه

* 2 envelopes dream whip باكيتين كريما

* 4 pieces chopped pineapples اربع قطع اناناس مقطع

* half cup pineapple juice نص كوب صغير عصير اناناس.

* coconut جوز هند

* layer cups with biscuits butter mixture. اول طبقه بسكوت وزبده

* beat all filling ingredients till creamy and well combined. تخلط المقادير السابقه جيدا حتى تكثف وتتجانس

* add some extra pinnapple over biscuits then add cream filling. يضاف بعض قطع الاناناس فوق البسكوت ثم طبقه من الخلطه.

*garnish with roasted coconut and leave to cool in the fridge. تزين بجوز الهند المحمص وتترك بالثلاجة لحتى تبرد.

Great Depression Cake ( No Egg No Milk)

Hello everybody.

Yesterday I met a sweet lady who asked me if I make no egg and milk cake cause as you know it’s fasting time now and she had trouble finding one for her mom on Mother’s day.

Her question intrigued me to look for such recipe which led me to many.Most famous ones are called “big depression” or ” crazy cake” or “wacky cake”. Reason for this name goes back to the great depression time when eggs and dairy products were available so people had to use other resources to make cake. Result was really good and light, I changed a bit in the recipe to add up the flavor and topped it with pineapples and roasted coconuts.

Ingredients and method:

*3 1/2 cups flour.

*2 cups sugar ( I used only 1)

* 1/4 tsp salt.

*2 tsp baking powder.

*1/2 cup coconut.

*1 tsp lemon zest.

*1 tsp vanilla.

*2 tsp white vinegar.

*5 tablespoons vegetable oil.

*2 cups water.

* Some pineapples with it’s juice and roasted coconuts for garnish (optional)

*grease a big oven pan with some oil.

*mix all dry ingredients very well then put them in the pan.

*make 3 depressions in the flour mixture, two small and one bigger.

*put the vanilla in the fist small hole, vinegar in the other and finally oil in the big one.

*add water on top of  and mix all together well.

* Bake in a medium heated oven for 25-30 minutes or till try to toothpick test.

*when cooled add some pineapple juice on top and garnish with pineapples and coconut.

I’ll definitely try the chocolate and fruits version of this one soon, very easy and yummy.

 

 

 

 

 

 

Pina Colada Granita.

Hello again.

Had some fresh pineapples in the fridge that nobody wants to eat so it clicked my mind to make it granitta style and added some coconuts to give it a kick ,how about that?

Result was super refreshing yummy.

 

Ingredients:

* 1/2 cup sugar.

* 1/2 cup water.

* 2 cups pineapples.

* 1/2 cup coconuts.

* juice of half a lemon.

* 10 ice cubes.

* heat sugar and water till dissolved and leave to simmer for 3 minutes then cool and add ice cubes,

* process pineapples,coconuts together then add syrup.

* pour all in a metal pan and in the freezer.

* start scrapping the mixture after one hour then every once in a while till all is slushy.

 

Very easy,healthy and delicious.

Pineapple Cake (كيكه الاناناس).

Hello everybody.

It’s Thursday already? don’t you agree this week ended quickly?  even all days  I guess!

Anyway I did this cake for the hunting trip tonight,old fashioned pineapple cake, I remember maybe in the 80’s when people started doing this cake it was a must in every occasion or gathering, I always love to make it, burned sugar is so yummy right?

Ingredients and method:

* 4 eggs.

* 1 1/2 cups sugar plus extra one for caramelizing the bottom.

* 1 cup vegetable oil.

* 1/2 cup pineapple juice.

* 2 big spoons yogurt.

* 2 cups flour.

* 1 tsp vanilla and 2 baking powder.

* 5-6 slices canned or fresh pineapples.

* in a metal cake pan burn one cup sugar till it’s golden and caramelized.

* add pineapple slices in a line.

* mix all other ingredients to form a smooth cake batter.

+ pour over pineapples then bake in a medium heated oven for 40-50 minutes.

* when cooled turn it upside down,you can add some pineapple juice over it if you like.

Beautiful Birthday Cake and Fitness Bars.

Hello everybody.

Too many occasions and birthdays  today,though nobody celebrating lives here but I did this beautiful cake anyway, lucky day for Jona my housemaid cause it happens to be her birthday also and she celebrated with her friends and ate the cake,well most important is that someone became happy eating it nevertheless.Happy Birthday Aya,AJ,Salma and happy anniversary to my beloved sis Reema, love you all.

Cake mix is the same as the Cherry Cake I did before but baked in a big rectangular pan to a thin sheet cake,then I added strawberry jam,cream and chopped strawberries and rolled all together like a Swiss Roll, covered with cream,toasted coconuts and finally decorated with strawberries and pineapples.

This cake reminds me of cake patisserie shops long time ago when we were kids in Jabal Al- Hussein,we used to walk to this small shop called Milano just to buy it,yummy yummy.

I also made these Fitness Bars,found a bit old Fitness pack in my pantry this morning,after a quick search in many websites I invented this no ingredients recipe, just mixed Fitness flakes with some butter,peanut butter,toasted wheatgerm and oats,coconut,raisins,brown sugar then added honey till mix is sticky then baked it for 20 minutes,cut to bars when cooled ,great breakfast energy bar,tasted exactly like the ones you buy from stores !

Oh lunch was sweet and sour from yesterday and I made some green fava beans in olive oil (فول بالزيت)

Beef Sweet and Sour.

Hello everybody.

Typical lazy Friday,started by waking up really late for a change, usual coffee at Rula’s noon time then asking what to eat for lunch, decided to make this dish cause It’s been long time since we ate it plus me and my friends went out to dinner the other night at Ren Chai and ordered the same dish but It wasn’t that good or I didn’t enjoy it well !

Searched for an easy recipe to do,found this at Allrecipes.com,great web by the way!

Ingredients and method:

* meat balls (sauteed ahead till golden)

* sweet peppers chopped to large pieces.

* 1 onion chopped to large pieces also.

* 3-4 pieces pineapples.

* 1 tablespoon brown sugar.

*1 tablespoon starch.

* 2 big spoons ketchup.

* 2 big spoons soy sauce.

* 1 tablespoon vinegar.

* 1 small cup water.

 

* saute peppers and onions in a bit of vegetable oil till tender.

* add the meat balls .

* mix ketchup,soy sauce,sugar,starch,vinegar and water well together.

* add mixture to pan and stir,then add pineapples.

* simmer for 15-20 minutes.

* serve with boiled rice.

 

Really tasty and well flavored I even didn’t add salt or pepper !
