Noodles Soup and Pastries.

Hello everybody.

Another big gathering at Mom’s today, she made mixed salad with oranges, grape leaves,oregano ,cheese and meat pastries plus karaway again and finally we opened the baby’s cake.

Back home with some kishek and oregano pies cause I had no time to cook and did some noodle’s soup cause it seems we’re catching a flu so better start precautions.

Edited Cardamom Cookies.

Hello everybody.
My mother in-law’s lovely old friends were gathered today upstairs,such a lively group of ladies chatting and laughing at old stories and memories.

We ordered some pastries, made spinach tabouleh and got out some Rock Cookies from the freezer,my sister in law made chocolate cake.
Remember the cardamom cookies in made long time ago?  Well did some today but added 1/2 tsp baking powder this time and it did make a difference, I’ll write down the recipe again better.

 

Ingredients and method:
*2 cups flour.
* 4 teaspoons cardamom powder.
* 1/4 tsp salt

*1/2 tsp baking powder.
* 1/2 cup grounded almonds.
* 1/2 cup sugar.
* 3/4 cup melted butter.
For the coating:
* 1 cup confectionary sugar (سكر ناعم ).
* 2 teaspoons powdered cardamom.
* almonds.

* mix flour, cardamom powder, sugar, grounded almonds and salt together. * add butter and mix with your hands till you have a frim dough. You can add a bit of cold water for easy handing.
* form dough into small balls.
* coat with powdered sugar-cardamom mixture. * press balls with a small cup to flatten a bit.
* decorate with almonds.
* bake in a medium heated oven for 10-13 minutes. Till bottom slightly golden then toast surface for 5 minutes.
* store in a well closed jar.

Perfect with black coffee, please try them, they’re really good ♡♥.

Thyme Tomatoes and Green Onions Pastries.

Hello everybody.

Mom and my lovely niece visited me this morning, great timing cause I was about to begin making some pastries so a helping hand was a blessing.

I made three kinds of fillings, cheese,green fresh thyme with onions,tomatoes,sun dried tomatoes and olive oil plus some stripped green onions that I always make like swirls . really yummy and great with labaneh dip .

While we were working my niece made a small strawberry cake and decorated it, it came out a beautiful all over pinkish lively cake,her favorite color of course.

 

Well, hope all is ready for the snow coming tomorrow,I went grocery shopping today and people were crazy buying piles of stuff, hope we won’t be stuck for a long time like last year, fingers crossed !!!!!

Spinach Pastries.

Hello everybody.

Cold and rainy this morning and expected to continue till tomorrow, a warm comfort meal is in demand !

I cooked spinach with minced meat and rice on the side,kids love this dish though my husband hate it,so I made this new way of spinach pastries which are usually done as a big loaf ,very thin and full of olive oil, but made them as small squares and not soaked in oil a lot.

You make a simple no yeast dough,flour,salt and water only. leave to rest then form it into small balls, roll each one into a thin layer then add spinach mixed with cooked onions,salt,pepper,chili and lemon juice to make 2 layers of spinach and three of the dough then fold it as square and pat them as thin as you can.

Bake in a greased pan in a well heated oven till golden, really good with some fresh yogurt from Irbid.

Salami Cheese Pie.

Hello everybody.

Still have leftovers from yesterday,no intention to cook at all, but upon my youngest son request,whom I’m actually pampering these days cause he’s in his senior year and needs snacks while studying, I made this kind of a pie or pastry.

I made a simple 10 minutes dough (pizza dough) split it in half ,spread one in a big pan then added all kinds of cheese I have, topped them with salami and oregano then topped them with the other half. Sprinkled sesame seeds and made small holes with the scissors and bake then slice them to triangles.

He actually ate them for lunch with a simple lettuce vinaigrette salad,will be a perfect snack for the next few days,if they lasted that long !!

Trip Goodies!

Hello everybody.
Long day full of events, I just finished my errands and work, niw enjoying a cup of coffee outside, beautiful night ♡
One of the things I did today was cheese, za’tar and hotdog pastries for our trip to Taba tomorrow. We’re leaving early morning so they’ll be perfect for breakfast in the bus.

Nothing beats best friends gathering ♡

Hello everybody.
Sorry for the delay but I had my best friends coming over for a Ramadan evening.
As I entitled the post, nothing beats my best friends gathering, so many beautiful memories gathered throughout the years,though missing our 7’th cheerful Rawan this year, next Summer hopefully♡
I made some cheese pastries, rocca strawberry salad, a new chocolate dessert made of cream and Flakes and upon request 3eish al saraya, promise I’ll post these two recipes after Ramadan for sure.

Aqaba Trip Goodies :)

Hello everybody

My son and his friends are going to Aqaba tomorrow morning, thought i’ll make them some goodies to eat during their stay cause they’re staying in an apartment not a hotel.

Best thing to do for easy handling is some some hot dogs,cheese and za’tar pastries,perfect for breakfast or snacks. i also made some cinnamon rolls,a new recipe I got from www.foodlve.com.

 *Pastries

ingredients and method:

* 4 cups flour.

* 1/2 cup vegetable oil.

* 1 cup warm milk.

* 1 tsp salt.

* 1 big spoon instant yeast.

* 1 tablespoon sugar.

* some water if needed for kneading.

 

* Mix all dry ingredients then add milk and oil,knead well for 5 minutes then leave to rest and rise in a warm place.

* prepare stuffing: hot dogs with ketchup and mustard,cheese,and za’tar with oil.

* I made hot dogs like rolls,cheese as balls and za’tar as parcels,of course you can chose any shape you like.

* bake in a well heated oven till golden.

Hope they’ll like them,look and taste are perfect.

Appetizers:Russian Salad,Broccoli Soup and Spinach Pastries.

Hello eveybody.
Today I only made a salad and soup cause I still have some leftovers from yesterday. I also made some spinach pastries. Tomorrow i’ll make a new dish Inshallah.
* Russian Salad:
This salad is very easy but a bit fatty cause It has lots of mayonnaise. But  I always use light one hoping to decrease the damage :).
You simply boil some beans, carrots, sweet corn and potatoes in water till tender then add salt, pepper, bit of vinegar and a good amount of mayonnaise to cover them. Mix gently.
Note: boiled eggs are usually used in this salad also in it or as garnish but I don’t actually use it..it’s fine without it as well.

*Broccoli Soup:
Love this delicious healthy soup.
   Used to make it with fresh cream but one day I ate it at my sweet aunt Nabiha, it was very light but creamy as well. Trick is using one big potato with it so that when mixed together with the broccoli it gives a creamy rich texture.
Ingredients and method:
* 1 big potato peeled and cubed.
* 5-6 broccoli florets.
* 2 green onions.
* 1 cube maggi.
* 2-3 big spoons oatmeal.
* 1/2 cup milk.

* heat a bit of butter, stir chopped onions, potatoes and half of the broccoli.
* add the oatmeal, maggi, salt and pepper. Mix all together.
* add 4 cups water and the milk.
* simmer till vegetables are done.
* mix with hand mixer or in blender.
* add rest of broccoli florets. Leave to simmer for 15-20 minutes.

* Spinach Pastries.
I was looking in my freezer and fridge wandering what else to do, found some puff pastry left from last time’s  chicken pie  and some spinach so thought to do these pastries . Hoped they’ll taste as good as they look.
I simply added black pepper, a piece of white cheese and a small piece of cream cheese, then closed the pastry as a parcel and baked them.

Greek Semolina Cake (هريسه يونانيه )

Hello everybody.

I usually like to have something sweet on the kitchen table to serve with coffee or tea in case any sudden visitors came by, which is frequent..not that I mind, all family and friends know that they’re welcome anytime, coffee and sweets always available (  حمدلله).
As expected brownies were gone in no time.so today it’s my husband’s turn for his favorite dessert Harisseh or as some people call it Basbousa. I do have some excellent quality semolina (.سميد ). Must thank my hubby’s  best friend Basil for that for he’s always a generous provider of excellent flour and semolina .

This recipe is a bit diffrent than normally done Harisseh. I have it in my Greek cook book (a must have cause all its recepies are great).
Ingredients:
*4 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup coconut (optional).
* 1/2 yoghurt.
* 3/4 cup butter.
* 2 1/2 cups coarse or fine semolina.
* 2 tsp baking powder.
* 1/4 tsp sodium bicarbonate.
For the sugar syrup :
* 3 cups sugar.
* 1 1/2 cups water.
* 1 small spoon lemon juice.

*Mix all ingredients alternatively. Grease a
medium size pan with butter or tahini (طحينه ).add the batter
*Sprinkle with almonds then bake in a medium heated oven till golden.
* As for the syrup mix sugar and water, heat till it boils, add lemon juice and leave to simmer till it thickens .approximately 20-30 min.leave to cool.
* Add cold syrup on cake when still hot so as to be absorbed well.

Well lunch today is light, still have some noodles from yesterday so i made some spinach pastries..these will do I guess.:)

The dough is the same as pizza I made last week, but I added some sesame seeds and black seeds (قزحه ) , I also used 4 cups whole wheat flour with 2 cups plain white flour.
* Filling was spinach rubbed in salt, finely chopped onion, summaq ( سماق ) ،lemon juice,olive oil,some pomegranate molasses ( دبس رمان )، salt, pepper, paprika and chilli powder as desired.
*  Devide dough to small balls, spread, fill with spinach then close as triangles.
  I even had some extra dough today, filled it with cheese and fresh thyme leaves from the garden.:)
*Bake in a well heated oven till bottoms are brown then drizzle tops with olive oil and roast.
