Fresh Pesto with Shrimps.

Hello everybody.

Found an amazingly fresh bunch of basil at grocery store today, couldn’t resist taking most of it and instantly made pesto and cooked in it. So aromatic and nutty, I even added some walnuts with the pine nuts, delicious 😋

After cleaning and arranging my fridge, found an eggplant and a bunch of radishes that must be cooked or eaten before they’re ruined, so eggplant turned to dip and radish a salad with lemon juice and parsley.

Pesto was quickly done with shrimps garlic and pasta with Parmesan cheese on top.

Parmesan Crusted Chicken Breasts.

Hello everybody.

Friday lunch is always a last minute decision, I still have some potato pie from yesterday so needed something to go with it.

Finally after negotiations with the boys I took out some chicken breasts and added a crust on each one then sautéed in a bit of olive oil.

Crust was a mix of garlic, pesto, oregano, salt and pepper spread all over then topped with parmesan cheese and breadcrumbs.

That’s it, quick and easy.

Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

Fried Courgette Flowers.

Hello everybody.

Lunch today was mloukhieh from yesterday, fresh from the farm and so yummy with garlic and lemons.

Alongside with it I made these cute fresh courgette flowers that u couldn’t resist not bring cause they were so intact, a waste to throw them away.

Stuffed with cheddar and Parmesan cheese, garlic and oregano then dipped in an egg,milk, flour batter with a pinch of salt and baking powder.

So crunchy and tasty, I even took some for the guy working at grocery store cause he can’t believe or imagine that these can be cooked.

طريقه وردات الكوسا:

تحشى الوردات بمزيج من الاجبان الصفراء مع ثوم واعشاب.

يحمى زيت القلي جيدا ثم تغمس كل قطعه بمزيج متجانس عباره عن كوب طحين, 2 بيض, , نصف ملعقه ملح ونصف باكينغ باودر ويضاف حليب بالتدريج حتى يصبح القوام سلس .

ثقلى بالزيت الغزير لمده 5 دقائق.

Artichoke Cherry Tomato Chicken.

Hello everybody.

Another new chicken recipe today since I have lots of cherry tomatoes so this one is the choice.

Chicken breasts seasoned with salt, pepper, herbs then sautéed in some olive oil.When almost done add the tomatoes and artichokes.

Leave all to simmer for 20 minutes then sprinkle with parmesan cheese and roast a bit in the oven.

Healthy light and easy.

Spinach Gnocchi.

Hello everybody.

Warm sunny day,I just love these days, though chilli at night but at least you can enjoy a beautiful day.
Lunch was Italian style except the rice which was the Iranian recipe, it’s becoming our kind of rice these days.

Did meatballs the way my cousin Rita always do them, with parmesan,breadcrumbs, eggs,nutmeg, salt and pepper then after cooling them in the fridge they’re dipped directly in boiling tomato sauce, really yummy.

Another new side dish was Spinach Gnocchi, and tasty different kind of appetizer. To tell you the truth is did once maybe a couple of years ago but it was a failure then, today I did it with patience and it turned out just perfect.

Ingredients and method :
* 4 cups of spinach, cut washed and squeezed till all excess water is out.
* 1 1/2 cups ricotta or white cheese.
* 1/2 cup parmesan cheese.
* 1 egg.
* 1/2 tsp nutmeg.
* 1 tsp salt and pepper.
* 2 big tablespoons flour.
* some butter and one clove garlic.

* squeeze spinach very well then add all ingredients except butter.
* roll mixture into egg shape.
* roll gnocchi in flour and leave in fridge for a while.
* cook gnocchi in boiling water uncovered till they float on top.
* remove slowly then arrange in an ovenproof pan with butter and garlic then sprinkle with parmesan and mazorella cheese, cook for few minutes till cheese melts.
Buon Apatito as they say in Italian.

Veal Escalope and Potatoe Skins.

Hello everybody.
Though I still have some cauliflower from yesterday but nobody accepted the idea to eat from it again,so rather than making something small with it I decided to keep it in the freezer and make something new.

After searching in  my Beef cookbook for something different to do I made this recipe, though I have previous failures in cooking veal this way but I liked this one and result was great, veal was tender inside and crispy from outside.

On the other hand I baked potatoes instead of making fries so as to try to minimize the damage, when done I sliced them lengthwise, removed pulp and mixed it with cream cheese, cheddar cheese, herbs and chili powder, filled potato skin again and roasted them.

Ingredients and method of veal:
* lean pieces of veal.
* one small grated onion, salt, pepper, mixed herbs and paprika.

Egg batter:

* 1/2 cup flour.
* 3 eggs.
* 2 tablespoons milk.

* Coating:

* 2 cups breadcrumbs.
* 2 tablespoons Parmesan cheese.
* some herbs and paprika if you like.

* rub spices, onion and herbs all over veal.
* mix flour, milk and eggs very well.
* coat veal with egg batter.
* coat with breadcrumbs Parmesan mixture.
* refrigerate for 1-2 hours then deep fry in very hot oil till golden.

Serve with potatoes and salad, made Ceazar today.

Stuffed Mushrooms.

Hello everybody.

Weekend is here again,final exams next week and then done with school,next year will be last one for my youngest,can’t believe how kids grow so fast 🙂

Today’s lunch is beans with garlic and tomatoes in olive oil (لوبيا بالزيت), similar to the string beans I did once ( فاصوليا بالزيت),but this kind of beans is thinner and has different taste. you simply saute crushed garlic then add cut cleaned beans then chopped tomatoes,season with salt and pepper then leave to simmer for 30-40 minutes or till done.

I also made my friend Rula’s recipe of stuffed mushrooms,wanted to make my cousin Sa’ed’s ones but those needed spinach and bigger mushrooms than the ones I have,next time maybe.

Ingredients and method;

* fresh white mushrooms.

*butter.

*bread crumbs.

* cheddar and Parmesan cheese.

* parsley.

* remove mushroom stems, chop them then add cheeses,crumbs,parsley and a bit of butter and mix all very well.

* grease oven pan with butter,line mushrooms in it then stuff them.

* cover with foil then  bake for 20-30 minutes.
