Hello everybody.

I now strongly believe that some recipes do actually call me to try them, I know this might be weird but true cause I look through many many recipes on daily basis but not all interest me to try them.

Well couple of days ago I saw this light healthy recipe in an account I follow on  named Bandora (means tomatoes) , vegan type of kibbeh great for vegetarians or lint.

Fifty percent of ingredients is burgul, other half is sautéed onions and tomatoes, raw green onions, carrots,zucchini, coriander, parsely, mint, chili paste,salt, pepper,summaq and olive oil. All together in the food processor.

A dish worth trying for sure.

Old New Lunch!

Hello everybody.
Well lunch today was two opposite dishes, first very old and traditional the other kind of new and modern. Had to do this to please everyone and hopefully to have enough leftovers for tomorrow.

Okra with olive oil, a simple dish with few ingredients, you simply fry okra with some olive oil till crispy, add chopped garlic and tomatoes. Add salt, pepper and chili and leave on very low heat till all done.

Other dish was chicken cubes cooked till done with some chopped onion and garlic, then I added fresh mushrooms, broccoli and fresh cream and cooked till cream is thick and veggies tender,all served on a bed of fresh yummy pasta from Maysas.Pasta.

Delicious Spring Dairies .

Hello everybody.

Nice quick trip up North to Irbid, beautiful green hills and scenery.

As always we stopped by dairy products store on our way back, a speciality of the city,Irbid is known of its best yogurt ever specially these days.

Lunch was what we got, fresh ewe yogurt, labaneh and hot bread. Personally I consider this the best meal ever.

Lovely Friday Morning.

Morning everybody.

Lovely day though a bit cold and cloudy but this didn’t stop us from having a nice cozy breakfast outdoors.

No hunting today due to weather conditions so as a small lovely gesture since all are home we

had a traditional Friday morning meal, boiled eggs with salt,pepper and delicious Italian extra virgin olive oil from Centro store,cheese, labaneh,cream and strawberry, new makdous and olives.

Of course tea with mint is a must, enjoy your weekend lovely people.

Pickled Stuffed Peppers.

Hello everybody.

Though I felt like I’m an old lady doing these cause they’re related to my late grandmas in some kind of way, these pickles were a must in every household long time ago, done usually this time of year when tomatoes and peppers are abundant to be preserved for winter time.

It’s a very easy procedure specially if you’re not making massive amounts like old times, I clearly remember large glass preserving pots all set up to be kept inside cupboards along with makdous and olives.

You simply cut pepper stems and remove seeds as much as you can then stuff them with hard chopped tomatoes, minced garlic and dry mint. Close and arrange in a pot then add brine which is a big tablespoon of salt to each cup of water. Then add one tablespoon of vinegar and one chili pepper if you like.

I added some olive oil on top to prevent fermentation .

Close and leave for 3-4  weeks till it’s done,you can serve it with labaneh or cheese as you wish.

Okra in Olive Oil.

Hello everybody.
Quickest solution for lunch since I didn’t intend to cook anyway was freshly picked okra fried then sautéed with garlic, onions and chopped tomatoes then seasoned with salt, pepper and paprika.

I also made a dish of white cheese and watermelons and a small one of labaneh with black olives, all yummy and cool.

Fava Beans and Eggplant Fatteh.

Hello everybody.

No meat or chicken today, dinner was green fava beans in olive oil with garlic and coriander and eggplant fatteh without the meat on top.

 

Soup was Carrot and salad was Ceazer.

Eggplant Fatteh ( فته مقدوس)

3-4 cubed fried eggplants.

* finely chopped onion.

* roasted or fried squared pitta bread.

* tahini sauce ( tahini,lemon,salt,yoghurt,garlic)

* tomato paste.

* chopped parsley.

* cooked spiced minced meat.

* toasted almonds and pine nuts.

* salt,pepper,all spice and cinnamon for seasoning.

 

* saute onions till tender then add fried eggplants.

* add all seasoning,tomato paste and enough water to cover all then leave to simmer till sauce is thick and eggplants tender.

* layer pitta bread in Pyrex or serving dish,add eggplant with sauce on top.

* add tahini sauce then garnish with parsley,meat and nuts.

Note: this dish must be assembled right before you serve so as pittas stay crisp otherwise they’ll be so soggy.

 

As for the soup…you’ll need one small onion.4-5 carrots. 1 cube chicken stock.butter. one big spoon oatmeal.cream or milk and 4 cups water.
Sautee the onions and carrots till tender.add the chicken stock cube.oatmeal  and water.salt.pepper and a bit of cinnamon.

Let it simmer for 45 minutes on low heat till carrots are soft.
Mix all with a mixer or blender..add the cream..then let it boil for another 10-15 minutes…..and serve hot with toasted croutons if you like

Stuffed Mushroom and Courgette Flowers.

Hello everybody.

Too hot to cook today and nobody gave me any answers about what they want so I did what I found.

End result was some okra in olive oil with garlic, onions and tomato and no meat, vegetarian style. Then I decided to do some stuffed mushrooms with garlic, coriander, cheese, breadcrumbs salt pepper and chili, and since I have some courgette flowers that I intended to fry I stuffed them same as mushrooms and all together in the oven.

Result was super, all gone in minutes

Date Rolls.

Hello everybody.

It’s been such a long time since I did these, maybe in Eid Al-Adha meaning seven months now.

  Date Rolls are such a favorable kind of cookies, they have a nice aroma, taste and texture that everyone love, made a small batch for my dear sis to take with her back home next week and hopefully I’ll have time to make her some rock cookies also.

Roasted Lemony Chicken and Potatoes.

Hello everybody.

As I mentioned yesterday we had a dinner gathering and I made a chicken and potato dish, which was incredibly juicy and well flavored cause of the awesome marinade I used.

 

Ingredients and method ( for 8  small pieces of chicken)

* zest and juice of one lemon and one orange.

* 1 tablespoon fresh or dry rosemary.

* 1 tablespoon oregano.

* 1 leaf fresh or dry sage (ميرميه)

* salt,pepper and olive oil.

*Marinate chicken in all these for a whole night or 3-4 hours minimum.

* in a deep oven pan,add some onion slices,bay leaves,cinnamon stick and few cardamons then add chicken with marinade close tightly with foil and leave in a medium heated oven for 1 1/2 -2 hours.

* when done roast chicken till golden then remove each piece to a deep serving dish.

* sieve remaining juices to get a clear fluid then add 1 tablespoon flour or starch diluted in cold water.

* leave to simmer till it thickens.

* You can bake some veggies or only potato cubes in another pan alongside also seasoned with rosemary,oregano,salt,pepper and a drizzle of olive oil.

* arrange potatoes around chicken pieces and drizzle sauce all over them before serving.

 

Really easy tasty dish,went well with the eggplant maqloubeh last night.
