Chicken Ceazar Salad.

Hello again.

A quick satisfying lunch in a busy day Chicken Ceazar salad, fresh and healthy cause of the little amount of mayonnaise cause I use thick yogurt with it.

For the dressing :
A juice of half a lemon.
1 small teaspoon mustard.
2 big spoons mayonnaise. 2 big spoons yoghurt ( a trick so as not to use too much mayonnaise).
Salt.pepper.dried oregano…and a small cup olive oil.
A useful way to get a thick creamy dressing is to put all ingredients in a tightly closed jar and shake it very well….very easy.

French Pizza.

Hello everybody.

Lunch today was steak with mushroom sauce and mashed potatoes, though potatoes weren’t successful cause I cut them to cubes then boiled them till done ( I usually keep it as is)  so mash was runny  didn’t like it at all, never again.Thank God steaks were excellent.

On the side I made my famous French Pizza, always a favorite side dish at any meal or occasion,very simple and easy.
Chopped peppers, mushroom, olives with some cheese, mayonnaise, salt and pepper mixed then topped over sliced French baguettes.

New Style Tuna Sandwiches.

Hello everybody.

Every time I decide to stay home and relax in end up working too much or doing multiple things at the same time.

First thing when I entered the kitchen this morning I realized I have one very ripe avocado and one lonely eggplant so made a dip (mashed with some lemon juice,tahini,yogurt and salt)   and baba ghanouj ( chopped grilled eggplants with diced tomatoes,peppers and some mints then topped with pomegranate sauce)

Then the daily question of what to cook started nagging in my mind, then decided to do a new sandwich style my cousin posted last night with shredded chicken but I made it with tuna, turned out really good, kids loved it.

Secret ingredient is the crunchy sandwich bread or crust done by cutting edges of toast  then soaking each couple together in whisked eggs then coating all with breadcrumbs.  I let them cool in the fridge so as to hold better then deep fried till crunchy, when cooled open and fill with any stuffing you like, today is added tuna with corn,capers, relish, mustard, mayonnaise and green onions,served with fries and big mixed salad.

Another task for today was making fresh pesto before basil turns black and a fresh fruit cocktail from new honey from Ghor, oranges, pineapple and bananas, really refreshing after all this.

Freezing Vegetables.

Hello everybody.
No cooking today, each one has plans either for lunch or dinner so no cooking is necessary, did a bowl of Russian Salad it will do just fine in guess.

Spent this morning cleaning and preparing some fresh peas and fava beans for freezing, my husband bought some from side road sellers on his way back from Irbid yesterday, very fresh and green, I usually only cut wash and freeze directly.

Peas were really sweet and tender, boiled some and added them with carrots, corn and potatoes to the salad.

Another Irbid product is garden cress(  رشاد)  sent to me from my cousin, very tasty with labaneh and green olives or onions, all yummy.

Rosa Pasta Salad.

Hello everybody.

Definitely a hot Summer day,hot dishes or stews are a big no no,so I made this cold pasta salad that my dear cousin Rita posted in my group a while ago,but I used chicken instead of tuna and added few more ingredients. Really good,thank you dear 🙂

Ingredients and method:

* cooked shredded chicken or tuna.

* cooked pasta (any shape you like).

* fresh or dried basil.

* pitted black olives.

* some chopped pickles and capers ( optional)

* ketchup and mayonnaise ( approximately 3 tablespoons of each).

* salt and pepper.

 

* Mix olives,pickles,capers and chicken ,season with salt and pepper.

* Add ketchup and mayonnaise and mix well.

* Before serving add the pasta and mix all together.

I also made a simple plain cake for my new orange cake plate I got as a gift from my dear aunt <3

French Pizza and Cole Slaw Salad.

Hello everybody.
Weekend at last!!!
We’re invited to a wedding tonight and boys going out with friends so a light lunch is enough.
I have fresh cabbage from Ghor, small enough to do a salad, and i made small pizzas on baguette bread, that’s why it’s called French Pizza.

Ingredients and method:
French Pizza:
* 2 baguettes .
* 1/2 cup chopped sweet peppers.
* 1 cup seeded black olives.
* 1 pack mushrooms, finely chopped.
* 1 1/2 cups grated mozzarella or kashkaval cheese or mix of both.
* 3 tablespoons mayonnaise.
* salt, pepper and paprika.
* mix all ingredients together and season.
* cut baguettes to 1 inch slices.
* scoop 1 spoonful of mixture over each bread slice.
* toast for 20-25 minutes till golden.
* serve hot.

*Cole Slaw Salad:
* shredded cabbage.
* grated carrots.
* mayonnaise.
*raisins.
* salt, sugar and white vinegar.
*mix all ingredients together .
* mayonnaise quantity must be enough to coat all ingredients.
* you can add thick yoghurt to lessen mayonnaise portion if you want it lighter.

Appetizers:Russian Salad,Broccoli Soup and Spinach Pastries.

Hello eveybody.
Today I only made a salad and soup cause I still have some leftovers from yesterday. I also made some spinach pastries. Tomorrow i’ll make a new dish Inshallah.
* Russian Salad:
This salad is very easy but a bit fatty cause It has lots of mayonnaise. But  I always use light one hoping to decrease the damage :).
You simply boil some beans, carrots, sweet corn and potatoes in water till tender then add salt, pepper, bit of vinegar and a good amount of mayonnaise to cover them. Mix gently.
Note: boiled eggs are usually used in this salad also in it or as garnish but I don’t actually use it..it’s fine without it as well.

*Broccoli Soup:
Love this delicious healthy soup.
   Used to make it with fresh cream but one day I ate it at my sweet aunt Nabiha, it was very light but creamy as well. Trick is using one big potato with it so that when mixed together with the broccoli it gives a creamy rich texture.
Ingredients and method:
* 1 big potato peeled and cubed.
* 5-6 broccoli florets.
* 2 green onions.
* 1 cube maggi.
* 2-3 big spoons oatmeal.
* 1/2 cup milk.

* heat a bit of butter, stir chopped onions, potatoes and half of the broccoli.
* add the oatmeal, maggi, salt and pepper. Mix all together.
* add 4 cups water and the milk.
* simmer till vegetables are done.
* mix with hand mixer or in blender.
* add rest of broccoli florets. Leave to simmer for 15-20 minutes.

* Spinach Pastries.
I was looking in my freezer and fridge wandering what else to do, found some puff pastry left from last time’s  chicken pie  and some spinach so thought to do these pastries . Hoped they’ll taste as good as they look.
I simply added black pepper, a piece of white cheese and a small piece of cream cheese, then closed the pastry as a parcel and baked them.

Onion Soup :)

Hello everybody.

When I asked the kids what do you want for lunch tomorrow?  They suggested onion soup.I usually make it in Ramadan, then forget about it rest of the year.so onion soup it is.I’ll make a pasta salad on the side with a bit of beans from yesterday. .that’ll be a nice lunch.
For the soup you need:

*4 large onions.
*1/2 cup vegetable oil or butter.but oil is much lighter.
*4 big tablespoons flour.
*4 cups water.
*1 cube chicken stock or you can use homemade chicken stock if you have instead of water.
*One small spoon :salt.pepper. cinnamon.all spice.
*Pinch of nutmeg powder.
*Any kind of cheese.
Cut onions to small pieces, I used to cut it to thin slices but small ones are easier when you eat.heat the oil then add onions till very tender on low heat.add all spices.salt.chicken cube and flour..mix well,then add water, leave to boil then turn down the heat, leave to simmer .you may need to add more water if soup is too thick.
Serve the soup with croutons topped with mozzarella, cheddar, kashkaval cheese or any kind you prefer.or you can roast buns in the oven, remove the pulp and pour soup in it.

As for the salad you need:
*Mixed colored sweet peppers sliced.
*Fresh mushrooms slices.
*One cup sweet corn.
*1 big spoon lemon juice.
*2 big spoons mayonnaise.
* 1 small spoon balsamic vinegar.
*1 small spoon of salt and oregano.
*Half a cup olive oil.
*2 cups boiled shaped small sized pasta.

Mix lemon juice, mayonnaise, vinegar, salt, organo together. Add all peppers, mushroom, corn and mix with sauce.
Add pasta and toss it well before serving.
I’m positive kids will love it…plus it’s a way to let them eat some veggies.
