Recipe is the same old I usually do but with a twist this time, added some strong coffee to half of the mixture and made two layers of the mousse with cream on top as well.

Busy Friday.

Hello everybody.

Such a busy day,usually Fridays are lazy and quiet but this one was the opposite.

Started with breakfast with my friend who came by to give a German lesson to my son,followed by coffee for sure.

Then preparing today’s last minute order, falafel rolls and great  depression vanilla cake with pineapples and roasted coconuts on top.

Directly after that I assembled a strawberry pavlova as dessert after lunch which was a big tasty mansaf.

Apple Pie.

Hello everybody
We’re Mansaf-ing today on the honor of the bride and groom to be next week Insh’Allah.

Mansaf is not my specialty, my mother in-law’s kind of cooking, I did the dessert traditional apple pie.

Ingredients and method of apple pie:

*Crust:

* 1 egg.

* 1 tsp vanilla or lemon zest.

* 1/2 cup sugar.

* 3/4 cup butter.

* 1 3/4 cups flour ( you may need 1/4 more to make a firm dough)

* pinch of salt.

* 2 tablespoons cold water.

Filling:

* 5-6 large apples peeled and cut to slices.

* 1/2 cup walnuts (optional).

* 1/4 cup raisins (optional).

* 1/4 cup brown sugar.

* 1 tsp lemon juice .

* 1 tablespoon cinnamon ( sorry forgot to add it in the photo)

* beat the egg.vanilla,sugar and butter till creamy.
* add flour and salt and knead well till you have a firm round dough ( add more flour if it’s sticky and you can’t handle it)
* leave to cool in the fridge for 30 minutes.
* spread 3/4 dough in pie pan evenly in bottom and sides.
* pinch it with a fork so as it won’t form a bubble.
* mix filling ingredients well and pour them into the pie pan.
* make shapes to decorate top of pie from remaining dough ,sprinkle surface with flour or use plastic bag for easier handling.
* bake in a medium heated oven for 30-40 minutes or till sides and bottom are golden then toast the surface.

Anise Bars.

Hello everybody.

Though we’re Mansaf-ing today but it’s not me cooking so I baked these bars this morning,good choice with coffee as a quick breakfast for my son before leaving to college everyday.

Recipe is very easy almost a simple cake but you bake it in a big wide pan then slice it when done and ready bake or toast bars till crunchy.

Really yummy.

Ingredients:

* 4 eggs.
* 1 cup sugar.
* 1/2 cup olive oil.
* 1/2 cup vegetable oil.
* 2 big spoons anise powder.
* 2 big spoons anise seeds.
* sesame seeds
* 2 tsp baking powder.
* 1 tsp vanilla.
* 2 cups flour.

Method:
* mix eggs, vanilla, sugar with electric mixer till fluffy. Add rest of ingredients.
* sprinkle bottom of pan with sesame seeds, add the cake mixture and bake in medium oven for 30 minutes or dry in center.
* when cooled cut to slices and roast again till golden from both sides.( مثل شكل القرشله)
* leave to cool completely then keep in well closed jar or tin.

Self-Saucing Chocolate Pudding.

Hello everybody.

As you may also noticed we’re Mansaf-ing today,and farewell treat to dear Haidar before heading back to Subway and frozen meals.As usual it was superb and we’ll done,my mother in-law’s specialty hope God give her good health and energy to keep on doing it :mrgreen:.
My part was the dessert, I arranged a small tray of sweets including fresh cream, honey, molasses and homemade halaweh with toasted bread sticks and made this new dish that was posted in my page from yummy yummy website which is self-saucing chocolate pudding.

Very easy to make plus it saves you time and effort to make a sauce or ganache for the cake .

Ingredients and method :
* 3 eggs .
* 1/2 cup butter .
* 1/4 cup coccoa .
* 3/4 cup sugar .
* 3/4 cup warm milk .
* 1 tablespoon Nescafe .
* 1 tsp baking powder .
*1 tsp vanilla.
* 1 cup chocolate chips or any kind of milk chocolate .
* 2 cups flour .

For the syrup :
* 2 1/2 boiling water .
* 1/2 cup sugar .
* 2 big spoonful of coccoa .

* whisk eggs,vanilla ,sugar,butter with milk and nescafe till frothy .
* add dry ingredients ( flour,coccoa and baking powder )
* fold in chocolate chips .

* mix syrup ingredients well.
* pour chocolate batter into a greased deep pan.
* pour hot syrup on top .
* bake in a medium heated oven for 40 minutes .
* you’ll have two separated layers of cake and pudding or thick syrup under it.
* serve alone or with vanilla ice cream .

How to Pickle Olives (كبيس الزيتون)

Hello everybody.

Headed North to hometown Irbid yesterday for two reasons, buying olives ,since it’s the season to pickle them,from the same guy we buy each year on the road before reaching Jerash and then to go visit my lovely cousin and have lunch with our dear family members.

To tell you the truth I’ve been making olives only recently , used to be my mother in-law’s annual ritual specialty but since two years ago  ,as she says, retired from the mission so I’ve been doing it her way and send her share.

Pickling olives is a very easy process but needs a day work and messes your kitchen a bit specially if you’re making large amounts. First you must pick the kind of olives you like,some people prefer big ones some son’t,I usually buy local kind (نبالي بلدي),then you must press it either manually or in a special machine usually found at the shop or seller.

You can find many ways and methods to pickle olives in books or by experience or in factories, personally I found this method the easiest and always works with me.

Wash olives well,try to remove leaves and stems as much as you can, then soak them in water overnight or two , the next day wash again then mix them with a good amount of sliced lemons,hot peppers and lemon juice. Make the pickling brine which is exactly one big spoon of coarse local salt to each cup of water ( each liter of water needs 4 big spoons of salt), put olives in big glass or plastic jars then fill with salted water to the rim,close tightly and leave till done.

*Note: olives might take a longer period of time to be ready this way (a month maybe) if you want to be ready earlier you must soak it in water and replace it each day for a week then pickle it.

*Note: a tip to make sure your brine is perfect,place a raw egg in it,if it floats to the top then it’s good if it sinks then you need to add more salt.

* Note: usually I remove some of the olives when done, make a new salt solution and add new lemon and peppers, that way it’ll always be fresh and green.

 

Well now back to yesterday’s lunch, it was AMAZING ,elegant table,delicious food,various dishes and most important of all good loving caring company, I’m so lucky to have such kind generous loving cousins in my family.

Dishes were: Mansaf,lasagna,rolled steaks,sauteed veggies,chicken pie and a salad, dessert was chocolate cake,yummy coconut balls (took the recipe and will make it soon) and I made my Almond Orange cake, even coffee and tea tasted great believe me.

Happy Birthday Hamoudeh ♡

Hello everybody.

Mansaf again today at my mom’s followed by knafeh for sure, crazy mansaf week,bye bye diet I guess.

Yesterday I baked a three layered vanilla cake and filled it with crushed Oreo cream then decorated it this morning with Galaxy Flutes,Ministrels and Ms&ms upon special request from my beloved son of my friend Hamoudeh for his birthday, it really looked beautiful and I just got A thank you message from him saying taste was great also.

Love you Hamoudeh &abibi,many happy returns,wish you all the happiness in the world <3

Aish EL-Saraya ( عيش السرايا).

Hello everybody.

We’re Mansaf-ing today for dinner as well,second time this week 🙂 ,but this time at my mother in -law’s house and ( don’t be shocked) we’re mansaf-ing again tomorrow at my mom’s, 3 Mansafs in one week is a big crime I suppose, bye bye diet !!!! why is it whenever you decide to start a diet you either have guests or receive lots of invitations? all include food of course,anyway I’m trying to at least minimize my portions 🙂

I made this Arabic dessert for tonight,remember I did it once in Ramadan but didn’t post the recipe then.

 

Ingredients and method:

* 1 loaf white toast.roasted till dry and golden.

* 4 cups sugar.

* 2 1/2 cups water.

* some rose water.

* few lemon drops.

* 2 cups fresh cream and 2 packs ready cream (قشطه بلديه وعلب)

* some crushed pistachios.

 

* Remove hard toast sides and process the insides to fine crumbles.

* heat 1 cup of the sugar till it’s caramelized and brown.

* add the water and rest of sugar and stir till all melts,add the lemon drops and simmer till solutions is syrupy (20-30 minutes),add rose water.

* pour syrup while hot over bread crumbs and mix well till it’s all absorbed.

* spread in a wide serving dish.

* mix creams well then spread over bread.

* leave to cool in the fridge.

* decorate with finely crushed pistachios.

 

Really easy delicious dish , I personally love it <3
